1/2 cup crunchy-style peanut butter
3/4 cup vegetable shortening
1/2 cup firmly packed brown sugar
1/2 cup granulated sugar
1 egg
1 teaspoon vanilla
1 1/4 cups all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1 package (6 ounces) chocolate morsels

Steps:

  • Preheat oven to 375°F. Measure peanut butter, shortening and brown sugar into Classic Batter Bowl using Measure-All® Cup. Add granulated sugar, egg and vanilla; beat until thoroughly combined. In Small Batter Bowl, stir together flour, baking soda and salt. Add to peanut butter mixture; mix well. Stir in chocolate morsels. Using Medium Scoop, drop batter 2 inches apart onto Rectangle Stone. Bake 10-15 minutes. Let stand 2 minutes; remove cookies to Stackable Cooling Rack to cool.

6 tablespoons brown sugar
6 tablespoons white sugar
1 egg
1 teaspoon vanilla extract
1 cup natural peanut butter
½ teaspoon baking soda
½ teaspoon kosher salt
¾ cup all-purpose flour
¾ cup mini semi-sweet chocolate chips

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Cream butter or margarine with brown sugar and white sugar. Add egg and vanilla. Mix well. Stir in peanut butter, baking soda, and salt. Make sure it is well blended. Add flour and chocolate chips.
  • Drop teaspoons of cookie dough then flatten with fork slightly on greased cookie sheet. Bake for 5-6 minutes or until just showing a hint of brown on edges. Don't overcook. Let cool on cookie sheet for 5 -10 minutes. Then transfer to cooling rack.

¾ cup peanut butter
½ cup packed light brown sugar
½ cup white sugar
2 eggs
3 tablespoons orange juice
1 teaspoon vanilla extract
1 ½ cups all-purpose flour
1 teaspoon baking soda
½ teaspoon baking powder
¼ teaspoon salt
1 ¼ cups semisweet chocolate chips

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
  • In a large bowl, cream together the butter, peanut butter, brown sugar and white sugar. Beat in the eggs one at a time, then stir in the orange juice and vanilla. Combine the flour, baking soda, baking powder and salt; stir into the peanut butter mixture. Finally, mix in the chocolate chips. Drop dough by rounded teaspoonfuls onto the prepared cookie sheet. Cookies should be 2 inches apart.
  • Bake for about 14 minutes in the preheated oven, until the edges are slightly golden and the center is firm. Remove from baking sheets to cool on wire racks.

I love these rich, very sweet, addictive cookies. I adapted this recipe from one I found and loved on allrecipes.com. I have altered it somewhat to suit my tastes and my preferred baking techniques but this is based on the recipe known there as Aunt Cora's World's Best Cookies. Cook time is per batch, cooking one sheet at a time.

1 cup sweet unsalted butter, at room temperature
1 cup sweet creamy peanut butter (do not use reduced fat versions - I use Jiff or Peter Pan brands)
1 cup granulated sugar
1 cup brown sugar or 1 cup light muscovado sugar, packed
2 large eggs
2 cups all-purpose flour
1 teaspoon baking soda
2 cups semi-sweet chocolate chips

Steps:

  • Preheat oven to 325 degrees F.
  • Have ready at least 2 baking sheets lined with parchment paper.
  • Cream butter until smooth.
  • Add peanut butter and both sugars and beat until combined well.
  • Add egg and beat well.
  • Stir in flour and baking soda gradually until well combined.
  • Stir in chocolate chips by hand.
  • Using a meatball scooper or a spoon, scoop out small portions of dough and drop onto parchment lined cookie sheets, leaving 2" gap between each cookie.
  • Bake for about 15 minutes or until cookies are just firm around the edges- don't overbake- if you wait until they are brown on top, they will be too hard.
  • Slide parchment sheet, cookies and all, carefully off pan and onto your counter, set a new piece of parchment paper onto your baking sheet and repeat until all dough is baked.
  • Meanwhile, as the next batch bakes, remove baked cookies from the parchment and let cool completely on wire racks.
  • Wipe off the crumbs from the old sheet of parchment and you can reuse it for your next batch.
  • These will keep about 3 days stored in a cookie tin (for crisp cookies) or an airtight plastic container (for softer cookies).

Steps:

  • Preheat oven to 375 degrees.
  • Beat peanut butter, shortening, sugars, egg and vanilla until creamy.
  • In another bowl, stir together flour, baking soda and salt.
  • Add dry mixture to the creamed mixture; blend well.
  • Fold in chocolate morsels.
  • Using medium scoop, crop dough 2 inces apart onto flat baking stone.

1 1/2 cups all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup butter or 1/2 cup margarine, softened
3/4 cup packed brown sugar
1 large egg
1 teaspoon vanilla
1 cup coarsely chopped pecans, divided
1 cup semi-sweet semisweet chocolate chunk, divided
3 -4 ounces favorite chocolate candy bars (Snickers is my favorite! See Note)

Steps:

  • Preheat oven to 350°F.
  • Combine flour, baking soda and salt and set aside.
  • In a large mixing bowl, beat butter and brown sugar until creamy.
  • Add egg and vanilla to creamed mixture; beat well.
  • Gradually add flour mixture to creamed mixture.
  • Stir in 2/3 cup pecans and 2/3 cup chocolate chucks into cookie dough.
  • Cut candy bars int small pieces and set aside.
  • Using a large scoop, drop dough onto stone or cookie sheet, about 3-inches apart.
  • (Cookies will spread when baking.) Flatten scoops slightly with palm of hand.
  • Lightly press a few pecan pieces, a few chocolate chucks and a few candy pieces into each cookie.
  • Bake for 14-16 minutes or until cookies are almost set.
  • (Centers will be soft, do not over bake.) Cook for 5 minutes on stone or cookies sheet.
  • Remove cookies to wire rack to cool completely.
  • ~NOTE~Chocolate candy bars with nougat and nuts are favorite choices for this cookie.
  • Also delicious are chocolate covered peppermint patties, chocolate covered caramels and chocolate peanut butter cups.

Steps:

  • Preheat oven to 350 degrees F (180 degrees C).
  • Cream together butter and brown sugar. Beat in eggs, peanut butter and vanilla.
  • Add flour, cornstarch, salt, baking soda and baking powder. Stir in chocolate chips.
  • Roll into balls about 1 1/2 teaspoonfuls (or use cookie scoop) and place onto ungreased cookie sheets about 2 inches apart. Flatten slightly because they do not flatten much while cooking.
  • Bake for 10 minutes.

42 hershey's milk chocolate kisses, unwrapped

Steps:

  • Preheat oven to 350°F.
  • Break apart cookie dough into pieces and place in a medium sized mixing bowl.
  • Stir in peanut butter until completely blended. (You can use an electric mixer if you prefer).
  • Fill cookie press with dough and choose a flower shapped disk.
