Paneer: Homemade Indian Cheese image

Number Of Ingredients 3

Cheesecloth
8 cups whole milk
1/4 cup freshly squeezed lemon juice, plus more as needed, see Cook's Note*

Steps:

  • Line a large colander with a large double layer of cheesecloth, and set it in your sink.
  • In a large wide pot, bring the milk to a gentle boil over medium heat, stirring frequently to avoid burning the bottom (a nonstick pot works really well for this purpose). This will take a little while so be patient!
  • Add the lemon juice and turn the heat down to low. Stirring gently, you should almost immediately see the curds (white milk solids) and whey (the greenish liquid) separate. Don't fret, this is perfect!
  • Remove the pot from the heat and carefully pour the contents into the cheesecloth-lined colander. Gently rinse with cool water to get rid of the lemon flavor. At this point, you could squeeze out some of the liquid, and serve with some honey and some nuts, almost like a fresh ricotta!
  • Grab the ends of the cheesecloth and twist the ball of cheese to squeeze out the excess whey. Tie the cheesecloth to your kitchen faucet and allow the cheese to drain for about 5 minutes.
  • Twisting the ball to compact the cheese into a block, place it on a plate with the twisted part of the cheesecloth on the side (this will ensure your block of cheese is nice and smooth!) and set another plate on top. Weigh the second plate down with cans of beans or a heavy pot. Move to the refrigerator and let it sit about 20 minutes.
  • Unwrap your beautiful disc of homemade cheese! You did it! You can now use this in any number of traditional Indian dishes, like saag paneer.

4 quarts whole milk
½ teaspoon sea salt
½ cup lemon juice

Steps:

  • Line a colander with a damp piece of muslin or cheesecloth and set in the sink or over a bowl.
  • Pour milk into a large saucepan. Heat over medium-low heat to 200 degrees F (93 degrees C). Stir well and add salt. Pour in lemon juice gradually, 1 tablespoon at a time. Stir until curds separate.
  • Ladle curds into the muslin-lined colander. Fold muslin over curds and place a weight on top (such as a bowl filled with water). Press lightly and let drain for 2 to 3 hours.

1 cup cottage cheese, cut into thick cubes (paneer)
1 large onion, peeled,washed and finely chopped
2 cloves garlic, peeled,washed and finely chopped
1/4 inch fresh ginger, peeled,washed and grated
1 teaspoon coriander seed, coarsely ground
1 teaspoon cumin seed, coarsely ground
1 teaspoon whole red chile, coarsely ground
1 pinch turmeric powder
3/4 teaspoon red chili powder
1/2 teaspoon garam masala powder
1 1/2 teaspoons dried fenugreek leaves, crumbled between your palms (kasoori methi)
4 tablespoons fresh tomato puree
1/2 cup sliced fresh green bell pepper (capsicum)
2 tablespoons fresh cream (You may use low-fat plain yogurt as a substitute if your watching your calorie intake)
1 pinch sugar
2 tablespoons oil
salt
2 tablespoons fresh coriander leaves, washed and finely chopped (to garnish)

Steps:

  • Take a microwaveable glass bowl and toss in the onion, ginger and garlic in it.
  • Microwave it on HIGH power level for 2 minutes.
  • Add the coarsely ground cumin, whole red chilli, corriander seeds, turmeric powder, red chilli powder, garam masala powder and kasoori methi.
  • Microwave it on HIGH power level for 1 minute.
  • Stir in the tomato puree, capsicum and 1/4 cup of water.
  • Microwave on HIGH power level for 2 minutes.
  • Add the cottage cheese cubes, cream, sugar, salt and 1/4 cup of water.
  • Mix it very gently so as to not let the cottage cheese cubes break.
  • Microwave on HIGH power level for 1 minute.
  • Garnish with corriander leaves.
  • Serve hot with rotis (chappatis) or naan or white Basmati rice.
  • Enjoy!

  • Rinse a large heavy-bottomed pot with water. With some water coated on the bottom of the pan pour half a gallon of whole milk in it and bring it to a gentle boil, stirring frequently. Keeping some water in the pot helps the milk from sticking to the bottom of the pot.
  • Once the milk comes to a gentle boil, add lemon juice 1 tablespoon at a time and stir the milk until the milk begins to curdle. I usually use 3 tablespoons of lemon juice before the milk fully curdles and clear greenish whey starts to separate. Turn the heat off immediately.
  • Line a bowl with a double-layered cheesecloth that is long enough to be bundled up and hung later. Pour the curdled milk on the cheesecloth. Run cold water over it for few minutes to remove the lemon taste. Squeeze out the water from the muslin cloth bundle and hang it up for 30 mins so all the water can drain out. Place the cheesecloth between 2 cutting boards and put a heavy pot or book on top of it for an hour. Make sure you do not put too much weight as it will dry out the paneer making it very crumbly. If you do not have time to wait for the water to drain out, you can continue to gently squeeze out all the water and then knead and shape it while still in muslin cloth.
  • Gently remove the Paneer from the cheesecloth. Cut into smaller cubes if using in a curry. Paneer can be refrigerated for up to a week or can be stored in the freezer for longer periods.
