4 cups mixed greens
1 to mato (sliced)
1 fuji apple (diced)
1/2 red onion (sliced)
1/4 cup sunflower seeds (shelled)
1/3 cup crumbled goat or feta cheese
1-2 cooked (sliced chicken breasts)
2 ounces white balsamic vinegar
2 ounces olive oil
1 teaspoon salt
1/2 teaspoon pepper
1 tablespoon honey
1/2 teaspoon garlic powder

Steps:

Toss all ingredients in a large salad bowl.
The amount of chicken you use depends on how many you're feeding. As a main dish, this salad feeds 2 and 8 ounces of chicken breast is plenty.

Ingredients

1 teaspoon soybean oil
1 teaspoon olive oil
1 ounce unsweetened apple juice
1 tablespoon white balsamic vinegar
1 tablespoons cider vinegar
1/4 teaspoon salt
2 teaspoons sugar
1/2 teaspoon lemon juice
1 clove garlic

Steps:

Place 1 teaspoon soybean oil, 1 teaspoon olive oil and 1 ounce unsweetened apple juice in a blender. Blend ingredients by pulsing the blender several times. Add 1 tablespoon balsamic vinegar, 1 tablespoon cider vinegar, 1/4 teaspoon salt, and 2 teaspoons of sugar to the blender. Pulse 3 to 4 times to incorporate ingredients. Grate garlic until fine. Add grated garlic to the blender along with 1/2 teaspoon lemon juice. Process all ingredients until a smooth vinaigrette is created. This process takes about 1 minute on medium-high. Use white balsamic Fuji apple vinaigrette immediately for best results. Leftovers can be refrigerated for several days.
