4 (5-ounce) center-cut salmon fillets (about 1-inch-thick), skin on or off
2 tablespoons olive oil
Kosher salt and freshly ground black pepper

Steps:

  • Bring the salmon to room temperature 10 minutes before cooking.
  • Warm a large nonstick skillet with oil over medium-low heat. Season the fish with salt and pepper. Raise the heat to medium-high. Place the salmon, skin-side up in the pan. Cook until golden brown on 1 side, about 4 minutes. Turn the fish over with a spatula, and cook until it feels firm to the touch and the skin is crisp if desired, about 3 minutes more.
  • The skin can be served or removed easily with a knife or spoon.
  • Transfer to a plate and serve as desired.

4 6-ounce salmon filets, with skin
Kosher salt
3 tbsp olive oil
1 tsp minced garlic
2 tbsp diced shallot
1 large leek, white part only, washed well and diced
1-1/2 cups shelled fresh cannellini beans, cooked
2 cups white wine
1 tsp unsalted butter

Steps:

  • 1. Season the fish on both sides with salt and pepper. Heat 3 tablespoons of the olive oil in a saute pan. Place the salmon, skin-side down, in the pan and cook (without moving the fish) until the skin is crispy, about 4 to 5 minutes. Reduce the heat, turn the salmon, and continue to cook for another 3 to 4 minutes.
  • 2. Meanwhile, heat the remaining tablespoon oil in another saute pan over medium heat. Add the garlic, shallots, and leek; saute for 3 to 5 minutes until the leak begins to soften.
  • 3. Add the cannellini beans and the wine; bring to a gentle simmer. Add the butter. Season to taste with salt and pepper.

Steps:

  • Preheat a large heavy skillet over medium heat for 3 minutes.
  • Coat salmon with olive oil. Place in skillet, and increase heat to high. Cook for 3 minutes. Sprinkle with capers, and salt and pepper. Turn salmon over, and cook for 5 minutes, or until browned. Salmon is done when it flakes easily with a fork.

6 garlic cloves
2 scallions, green parts only
1/2 cup Italian parsley, fresh, leaves only
1 tablespoon rosemary, fresh (or 1 tsp. dried)
1 teaspoon dried basil
2 tablespoons Dijon mustard
2 tablespoons olive oil
1/2 teaspoon salt
2 salmon steaks
1/2 cup white wine, the good stuff

Steps:

  • Preheat the oven to 350.
  • Place the garlic, scallions, parsley and rosemary together on a cutting board and chop them up finely.
  • Transfer to a medium bowl.
  • Add the basil, mustard and olive oil- stir to combine.
  • Spread the mixture in a thin layer over both sides of the salmon.
  • Heat a large cast iron skillet over high heat and get it VERY hot.
  • Place the salmon into the skillet and cook for about 2 minutes- or until they are lightly browned.
  • Flip the salmon to the other side and cook for 2 more minutes.
  • Pour the wine into the pan- but not directly over the salmon (watch out for hot steam!).
  • Place the pan on the center rack of the oven and bake, uncovered for 8-10 minutes, or until the fish is just cooked through.

2 lb small red potato, or yellow, quartered
4 tablespoons olive oil
salt, to taste
pepper, to taste
4 cloves garlic, minced
4 tablespoons lemon juice
2 tablespoons fresh thyme
2 teaspoons ginger
2 salmon fillets
1 bunch asparagus, roughly 1 pound (455g)

Steps:

  • Preheat the oven to 400˚F (200˚C).
  • Cover a sheet pan with foil or parchment paper. Spread out potatoes on the pan and drizzle with olive oil. Season with salt, pepper, 2 cloves of garlic, and 1 tablespoon lemon juice.
  • Bake for 30 minutes.
  • Make salmon glaze. Combine salt, pepper, 1 tablespoon thyme, 2 garlic cloves, ginger, 2 tablespoons of olive oil, and 2 tablespoons of lemon juice. Mix well.
  • Remove potatoes from the oven and push them to the top or side of your pan. Place your salmon fillets on the pan. Brush both sides of the salmon with the glaze.
  • Place asparagus on the pan and top with 1 tablespoon olive oil, 1 tablespoon lemon juice, salt, and pepper. Sprinkle 1 tablespoon of thyme on the asparagus and potatoes.
  • Bake for 10-12 minutes. (The salmon should flake easily with a fork when it's ready.)

1 lb small new potatoes, quartered

1 bag (12 oz) fresh broccoli florets (about 5 cups)
4 salmon fillets, skin on (4 oz each)
Chopped fresh Italian (flat-leaf) parsley leaves, if desired
Lemon wedges, if desired

Steps:

  • Heat oven to 400°F. Line 18x13-inch rimmed sheet pan with cooking parchment paper. In large bowl, mix 1 tablespoon of the oil and the salt. Add potatoes; toss to coat, and place skin-sides down in single layer in pan. Set bowl aside. Roast about 20 minutes or until just tender when pierced with knife. Remove from oven; stir.
  • Meanwhile, combine remaining 3 tablespoons oil and seasoning mix (from box) in same bowl; reserve 2 tablespoons of the mixture. Add broccoli; toss to coat. Place broccoli in pan with potatoes.
  • Add salmon and reserved oil mixture to same bowl; turn to coat. Place in pan with vegetables. Roast 10 to 14 minutes longer or until salmon is cooked through and flakes easily with fork, and potatoes are fork-tender.

  • Preheat oven to 350. Heat a medium ovenproof nonstick skillet over medium-high heat. Add olive oil. Pat salmon dry with paper towels. Season the flesh-side of the salmon with salt. When the oil is hot, add salmon skin-side down. Sear until the skin is golden brown and crispy, about 5 minutes. Turn and transfer to oven and cook until a cake tester or tip of a paring knife is just warm to the touch when inserted into the middle of the salmon; about 5 minutes for medium-rare and 9 minutes for fully cooked through.
