SPOOKY WITCHES' FINGERS



Spooky Witches' Fingers image

This is a traditional Christmas cookie recipe that we have had in our family for years. All I did was change the shape to make them look like fingers for our annual Halloween party. The cookies make a great conversation piece. My guests loved them!

1 cup butter, softened
1 cup confectioners' sugar
1 egg
1 teaspoon almond extract
1 teaspoon vanilla extract
2 ⅔ cups all-purpose flour
1 teaspoon baking powder
1 teaspoon salt
¾ cup whole almonds
1 (.75 ounce) tube red decorating gel

Steps:

  • Combine the butter, sugar, egg, almond extract, and vanilla extract in a mixing bowl. Beat together with an electric mixer; gradually add the flour, baking powder, and salt, continually beating; refrigerate 20 to 30 minutes.
  • Preheat oven to 325 degrees F (165 degrees C). Lightly grease baking sheets.
  • Remove dough from refrigerator in small amounts. Scoop 1 heaping teaspoon at a time onto a piece of waxed paper. Use the waxed paper to roll the dough into a thin finger-shaped cookie. Press one almond into one end of each cookie to give the appearance of a long fingernail. Squeeze cookie near the tip and again near the center of each to give the impression of knuckles. You can also cut into the dough with a sharp knife at the same points to help give a more finger-like appearance. Arrange the shaped cookies on the baking sheets.
  • Bake in the preheated oven until the cookies are slightly golden in color, 20 to 25 minutes.
  • Remove the almond from the end of each cookie; squeeze a small amount of red decorating gel into the cavity; replace the almond to cause the gel to ooze out around the tip of the cookie.

12 ounces cream cheese, softened
1/2 cup finely chopped almonds, toasted
1/4 cup chopped green onions
2 tablespoons minced fresh parsley
1 teaspoon lemon juice
Dash salt and pepper
12 thin slices white sandwich bread, crusts removed
9 medium carrots, peeled
Additional cream cheese
36 almond slices

Steps:

  • In a small bowl, beat the cream cheese, chopped almonds, onions, parsley, lemon juice, salt and pepper until blended. Spread over bread slices. Cut each into three 1-in.-wide strips., Cut carrots in half widthwise, then cut in half lengthwise. Using a vegetable peeler, shape carrot pieces into fingers. Using a small amount of additional cream cheese, attach an almond slice to the tip of each finger for finger nail. Place a finger on top of each sandwich.

Steps:

  • While the tortes are chilling, get started on the sandwiches.
  • Assemble each sandwich and cut off the crusts.
  • Lay out on a plate and leave to chill in the fridge.
  • Enjoy!

1 cup water
6 tablespoons unsalted butter
1 teaspoon sugar
1/4 teaspoon fine salt
1 cup all-purpose flour
4 large eggs
Pinch cayenne
1 tablespoon Dijon mustard
1 cup grated Cheddar, (about 4 ounces)
1 large egg yolk
Whole unblanched almonds
Kosher salt

Steps:

  • Position a rack in the middle of the oven and preheat to 400 degrees F. Line a baking sheet with parchment paper.
  • Put the water, butter, sugar, and salt in a medium saucepan. Bring to a boil over medium heat, whisking until the butter and sugar melts. Remove pan from the heat and sift the flour into the pan. Stir the dough together with a wooden spoon. Return to the heat and stir constantly until pulls away from the sides of the pan and is slightly shiny, about 3 minutes.
  • Transfer the dough to a medium bowl, and beat until cooled, about 2 minutes. Add the cayenne, and whole eggs, 1 at a time, incorporating each 1 thoroughly before adding the next. Mix in the mustard and cheese.
  • Put 1/4-inch plain tip in a pastry bag, and spoon the dough into the bag. Pipe 3 1/2-inch long thin finger-like shapes onto prepared pans. Beat the egg yolk with a tablespoon of water and dab or brush the tops of each witches' finger with it. Lay an almond on the end of each witches finger so that it looks like a nail, sprinkle fingers with kosher salt.
  • Bake for 15 minutes, then reduce the temperature to 350 degrees F. Continue baking until the fingers are golden brown and slightly crisp, about 5 minutes more. Cool on a rack.

6 pepperoni (sliced small)
2/3 ounce cheese (American pasteurized process)
3/4 cup lettuce, finely shredded

Steps:

  • Heat oven to 375°F Separate dough into 12 strips. Place flat on ungreased cookie sheet; do not twist. With sharp knife or kitchen scissors, cut 2 small triangles from one end of each dough strip to form a point that resembles a fingertip.* Lightly score breadsticks in center to resemble knuckles.
  • Cut each pepperoni slice into 2 pointed ovals to resemble 2 fingernails. Place 1 pepperoni piece on each breadstick.
  • Bake at 375°F for 13 to 15 minutes or until golden brown. If necessary, reapply "fingernails" with small dot of ketchup.
  • Split each breadstick. Cut each cheese slice into strips and place in breadstick, overlapping strips. Top each with lettuce. If desired, serve with mustard, mayonnaise or ketchup. Serve warm or cold.
