Steps:
- In a large bowl combine tomatoes, onions, bell peppers and salt. Let stand overnight.
- Drain the tomato/pepper mixture and add the hot chile peppers, vinegar, sugar, and horseradish. Wrap the cinnamon, allspice, and cloves in cheesecloth or a porous bag, and add to tomato/pepper mixture.
- Boil for 15 minutes, or until tender.
- Pack tightly in sterilized jars and seal.

Steps:
- Stir together the flour, pepper, ground cumin seed, and salt in a large bowl or in the food processor; mix thoroughly until the spices are evenly distributed.
- Add the garlic and mix well.
- Add enough of the water to form a dough that will hold together in a cohesive ball; if necessary, add up to 1 additional tablespoon water.
- The dough should be fairly stiff and dry; if it is too wet, it will not roll well.
- Knead the dough for about 5 minutes by hand or pulse for about 15 seconds in the food processor; the dough should be smooth.
- With your hands, shape the dough into a cylinder or log about 2 inches thick and 6 inches long.
- With a sharp knife, cut the cylinder into 1/2-inch thick slices.
- The next step uses oil, so do not use your pastry cloth and rolling pin sleeve.
- Place each slice on a lightly oiled surface.
- Lightly oil the top of the slice and then roll out into a very thin circle about 6 or 7 inches in diameter.
- Papadams must be rolled extremely thin, maximum 1/16 inch.
- If the dough sticks to your rolling pin, gently pull it off.
- Dust the tops of each papadam with cayenne pepper.
- Using a metal spatula to loosen the edges of the papadams from the rolling surface, carefully place them on large baking sheets.
- The traditional method for preparing and frying papadams is described below; you can also bake them in a 300F oven for about 15 to 25 minutes, or until crisp and dry.
- The cooking time may vary beyond this range depending upon the thickness and moisture in the rolled dough.
- Cool them on a rack.
- To prepare the papadams in an authentic manner, don't bake them; first allow them to dry by leaving them in the sun for a few hours or by placing them in a very low oven (less than 200F) for 1 to 2 hours, turning occasionally.
- Dry the papadams until they are just slightly flexible and show no moisture; they should not brown or bake, however.
- At this point, the papadams may be stacked flat and stored in an airtight container until needed; they will keep for months if stored properly.
- When ready to serve, heat about 1/8 inch of oil in a large skillet; the oil should be hot, but not smoking; a drop of water flicked into the skillet should sizzle immediately.
- One at a time, drop the papadams into the hot oil.
- Turn the papadam when it begins to curl at the edges; it will quickly fry and become crisp.
- Remove it before it turns brown.
- Cool and drain the papadams on paper towels and eat them immediately.
PAGACH QUICK AND EASY
My son loves Pagach, so I whipped up this recipe for dinner last night. You can use whatever kind of cheese you like. I use the store bought premade mashed potatoes you find in the meat section of most supermarkets, so easy, so delish!!! Also, my husband suggested topping it with some crispy fried bacon!!!!

- Preheat oven to 400.
- Fry onions in butter until soft.
- Spread a thin layer of soft butter on pizza crust or drizzle with a little olive oil. (this is optional).
- Place the 8 slices of Cooper cheese on the pizza crust.
- Heat mashed potatoes and add the fried onions, 1 cup of the shredded sharp cheese, the sour cream and salt and pepper to taste.
- Spread mashed potato mixture on top of pizza crust.
- Top with the rest of the cheese and sprinkle with paprika.
- Bake for approx 30 minutes or until cheese is melted and bubbly.
- Place under broiler to brown top.
PUPPY CHOW I

- Melt the peanut butter with the butter or margarine and the milk chocolate. Pour over the cereal and toss until well coated.
- Place the coated cereal in a large paper sack then add the confectioners' sugar, fold down the top of the bag and shake to coat.

Steps:
- Mix together the bell peppers, cabbage, onions, tomatoes, jalapeno and salt in a large bowl. Cover and refrigerate for 8 hours or overnight. Drain the liquid from the mixture.
- In a large pot over medium-high heat, toast the mustard seeds and celery seeds until they begin to pop, about 3 minutes. Add the sugar, vinegar and 1 cup water, and heat until the sugar is dissolved. Add the vegetable mixture and the crushed red pepper, mustard powder, turmeric, ginger and cinnamon, and bring to a boil. Reduce the heat and simmer, stirring occasionally, until thick, about 1 hour.
- Allow to cool. Serve over beans and cornbread or as a relish for pulled pork or hot dogs.
PEOPLE CHOW
Steps:
- Melt butter, peanut butter and chips together in saucepan over medium heat or melt in bowl in microwave. Pour chocolate mixture over cereal in a large bowl. Stir to coat. Put powdered sugar in brown grocery bag and pour cereal into bag and shake to coat. Cut open bag to lay flat and spread out coated cereal. Sprinkle with extra sugar if necessary.

PUPPY CHOW
This delightfully messy Midwestern treat is simple enough for kids to make: Just toss crispy cereal with melted peanut butter and chocolate, then dust with lots of confectioners' sugar. The recipe's origins are murky, but puppy chow, or muddy buddies, can probably be traced back to recipe pamphlets and community cookbooks from the 1960s. Unlike the version on the back of the Chex cereal box, this recipe calls for a whole box of cereal and for cooling the chocolate-coated cereal a bit, which encourages clusters to form and helps the sugar stick. The cooled cereal is then tossed with confectioners' sugar on a baking sheet for even coverage. There are many additions to consider: popcorn, chocolate chips, pretzels, nuts, mini marshmallows - the list goes on.

- Place the cereal in a large bowl. Melt the chocolate and peanut butter in the microwave or on the stovetop. Microwave in a bowl in 30-second intervals, stirring between each, until nearly completely melted, then stir to melt completely. On the stovetop, stir in a small saucepan over low heat. Off the heat, stir in the vanilla.
- Pour the chocolate-peanut butter mixture over the cereal and stir vigorously to coat. Refrigerate until the chocolate is cool, tacky and less shiny than melted chocolate, 10 to 15 minutes.
- Spread the cereal in an even layer on a sheet pan. With a spoon or fine-mesh sieve, sprinkle some of the powdered sugar evenly over the cereal, add a pinch of salt, then toss with a spoon or your hands, or both, until evenly coated. Repeat with the remaining powdered sugar (adding the sugar in batches ensures it doesn't all soak into the chocolate). Set aside to set, at least 5 minutes. Store in an airtight container at room temperature for 3 to 4 days, or in the fridge or freezer for months.
PAPA CHOW
The ultimate snacking treat. Colorful and great tasting! I had been at a retreat and they served this during a break. I went home and made up a batch and have been making it on a regular basis ever since. My husband is addicted.
