PAPRIKA CHICKEN WINGS
I love chicken wings because they are fast and easy to prepare and can make a delicious meal. I often create three different flavors of wings, arrange in a serving platter with kale or green leaf lettuce as a divider. Tuck your favorite dip in the middle and everyone thinks you ordered this from a deli! My husband and I often make about 12 wings with our favorite frozen pizza for TV night. NOTE; Please look for 'gourmet' paprika, I found a Spanish one that costs the same as the common brands yet tastes so much better.

Steps:
- Defrost chicken wings.
- Wipe dry with paper towels.
- Season both sides with garlic salt, peper, and paprika.
- Line toaster oven tray with foil.
- Cook each side for 15-18 minutes at 400 degrees.
- Serve with bottled Ranch or Blue Cheese dressing.

GRILLED PAPRIKA CHICKEN WINGS WITH CHIMICHURRI
Chimichurri is the perfect accompaniment to chicken wings marinated in fragrant paprika and lightly charred on the grill. Jalapeno adds smoky notes of heat to this celebrated Argentinian sauce typically made with parsley, garlic, oregano, vinegar and olive oil.

- Combine the chicken wings, 1/4 cup of the olive oil and paprika in a large bowl, sprinkle liberally with salt and pepper then toss until evenly combined. Refrigerate for at least 2 hours or up to overnight.
- Meanwhile, make the chimichurri: Combine the vinegar, garlic and a generous pinch of salt in a blender and blend on low until smooth. Add the parsley, cilantro, oregano, ice and jalapeno and blend on medium speed. With the blender running, slowly drizzle in the remaining 1/4 cup plus 2 tablespoons olive oil and puree until smooth, about 1 minute, stopping to scrape down the sides if necessary. Season the chimichurri with more salt and pepper and transfer to a serving bowl, cover with plastic and refrigerate until ready to serve.
- Preheat a grill to medium. Brush the grill grates with vegetable oil. Grill the chicken wings, turning every 6 minutes, until golden brown, lightly charred at the edges and cooked through, about 25 minutes.
- Transfer the wings to a serving platter and season with salt to taste. Drizzle with some chimichurri sauce and serve the remaining sauce on the side.

- Preheat oven to 375 degrees F (190 degrees C). Lightly grease a 9x13-inch baking dish.
- Place chicken breasts side by side in baking dish. Sprinkle to taste with ground black pepper, garlic powder, poultry seasoning, and paprika. Bake in the preheated oven for 40 to 50 minutes, until chicken is no longer pink inside and the juices run clear. Check often and add a little water if the chicken starts to stick to the dish.

ROASTED CHICKEN WINGS WITH SMOKED PAPRIKA MAYONNAISE
This recipe is from the July 1999 issue of Gourmet Magazine. These wings with a Spanish influence need to marinate for at least 8 hours. Gourmet suggests putting them in the refrigerator before you go to bed so they'll be ready for roasting the next day.

- Cut off wing tips, reserving for another use, and halve the wings at the joint.
- Put wings in a large sealable plastic bag.
- Finely shop the garlic and add to the bag with the red wine, water, 1 teaspoons paprika, vinegar, sugar and salt. Seal bag, pressing out excess air.
- Marinate wings in bag placed in a large bowl in the refrigerator, turning bag once, at least 8 hours and preferrably overnight.
- Preheat oven to 400°F.
- Arrange wings in a large shallow baking pan large enough to hold them in one layer. Pour marinade over them. Roast wings in the middle of the oven for 30 minutes. Turn wings over and continue to roast them until the marinade is reduced to a glaze and the wings are golden brown, about 25 to 30 minutes more.
- Make mayonnaise while wings are cooking:.
- In a bowl whisk togehther all mayonnaise ingredients.
- Serve wings with mayonnaise.

CHEF JOHN'S CHICKEN PAPRIKASH
After many, many requests, I'm excited to be sharing what is my second favorite Hungarian dish of all time. I really love making anything Hungarian, since the recipes tend to be simple and easy to make, as well as comforting and delicious, and the names are never not fun to say. Top with extra sour cream and freshly sliced chives on top.

- Season chicken generously on both sides with salt. Heat olive oil in a heavy, deep-sided pan (that comes with a lid) over high heat and brown the chicken well, skin-side down, about 5 minutes; flip and continue to sear until other side is browned, 3 to 4 minutes more. Turn off heat. Transfer the browned chicken to a plate and reserve until needed; spoon out excess chicken fat if desired.
- Add onions and a pinch of salt to the same pan and saute over medium until golden, about 5 minutes. Add garlic, tomato paste, and flour and cook, stirring, another 3 to 4 minutes to form a tomato roux. Stir in 1 teaspoon kosher salt, freshly ground black pepper, smoked paprika, and sweet paprika and cook for 1 minute. Add chicken broth and bring to a simmer over high heat.
- Reduce heat to medium-low and transfer chicken and accumulated juices back into the pan. Baste the tops with the sauce, cover the pan with the lid, and simmer, basting occasionally with the sauce, until the chicken is no longer pink in the centers and is fork-tender, 45 to 60 minutes. Remove the chicken and transfer to a plate.
- Skim some fat off the top of the sauce if desired. Whisk heavy cream and sour cream into the sauce and bring to a simmer, stirring occasionally. Transfer the chicken and any juices back into the sauce. Simmer, uncovered, basting often, until chicken is heated through and very tender, about 10 minutes. Taste and adjust seasoning if needed.

- 1. Preheat the oven to 500°F. Line a baking dish with foil. 2. Peel and mince or press the garlic; transfer to a medium bowl. 3 cloves garlic 3. Add lime juice, olive oil, paprika, salt, and pepper to the minced garlic and mix well. ½ lime 1 tbsp extra virgin olive oil 1 tsp paprika ½ tsp salt ½ tsp black pepper 4. Add the chicken drumsticks to the garlic-paprika mixture and toss until well coated. Place the drumsticks in the baking dish. 1 ¼ lb chicken drumsticks 5. Place the drumsticks in the oven and bake, flipping halfway through cooking time, until they are cooked through and browned, 20-25 minutes. 6. In a small bowl, prepare the dressing by whisking together lime juice, olive oil, Dijon, salt, and pepper. ½ lime 2 tbsp extra virgin olive oil ½ tsp Dijon mustard ¼ tsp salt ¼ tsp black pepper 7. Wash and dry the mixed greens. ½ (5 oz) pkg spring mix (mixed greens) 8. Wash and halve the tomatoes. ½ pint grape tomatoes 9. Halve and pit the avocado; scoop out the flesh and medium dice. 1 avocado 10. To serve, arrange the greens on plates, top with tomatoes and avocado, and drizzle with the dressing.
