PATE-A-CHOUX WAFFLES

Number Of Ingredients 8

1 stick (1/2 cup) butter
1/4 teaspoon kosher salt
1 cup all-purpose flour
3 to 4 extra-large eggs
1 pint cinnamon roll ice cream
1 1/2 cups dulce de leche
1 cup heavy cream, whipped
1 cup feuilletine flakes or crushed ice cream cones

Steps:

  • In a medium saucepan over medium-high heat, bring the butter, salt and 1 cup water to a boil. Reduce the heat to low. Add the flour to the saucepan and stir for about 1 minute. (The mixture will immediately form a sticky ball.)
  • Transfer the mixture to a stand mixer fitted with a paddle attachment. Mix on medium-low until there is no longer steam. Lower the mixer speed to low, and add the eggs one at a time; the dough will be done once it clings to the paddle in "spokes" as it spins in the bowl. Transfer to a pastry bag and snip the tip, about 1/2-inch.
  • Pre-heat a mini-waffle iron. Pipe the dough into each waffle cavity leaving about 1/2-inch empty around the edges. Cook to the waffle maker's specification or until the waffles are golden brown.
  • Top each waffle with a scoop of ice cream, followed by a spoonful of dulce de leche, followed by a spoonful of whipped cream. Sprinkle the tops with feuilletine and serve.

½ cup dry white beans
½ cup barley
2 large potatoes, peeled and cubed
1 large sweet potato, peeled and cubed
1 large onion, cut into chunks
2 cloves garlic, minced
⅔ cup ketchup
¼ cup barbeque sauce
¼ cup soy sauce
¼ cup brown sugar
2 teaspoons garlic powder
2 teaspoons onion powder
2 teaspoons paprika
2 teaspoons ground black pepper
1 tablespoon salt
4 cups water, or more as needed to cover

Steps:

  • Place kidney beans, white beans, barley, potatoes, sweet potato, onion, garlic, ketchup, barbeque sauce, soy sauce, brown sugar, garlic powder, onion powder, paprika, pepper, salt, and water in a slow cooker. Mix well. Cook on High for 3 hours, then reduce heat to Low and continue cooking overnight until the beans are tender.

I am so addicted to these waffles, I eat them every morning, and then crave them the rest of the day. I will make a batch, then freeze the leftovers. When I am ready to eat them, I just pop them into the toasted straight from the freezer. Just be sure that the first time you make them, not to make them overly brown. Serve with maple syrup, butter/margarine, whipped cream. Whatever you like. I usually just spread on a little bit of strawberry jam. My 2 year old, and 7 month old love them too!
