2 cups boiling water, divided
1 pkg. (4-serving size) JELL-O Cherry Flavor Gelatin
1 pkg. (4-serving size) JELL-O Lemon Flavor Gelatin
2 cups cold water, divided
2 cups thawed COOL WHIP Whipped Topping

Steps:

  • Stir 1 cup of the boiling water into each flavor gelatin in separate bowls at least 2 min. until completely dissolved. Stir 1 cup of the cold water into each bowl. Pour into separate 9-inch square pans.
  • Refrigerate 4 hours or until firm. Cut gelatin in each pan into 1/2-inch cubes.
  • Layer alternating gelatin flavors and whipped topping in 8 dessert glasses.

Jell-O parfaits with cool whip are an easy and refreshing dessert for any occasion and for kids of all ages. Use whatever flavor you like for this recipe.

2 cups cold water, divided
1 3-ounce package of Jell-O
1 8-ounce tub of Cool Whip

Steps:

  • Set aside 6 mini glass jars -- cleaned out baby food jars work great!
  • Boil 1 cup of the water.
  • In a medium, heat-proof bowl, pour in the boiling water. Add the package of Jell-O and whisk until completely dissolved.
  • Next, add the remaining cup of cold water and stir.
  • Pour some -- not all -- of the Jell-O mixture evenly among all 6 jars, filling the jar halfway, about 3 tbsp per jar.
  • Set the remaining Jell-O aside at room temperature and place the jars in the fridge to chill for at least 2 hours until just set.
  • When 2 hours is up, add nearly all of the Cool Whip to the Jell-O that wasn't chilled, leaving about 6 tbsp of Cool Whip aside for topping the jars.
  • Pour the Jell-O mousse into the jars on top of the set Jell-O, leaving just a bit of room on the top for the remaining whipped topping to be added later.
  • Place the jars back in the fridge and let set for at least 4 hours, up to overnight.
  • When ready to serve, add the remaining Cool Whip to the tops of the jars by dolloping on with a spoon or using a piping bag.
  • Garnish with fresh fruit if desired and serve.

Steps:

  • Bate bien con una batidora, el queso crema, el azúcar, la leche, la cáscara rallada y el jugo de limón en un tazón mediano. Añade y revuelve suavemente el COOL WHIP.
  • Reserva aproximadamente 3 cdas. de las migajas de galleta. Coloca 1 cda. de las migajas restantes en cada uno de 10 vasos para parfait; ponle encima 2 cdas. de la mezcla de queso crema. Cubre con capas de las fresas, las migajas restantes, la mezcla de queso crema restante y las moras.

Steps:

  • Precalienta el horno a 350°F. Bate el queso crema y la mantequilla con el azúcar granulada en un recipiente grande con un batidor eléctrico a velocidad media hasta que estén bien mezclados. Agrega uno por uno los huevos, batiendo bien la mezcla antes de añadir el siguiente. Agrega gradualmente la harina, batiendo a velocidad baja hasta mezclarla bien. Agrega el polvo seco de la gelatina y el polvo para hornear; mezcla todo bien. Incorpora los arándanos. Vierte la mezcla en un molde para hornear cuadrado de 9 pulgadas forrado con papel para hornear engrasado.
  • Hornea el pastel durante 1 hora o hasta que al insertar un palillo en el centro éste salga limpio y el pastel esté dorado. Déjalo enfriar 5 min. Dale la vuelta al pastel sobre una rejilla de metal; quítale el molde. Déjalo enfriar completamente.

The lemon gelatin might sound like nothing more than lemon-flavor Jell-O (and you can certainly use lemon Jell-O if you want to save a little money and a tiny bit of effort over juicing lemons or buying lemon juice), but in this case "authentic" is also "easy," and the real flavor of lemon is much nicer than the artificial flavor used in Jell-O and other brands.

3 3/4 cups cold water, divided
3 (1/4 ounce) envelopes unflavored gelatin
1 1/2 cups sugar, plus
3 tablespoons sugar, divided
1 1/2 cups fresh lemon juice (from about 9 lemons)
1 teaspoon grated lemon zest
yellow food coloring (optional)
3/4 cup heavy cream
1 sprig of fresh mint (to garnish) (optional)
lemon zest, curls (to garnish) (optional)
lemon slice (to garnish) (optional)

Steps:

  • Put 1/2 cup of the water in a small bowl, sprinkle the gelatin over it and stir. Let soften for 2 minutes. Meanwhile, in a medium saucepan combine the remaining 3 1/4 cups of water, 1 1/2 cups of the sugar, the lemon juice and the lemon zest and bring to a boil. Remove from heat and add the softened gelatin, stirring for 1 minute or more to dissolve all lumps. Stir in a few drops of food coloring, if desired.
  • Pour into a heat-safe medium-size bowl, let cool, cover with plastic wrap and refrigerate until firm (at least 6 hours).
  • Just before serving, whip the cream with the remaining 3 tablespoons of sugar, until it holds stiff peaks.
  • Fill goblets or sundae glasses halfway with gelatin, top with half of the whipped cream, then fill with more gelatin and top with remaining whipped cream. Garnish with mint sprigs, lemon zest curls or slices and serve.
