1/2 cup grated Parmesan
1/2 teaspoon garlic salt
1/2 teaspoon paprika
1/2 teaspoon freshly ground black pepper
1/2 teaspoon fine sea salt
1/4 teaspoon ground turmeric
1/2 cup popping corn
3 tablespoons unsalted butter, melted
1 tablespoon olive oil

Steps:

  • Combine the Parmesan, garlic salt, paprika, pepper, salt and turmeric in a small bowl. Combine the popping corn and melted butter in a large pot. Cover and cook over medium heat, shaking the pot with increasing frequency as the popping increases. Continue until the popping is reduced to a couple of seconds between pops, then remove from the heat and transfer the popcorn to a large brown bag. Drizzle the popcorn with the olive oil and sprinkle about 3 tablespoons of the seasoning into the bag. Shake up the popcorn. Sprinkle with additional seasoning to taste and serve warm.

1 teaspoon kosher salt
1 ½ tablespoons coconut oil
⅓ cup corn kernel
2 tablespoons olive oil

Steps:

  • In a small bowl, mix together the ranch dressing mix, paprika, garlic powder, onion powder, and salt. Set aside.
  • Melt the coconut oil in a large pot over medium heat. Add 3-4 popcorn kernels and cover with the lid. Once they pop, add the rest of the kernels and cover, shaking every 10 seconds, until they begin pop. Once the pops are more than 3 seconds apart, turn off the heat and let sit for 15 seconds to allow any final kernels to pop.
  • Uncover and drizzle the olive oil over the popcorn. Carefully toss to coat.
  • Sprinkle the cool ranch spice mixture over the popcorn and stir to coat evenly.
  • Transfer to a bowl and eat immediately, or spread in a single layer on a baking sheet and let cool completely before storing in a sealed container for up to 2 days.

  • Measure Parmesan, garlic salt, onion powder, dried parsley, salt, dried dill, and black pepper into a mini food processor (or blender). Pulse until all ingredients are ground into a fine powder. Set aside.
  • Cube butter and melt (either in a glass measuring cup in the microwave or in a small saucepan on the stove). Allow to sit for a few minutes.
  • To pop 6 cups of popcorn at a time in the microwave, pour 1/4 cup popcorn kernels in a clean paper sack (I use a 12 3/8 X 6 1/8 X 4" brown paper lunch bag). Fold over the top several times. Microwave on high until there is a 2-second pause between pops (all microwaves vary, but this will probably take around 2 minutes, give or take 30 seconds). Shake the bag so that any unpopped kernels roll to one corner. Tear a tiny hole in that corner and shake out kernels. Pour popped popcorn into a large bowl. Repeat entire process one more time for a total of 12 cups popcorn.
  • Use a spoon to skim the foam from the surface of the melted butter and discard. Slowly drizzle the clear, yellow, melted butter over the popcorn in the bowl, occasionally stirring with a large spoon to make sure that all of the popcorn is evenly coated. Stop pouring out the melted butter once you reach the milky solids in the bottom of the cup/pan (you may discard these or reserve for use in another recipe).
