This is a fresh pasta dish, best served immediately after cooking.

Number Of Ingredients 10

4 ounces dry fettuccine pasta
1 cup heavy whipping cream
2 tablespoons butter
1 ounce tomato sauce
½ teaspoon minced garlic
½ cup broccoli florets
¼ cup fresh sliced mushrooms
salt to taste
ground black pepper to taste
2 tablespoons grated Parmesan cheese

Steps:

  • Cook fettuccini in a large pot of boiling salted water until "almost" done. Drain, and return noodles to pot.
  • Stir cream, butter or margarine, tomato sauce, garlic, and broccoli into the noodles. Simmer until noodles are done. Stir in sliced mushrooms, and remove from heat. Sprinkle with Parmesan cheese, and season with salt and pepper to taste.

Spaghetti con I Ricci image

Number Of Ingredients 9

1/2 pound sea urchin roe, cut into pieces if large
3 medium tomatoes (1 pound), peeled, seeded, and cubed
1/2 teaspoon minced garlic
1/2 cup olive oil
Salt
Ground hot pepper
1 pound spaghetti
1 tablespoon chopped flat-leaf parsley
3 lemons, cut in half

Steps:

  • In a large serving bowl, mash together lightly half the roe, two of the tomatoes, and the minced garlic. Mix in 1/3 cup olive oil and salt and hot pepper to taste.
  • Cook the spaghetti in boiling salted water until al dente. Drain; toss quickly with the roe mixture. Drizzle with the remaining oil if the pasta seems dry. Top with the remaining roe and the remaining tomato. Sprinkle with the parsley and garnish with the lemon halves. Serve immediately.
