PASTA CROQUETTES
This is a recipe that is as close as I can get to a side dish that a local Columbus, Ohio restaurant serves and is their signature dish. It is called Pasta Salvi. It is to die for! Please note: I was a manager at Salvi's for several years. Missing ingredients include minced fresh parsley and garlic. The cream sauce is a classic bechamel sauce prepared with onion, cloves and nutmeg, with the onion and cloves discarded before adding to the pasta.

Steps:
- Cook noodles according to package directions. Drain well.
- Meanwhile, melt butter in medium sauce pan. Add green onions and saute until softened. Stir in flour, salt and white pepper and cook until bubbly. Stir in milk and cook stirring constantly, until thickened and bubbly.
- Stir in Parmesan cheese until melted, then stir a little of the mixture into the beaten egg. Add egg mixture back to pan annd bring just to the boiling point. Add sauce to drained noodles; mix thoroughly.
- Press mixture into a well-greased 9-inch square pan. Place a square of aluminumfoil over the top, pressing down on it to pack noodles. Chill until cold, several hours or overnight.
- Before serving, place flour egg-water mixture and Panko crumbs in separate shallow dishes. Heat oil to 375.
- Cut chilled noodle mixture into squares. Coat with flour, then with egg mixture, then with Panko crumbs, covering all sides thoroughly. Fry squares in hot oil, 1 or 2 at a time, until golden brown and heated through, 2-3 minutes. Drain on paper towels.
- Serve hot.
- Additional toppings can be used after cooked. Add a slice of provolone cheese to top immediately after it is cooked so it melts. Add bolognese sauce (with or without cheese). Or, just eat it plain; it awesome all on it's own!

CROQUETTE MOZZARELLA STICKS RECIPE BY TASTY

- Add the potatoes to a large pot with enough cold water to cover them. Bring to a boil over high heat and cook until tender when pierced with a fork, about 30 minutes.
- Drain the potatoes and transfer to a large bowl. Use a potato masher to mash the potatoes until there are no large chunks left.
- Add the garlic, parsley, Parmesan cheese, 1 beaten egg, salt, and pepper. Mix well.
- Take a spoonful of potatoes and form into a patty.
- Place a cheese stick in the middle and wrap the potato around the cheese until it is evenly covered.
- Arrange the formed croquettes on a parchment-lined baking sheet and freeze for 30 minutes.
- Place the flour, 3 remaining eggs, and bread crumbs in 3 separate shallow bowls. Dredge the croquettes in the flour, shaking off any excess; then dredge in the egg and the bread crumbs.
- Heat the oil in a large pot until it reaches 350°F (180°C). Fry the croquettes for 3 minutes, or until golden brown.
- Transfer the croquettes to a wire rack set over paper towels to drain the excess oil.
- Let cool for a few minutes as they will be HOT.
- Garnish with grated Parmesan cheese and parsley and serve with marinara sauce alongside.

POTATO CROQUETTES
Crunchy potato croquettes, a great way to use up leftover mashed potatoes, flatter any meal.

- In a large bowl, stir together mashed potatoes and parsley; season with salt and pepper. In a shallow bowl, place flour; season with salt and pepper. In another shallow bowl, whisk egg with 1 tablespoon water. In a third shallow bowl, place 1 1/2 cups breadcrumbs.
- Form potato mixture into 3/4-by-2-inch logs. Roll in flour, shaking off excess, dip in egg wash, then roll in breadcrumbs to coat. In a heavy medium saucepan, heat 1 1/2 inches vegetable oil over medium-high until hot. In batches, fry croquettes until golden brown on all sides, about 2 minutes per batch, turing as needed. Drain on paper towels.

- In a large bowl, combine mashed potatoes, eggs, parsley, cheese, salt and pepper, bacon bits and onion flakes. Form mixture into patties, and dredge patties in the bread crumbs.
- Pour oil 1/2 inch deep in a large, heavy skillet. Heat oil over medium-high heat. Fry patties, flipping to fry them on both sides, until they are golden brown. Serve hot.

HAM CROQUETAS
Crisp ham croquetas, gooey on the inside, are as synonymous with Miami as the Cubano. Deep-fried and shaped like cigars, these ham snacks are a classic Cuban dish. Though many new Cuban bakeries and restaurants play around with the ingredients, ham remains the most popular croqueta base. This version, from Islas Canarias Restaurant in Miami, is considered by many to be gold-star croquetas that hit the ideal sweet and salty notes. Squeeze some fresh lime on top, drizzle with hot sauce and serve with saltine crackers.

- In a food processor, pulse the ham and onion until coarsely ground. Set aside.
- In a large saucepan, melt the butter over medium heat. Quickly whisk in 1/2 cup flour and cook, whisking constantly, until smooth and tan, 2 to 3 minutes. While whisking, gradually add 1 cup milk, then continue whisking until the mixture thickens to the consistency of soft mashed potatoes, 1 to 2 minutes. Add the remaining 1/2 cup flour and use a wooden spoon or sturdy spatula to stir until very thick, firm and a darker shade of brown, 1 to 2 minutes. Some browning on the bottom of the pan is OK.
- To the pan, add the ham mixture, parsley, garlic powder and salt, and vigorously mix until the ingredients are evenly incorporated, 3 to 5 minutes. Transfer the mixture to a sheet pan lined with plastic wrap or parchment paper and pat into a 9-by-7-inch rectangle. Refrigerate for at least 2 hours or preferably overnight.
- Cut the chilled paste into 21 (3-by-1-inch) rectangles, then gently roll each into a 3-inch-long cylinder. Make sure the croquetas are smooth and without cracks. Place the croquetas on the sheet pan and chill in the freezer for 30 minutes.
- Place the cracker crumbs on a plate. In a medium bowl, combine the egg and remaining 2/3 cup milk, and whisk until combined.
- Submerge 4 to 5 chilled croquetas in the milk mixture to thoroughly coat, then transfer immediately to the crackers, making sure the croquetas are coated in the crumbs. Return to the sheet pan and repeat with the remaining croquetas. Freeze again until firm but not frozen, 15 to 30 minutes. Don't freeze for longer than 30 minutes as they may burst in the hot oil.
- Towards the end of the chilling time, fill a small Dutch oven or heavy saucepan with oil to a depth of 1 1/2 inches. Heat over medium-high until a deep-fry thermometer registers 350 degrees. If you don't have a thermometer, use a croqueta as a test piece: Carefully drop in 1 croqueta. If it immediately begins to fry and brown, the oil is ready. Carefully add 2 to 3 croquetas and fry, turning if needed to evenly cook, until golden brown,1 1/2 to 2 1/2 minutes. Transfer to a plate lined with paper towels and let rest for 1 to 2 minutes before serving. Repeat with the remaining croquetas, working in batches and adjusting the heat to maintain the oil temperature. Serve immediately with lime wedges, hot sauce and saltine crackers.

- In a large saucepan of salted boiling water, cook the pasta until al dente; drain well. Add the pasta and butter to the pesto, season with salt and pepper and toss well. Spread the pasta on the prepared baking sheet, cover loosely with plastic wrap and refrigerate until cold, about 1 hour.
- Using your hands, form the pasta into 18 balls. Make an indentation in each ball and fill with a piece of stracchino; shape the pasta around the cheese to enclose it. Cover the croquettes with plastic wrap and refrigerate until cold, at least 3 hours or overnight.
- In a large enameled cast-iron casserole, heat 3 inches of canola oil to 350°. Set a rack over a baking sheet. In a medium bowl, beat the eggs. Place the breadcrumbs in a second bowl. Season the eggs and breadcrumbs with salt. Dip each croquette in the eggs, letting the excess drip off, then roll in breadcrumbs; repeat the dipping and rolling to make a double layer of coating. Transfer the croquettes to the rack.
