Give a cook a beet, and he'll probably do one of two things with it: Reject it for fear of turning the kitchen into a juicy red crime scene, or roast it and serve it with goat cheese. I can take this marriage or leave it, but even if you love it, you must admit that it only scratches the surface of what beets have to offer. More than half the time that I prepare beets, I begin by shredding them in a food processor. After that, you can serve them raw with a simple dressing, or you can stir-fry them in a skillet to brown them slightly, which brings out their sweetness like nothing else. This recipe employs the latter technique (with the addition of sage) then calls for tossing the beets with pasta. A finishing of grated Parmesan is a salty counterpoint to the caramelized sweetness of the beets.

20 fresh sage leaves
Cooked pasta

Steps:

  • Put butter in a large skillet over medium-high heat. Heat butter until it turns nutty brown, then add the beets and sage leaves.
  • Cook, stirring occasionally, until the beets are tender and lightly browned, about 10 minutes. Add some cooked pasta and toss. Garnish with Parmesan.

Greens from 2 bunches beets (about 1/2 pound), rinsed, tough stems removed, and coarsely chopped
1/3 cup toasted hazelnuts, chopped
2 ounces blue cheese, such as Gorgonzola, crumbled

Steps:

  • In a large pot of boiling salted water, cook pasta according to package instructions. Reserve 1/2 cup pasta water; drain pasta.
  • Meanwhile, in a large skillet, heat 1 tablespoon oil over medium-high. Add garlic and cook until fragrant, 30 seconds. Add greens and cook, stirring, until tender, 2 minutes. Add pasta and hazelnuts; toss to combine. Add cheese and toss, adding enough pasta water to create a creamy sauce, 1 minute. Drizzle with oil and serve.

2 pounds small red or golden beets, scrubbed well
1 clove garlic, minced
1/4 cup fresh orange juice
2 tablespoons olive oil
1/2 teaspoon ground coriander
Coarse salt and ground pepper
1 pound gemelli, or other short tubular pasta
6 ounces blue cheese, crumbled (1 cup)

Steps:

  • Preheat oven to 400 degrees. Place beets in a 9-by-13-inch baking dish; add 1/2 cup water. Seal dish tightly with foil. Bake beets until tender when pierced with the tip of a sharp paring knife, 45 minutes to 1 hour. Let cool 10 minutes. Using a paper towel, rub off skins. Slice beets into wedges.
  • In a large bowl, toss beets with garlic, orange juice, oil, and coriander; season with salt and pepper.
  • Cook pasta in a large pot of boiling salted water until al dente, according to package instructions. Drain pasta, reserving 1 cup of cooking water. Return the pasta to the pot; toss with half of the blue cheese and enough reserved pasta water to coat pasta. Season with salt and pepper.
  • Divide the pasta mixture among plates; top with beets and remaining blue cheese. Serve immediately.

1 teaspoon olive oil
1 large clove garlic
4 ounces whole peeled carrots or 4 ounces thinly sliced, ready-cut carrots (3/4 cup)
1 teaspoon dried thyme
3/4 pound asparagus
4 ounces white mushrooms or assorted mushrooms
8 ounces ripe plum tomatoes
8 ounces fresh pasta like fusilli, rigatoni, penne
3/4 cup nonfat plain yogurt
2 teaspoons cornstarch
4 tablespoons blue cheese
1/8 teaspoon salt
Freshly ground black pepper to taste

Steps:

  • Chop onion.
  • Heat large nonstick pot until it is very hot. Reduce heat to medium-high, and add oil.
  • Add onion, and cook until it begins to soften.
  • Mince garlic, and add.
  • Bring water to boil in covered pot for pasta.
  • Using thin slicing blade of a food processor, slice carrots. Stir into onion and garlic along with thyme.
  • Wash asparagus. Break off and discard tough, woody part of stalks. Add to onion and carrot pot.
  • Wash, trim and slice mushrooms; wash and trim tomato, and cut into small chunks. Add mushrooms and tomatoes to vegetable pot; stir well, cover and continue cooking over medium-low heat.
  • Cook pasta.
  • Stir a little of the yogurt into the cornstarch to make a smooth paste. Stir the paste into the remaining yogurt, and mash in the blue cheese. When vegetables are tender, add in the yogurt mixture, and stir until the sauce is smooth and the blue cheese has melted. Season with salt and pepper.
  • Drain the pasta, and top with sauce.

  • Boil the pasta according to pack instructions. In a saucepan, melt the butter, then gently fry the onion until golden. Add the garlic and sage, fry for a further 2 mins, then remove the pan from the heat. Drain the pasta and reserve some cooking water. Stir through the buttery onions, stilton and 2 tbsp cooking water, then sprinkle with the toasted walnuts to serve.

1 small sweet onion, cut into quarters
1 head garlic, cloves peeled
2 tablespoons olive oil
1 teaspoon chopped fresh thyme
¼ teaspoon salt
¼ teaspoon ground black pepper
½ cup vegetable broth
3 tablespoons fresh lemon juice
1 cup heavy cream
½ cup shredded Parmesan cheese
1 (16 ounce) package dry fettuccine pasta
1 tablespoon shredded Parmesan cheese, or to taste
1 pinch chopped fresh thyme, or to taste

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Combine beets, onion, and garlic cloves in a bowl. Add olive oil, thyme, salt, and pepper; toss to coat. Transfer to a baking sheet.
  • Roast in the preheated oven until cooked through and tender, about 1 hour.
  • Remove from the oven and let cool until beets can be handled, 10 to 15 minutes. Remove beet skins.
