Creamy tuna pesto pasta made with cupboard ingredients, ready in less than 15 minutes. And so delicious!

400 g pasta (14 oz, Note 1)
6 tablespoons basil pesto (Note 2)
5 tablespoons cream cheese
2 cans tuna in oil (195 g/ 7 oz each (Note 3))
2 tablespoons lemon juice (more to taste)
fine sea salt and black pepper
2-3 tablespoons Parmesan

Steps:

  • Cook the pasta according to the packet's instructions. Drain the pasta reserving about 250 ml/ 1 cup of the cooking water.
  • Sauce: In the meantime, place the pesto, cream cheese, and drained tuna in a small saucepan. Add about 125 ml/ ½ cup of the water to the sauce and heat gently while stirring all the time.
  • Mix the sauce and the cooked pasta. Add a little more pasta water if necessary, the sauce should coat the pasta.
  • Adjust the taste with lemon juice, salt, and pepper.
  • Serve sprinkled with Parmesan.

400g penne
200g can yellowfin tuna in olive oil
190g jar basil pesto (or try a different flavour such as spinach, tomato or aubergine pesto)
100g cheddar , grated
250g punnet cherry tomato , halved

Steps:

  • Boil the pasta. Meanwhile, tip the tuna and its oil into a large bowl with the pesto. Mash together with a wooden spoon. Stir in a third of the cheese and all of the tomatoes. Heat the grill to high.
  • When the pasta is cooked, drain and toss through the pesto mix. Tip into a shallow baking dish and scatter with the remaining cheese. Place the dish under the grill for 3-4 mins until just melted, then serve with a green salad and garlic bread.

1 pinch salt
1/2 cup light cream
1/2 cup basil pesto
2 (8 ounce) cans tuna
grated parmesan cheese (to serve)

Steps:

  • Boil the pasta in a pan with a little bit of salt until al dente.
  • Meanwhile heat the cream in a saucepan, and add the pesto. Stir.
  • Drain the pasta and transfer back into the pan. Add the pesto-cream sauce and stir well. Add the chunks of canned tuna and stir again.
  • Serve with grated parmesan cheese.

400g dried pasta
140g frozen fine green bean
200g cherry tomato , halved
large pack parsley , roughly chopped
100g bag rocket
185g can tuna in sunflower oil, drained but reserve the oil
zest and juice 1 lemon
185g can tuna in spring water, drained
2 tbsp soured cream or cream cheese

Steps:

  • Cook the pasta in a large pan of salted boiling water, adding the green beans and cherry tomatoes for the final 3 mins of cooking time. Drain, reserving a mug of cooking water.
  • Whizz the parsley, half the rocket, 3 tbsp of oil from the tuna, the lemon zest and juice, and some seasoning with enough of the reserved water in a food processor to form a spoonable pesto dressing.
  • Tip the pasta and veg back into the pan and add the pesto, both cans of tuna and the soured cream or cream cheese, stirring through until hot. Remove from the heat and toss the rest of the rocket through the pasta.
