3/4 lb macaroni (the recipe asked for gemellis) or 3/4 lb other small shell pasta (the recipe asked for gemellis)
1 onion, chopped
2 tablespoons olive oil
1 lb ground lean pork
2 cups frozen corn
2 garlic cloves, chopped
2 cups light cheddar cheese, shredded (the recipe asked for sharp cheddar)
4 green onions, chopped
salt and pepper

Steps:

  • In a saucepan with boiling water, cook pasta until al dente. Drain and oil lightly. Keep 1/2 cup of the cooking water.
  • Meanwhile, in a skillet, soften the onion in oil. Add pork and cook, while breaking it, until browned. Add salt and pepper. Add corn, garlic and keep cooking about 2 minutes.
  • Add pasta, cheese, green onion and the cooking water you set aside. Stir to coat well the pasta and to reheat. Adjust seasoning.

8 ounces spaghetti
2 cups mild cheddar cheese, shredded
1 (15 1/4 ounce) can cream-style corn
1 (15 1/4 ounce) can whole kernel corn, drained
2 tablespoons margarine, melted
1 cup milk

Steps:

  • Preheat oven to 350°F.
  • Mix both cans of corn and 1 1/2 cup of cheese in a casserole dish.and the milk
  • Break spaghetti into 1/4's and mix into mixture.
  • Gently pat down so no spaghetti noodles are poking out.
  • Sprinkle the remaining cheese over mixture.
  • Pour margarine over mixture in a circular motion.
  • Put foil over the top and put in oven for 1 hour.
  • Take out of oven and stir.
  • ENJOY!

1 cup stone-ground yellow cornmeal
3 eggs
1/4 teaspoon salt
1/2 teaspoon baking soda
3/4 cup buttermilk, whole or reduced fat
1/3 cup olive oil
1 cup coarsely grated extra-sharp aged white Cheddar cheese
2 tablespoons unsalted butter

Steps:

  • Place oven rack in middle of oven. Heat to 400 degrees.
  • Combine corn, cornmeal, eggs, salt, baking soda and buttermilk. Stir well; add oil and 3/4 cup of the cheese. Stir to blend.
  • Place butter in 9-by-9-inch baking pan and put in oven until melted, not browned.
  • Pour batter into pan. Sprinkle with remaining cheese. Bake for 20 minutes or until tester inserted in center comes out clean.

1 (16 ounce) package jumbo pasta shells, dry
4 ears corn, husked
1 pound cherry tomatoes, halved
¼ cup extra-virgin olive oil
4 ounces prosciutto, diced
2 tablespoons basil pesto
10 leaves basil, thinly sliced
½ teaspoon salt
¼ cup freshly grated Parmesan cheese

Steps:

  • Bring a large pot of salted water to a boil. Add conchiglie and cook, stirring occasionally, until tender yet firm to the bite, 10 to 12 minutes.
  • Meanwhile, bring a separate pot of water to a boil. Add corn and boil for 2 minutes. Remove and run under cold water to cool.
  • Hold each cob upright in the base of a large serving bowl, and cut kernels off with a sharp knife.
  • Drain pasta; add to the corn. Add tomatoes, olive oil, prosciutto, pesto, basil, and salt; toss thoroughly.

2 pounds boneless pork, cut into 3/4-inch cubes
2 medium onions, chopped
2 cans (15-1/4 ounces each) whole kernel corn, drained
2 cans (10-3/4 ounces each) condensed cream of mushroom soup, undiluted
1/2 teaspoon salt
1/2 teaspoon pepper

Steps:

  • Preheat oven to 350°. Cook noodles according to package directions. , Meanwhile, in a large skillet, cook pork and onions over medium heat until meat is no longer pink. Drain noodles. There's no cream in this wonderfully summery pasta dish, just a luscious sauce made from puréed fresh corn and sweet sautéed scallions, along with Parmesan for depth and red chile flakes for a contrasting bite. Be sure to add the lemon juice and fresh herbs at the end; the rich pasta really benefits from their bright, fresh flavors. And while this is best made at the height of corn season, it's still quite good even with out-of-season supermarket ears, or with frozen corn.

12 ounces dry orecchiette or farfalle
1 tablespoon olive oil, plus more for drizzling
1 bunch scallions (about 8), trimmed and thinly sliced (keep the whites and greens separate)
2 large ears corn, shucked and kernels removed (2 cups kernels)
1/2 teaspoon ground black pepper, more for serving
3 tablespoons unsalted butter
1/2 cup grated Parmesan cheese, more to taste
1/3 cup torn basil or mint, more for garnish
1/4 teaspoon red pepper flakes, or to taste
Fresh lemon juice, as needed

Steps:

  • Bring a large pot of well-salted water to a boil. Cook pasta until 1 minute shy of al dente, according to the package directions. Drain, reserving 1/2 cup of pasta water.
  • Meanwhile, heat oil in large sauté pan over medium heat; add scallion whites and a pinch of salt and cook until soft, 3 minutes. Add 1/4 cup water and all but 1/4 cup corn; simmer until corn is heated through and almost tender, 3 to 5 minutes. Add 1/4 teaspoon salt and 1/4 teaspoon pepper, transfer to a blender, and purée mixture until smooth, adding a little extra water if needed to get a thick but pourable texture.
  • Heat the same skillet over high heat. Add butter and let melt. Add reserved 1/4 cup corn and cook until tender, 1 to 2 minutes. (It's O.K. if the butter browns; that deepens the flavor.) Add the corn purée and cook for 30 seconds to heat and combine the flavors.
  • Reduce heat to medium. Add pasta and half the reserved pasta cooking water, tossing to coat. Cook for 1 minute, then add a little more of the pasta cooking water if the mixture seems too thick. Stir in 1/4 cup of the scallion greens, the Parmesan, the herbs, the red pepper flakes, 1/4 teaspoon salt and 1/4 teaspoon pepper. Sprinkle with fresh lemon juice to taste. Transfer to warm pasta bowls and garnish with more scallions, herbs, a drizzle of olive oil and black pepper.

This is a great summertime and end of summer pasta. It is a a great way to use all those garden tomatoes and fresh corn. It takes almost no time to prepare and tastes delicious! Feel free to use your favorite pasta. I use thin spaghetti.

4 tablespoons olive oil
2 tablespoons red wine vinegar
½ cup whole corn kernels, cooked
4 tomatoes, chopped
½ cup chopped green onions
1 teaspoon dried basil
salt to taste
ground black pepper to taste
1 tablespoon grated Parmesan cheese
2 teaspoons chopped fresh basil

Steps:

  • In a large pot with boiling salted water cook pasta until al dente. Drain.
  • Meanwhile, in a large bowl whisk together the olive oil, red wine vinegar, and dried basil. Add salt and pepper to taste. Stir in the tomatoes, corn kernels, and scallions. Let sit for 5 to 10 minutes.
