2 tablespoons active dry yeast
3 cups warm water (110° to 115°)
2 tablespoons sugar
2 teaspoons salt
6-1/2 to 7-1/2 cups bread flour
Optional: Cornmeal and sesame seeds

Steps:

  • In a small bowl, dissolve yeast in warm water. In a large bowl, combine sugar, salt, yeast mixture and 3 cups flour; beat on medium speed 3 minutes. Stir in enough remaining flour to form a soft dough (dough will be sticky)., Turn onto a floured surface; knead until smooth and elastic, 6-8 minutes. Place in a greased bowl, turning once to grease the top. Cover with a kitchen towel and let rise in a warm place until doubled, about 30 minutes., Preheat oven to 500°. Punch dough down. Divide and shape into 6 balls. Place 3 in. apart on 2 baking sheets that have been generously sprinkled with cornmeal or greased. Cover with a kitchen towel; let rise in a warm place until doubled, about 15 minutes. Spray loaves with water; if desired, generously sprinkle with sesame seeds. Using a sharp knife, score surface with shallow cuts in an "X" pattern. Bake 2 minutes. Reduce oven setting to 425°. Bake until golden brown and internal temperature reaches 190°-200°. Remove from pans to wire racks to cool completely., Cut a thin slice off the top of bread. Hollow out bottom portion of loaf, leaving a 1/2-in. shell. Discard removed bread or save for another use, such as croutons.

Steps:

  • Thaw bread dough.
  • Preheat oven to 375 degrees F (190 degrees C).
  • Divide bread dough into fourths. Roll each fourth into an 8 inch circle.
  • Brush the back of 4 oven-safe bowls with oil or cooking spray. Place bowls upside down on a baking sheet. Place dough circles on bowls. Brush edge of dough with water and fold it back into a "hem" to make a bowl rim.

1 cup plus 3 tablespoons water (70° to 80°)
2 tablespoons olive oil
1/4 cup grated Parmesan cheese
1 teaspoon sugar
1 teaspoon salt
3 cups bread flour
2-1/2 teaspoons active dry yeast

Steps:

  • In bread machine pan, place all ingredients in order suggested by manufacturer. Select dough setting (check after 5 minutes of mixing; add 1 to 2 tablespoons of water or flour if needed)., When the cycle is completed, turn dough onto a lightly floured surface. Divide into fourths; shape each into a ball. Place on a greased baking sheet. Cover and let rise in a warm place until doubled, about 30 minutes., Bake at 400° for 15-20 minutes or until golden brown. Cool. 4 crusty hard rolls (4 inches wide)
1/2 cup finely chopped fresh mushrooms
4 large eggs
1/8 teaspoon salt

1/4 cup shredded Gruyere or fontina cheese

  • Preheat oven to 350°. In a small skillet, cook pancetta over medium heat until browned, stirring occasionally. Remove with a slotted spoon; drain on paper towels., Meanwhile, cut a thin slice off top of each roll. 1 loaf (1 pound) frozen bread dough, thawed
1 tablespoon olive or vegetable oil
1 teaspoon dried basil leaves
1/2 teaspoon garlic salt

Steps:

  • Lightly grease outsides of six 10-ounce custard cups with shortening (do not use cooking spray). Place cups upside down on large cookie sheet.
  • Divide dough into 6 equal pieces. Shape each piece into a ball, then pat into 6- inch round. Place rounds over bottoms of custard cups. Brush dough with oil. Sprinkle with basil and garlic salt. Cover and let rise in warm place 20 minutes.
  • Heat oven to 350°. Bake 16 to 20 minutes or until golden brown. Cool 5 minutes; remove from cups and place right side up on wire rack. (Interiors of bread bowls may be slightly moist.)
  • To serve, place warm or cooled bread bowls in individual shallow soup or pasta bowls. Spoon soup, stew or chili into bread bowls.

2 tablespoons yeast
2 tablespoons sugar
3/4 tablespoon salt
2 cups hot water (not boiling)
2 tablespoons olive oil
4 -5 cups flour
cornmeal (optional)

Steps:

  • Using a Bosch or Kitchen Aid mixer, put yeast, sugar, salt, hot water, and olive oil in the mixer.
  • Gradually add the flour until the dough has sufficiently scraped everything off the sides of the mixing bowl. Continue to mix on low for 8-10 minutes.
  • Remove and cover with plastic wrap - let the dough rise until doubles in size (about 30 minutes).
  • Grease 2 cookie sheets and sprinkle with corn meal.
  • Punch down the dough and make tennis ball-size dough balls (about 8-12, depending on how large you want your bread bowls).
  • Place on cookie sheet with no more than 6 to a cookie sheet (don't let them touch). Let them rise for another 30 minutes.
  • Bake each cookie sheet at 400 for 18 minutes.

11 teaspoons active dry yeast (2 (5½ teaspoon packages))
½ cup butter (1 stick (melted))
2 Tablespoons granulated sugar
3 teaspoons salt
6½ cups all-purpose flour

Steps:

  • Using a stand mixer or large mixing bowl, add warm water and sprinkle in yeast. Let dissolve for a few minutes until yeast becomes foamy.
  • Add melted butter, sugar and salt and mix until combined.
  • Gradually add flour.
  • Once combined, allow your mixer to knead the dough for about 5 minutes (you could do this by hand if you weren't using a mixer, but it may get a little tiring!).
  • Punch dough down and form into 6 equal sized balls.
  • Place on a greased cookie sheet and let rise until doubled.
  • Preheat oven to 425 degrees and bake for 20-25 minutes, or until golden brown.
  • Let cool and cut off the top, remove some of the bread from the inside and fill with soup or dip.

Like everything else in baking, high altitude poses its own set of problems. This 5 ingredient yeasty bread bowl, makes winter feel just a little more bearable. The outside is solid and crusty to contain liquids, but the inside is perfectly soft and chewy.

8 1/3 cups all-purpose flour, plus extra for kneading and dusting
2 tablespoons kosher salt
3 cups warm water
4 1/2 tablespoons instant yeast
1/4 cup sugar
olive oil flavored cooking spray, for bowl

Steps:

  • In a large bowl, whisk together the flour, instant yeast and the salt.
  • Add the warm water to the bowl and stir until combined.
  • Knead the dough in the bowl until it forms together in a ball.
  • Lightly dust a clean work surface with flour, and knead the dough for about 7 minutes until smooth and elastic.
  • Grease a clean bowl with oil, and place the dough in the bowl, turning to coat all sides. Cover the bowl with a towel and let rise in a warm spot until doubled in size, about 45 minutes.
  • Gently deflate the dough by pressing in the center. Let rise again for about 20-25 minutes. (This second rise is important for high altitude.).
  • Once again gently deflate the dough by pressing in the center. Place the dough on a clean work surface and cut it into 8 equal pieces. I find it is easier to cut like a pizza so they end up the same size.
  • Shape the dough into balls. Place the shaped bowls on a sheet pan lined with parchment paper and cover with a towel to rise for 40 minutes.
  • Preheat your oven to 435°F [Add 1 degree for every 500 ft above 6000].
  • Lightly dust the bowls with flour and use a sharp knife to slash the top of the bowls with an X pattern. Bake at 435F for 25-30 minutes, or until golden brown and crusty.
  • Let the bread cool slightly. Use a pairing knife to cut a circle out of the top of the bowls. Use a spoon to scoop out some of the extra bread so that you have enough room in the bowl for soup. Reserve the bread for dipping.

These are easy and quick. They only take about one hour after the dough is thawed. Then fill them with your favorite thick soup, chowder, chili, or stew. It will be fun to tear away the bread as you eat your soup and the two go great together. They will be good on a cool night. The time below does not include the thawing of the bread. One hint: To make the handling of the bread easier, make sure the bread has completely thawed but has not started to rise. You may also need to reshape the rounds after a few minutes on the cups by gently pushing the dough down and shaping as needed.
