Quick and Easy Broiled Steak With Mustard Sauce image

This Top Sirloin Steak with Mustard Sauce recipe is my go-to dinner for busy weeknights when I'm craving red meat! It's fast, healthy, and delicious.

10 ounces top sirloin
Freshly ground black pepper
Salt
1 cup sliced mushrooms*
1 green onion (thinly sliced)
1 clove garlic (diced)
1 cup beef broth
2 tablespoons sour cream
1 tablespoon Dijon mustard
Steamed green beans

Steps:

  • Preheat your broiler on high and line a rimmed baking sheet with foil and lightly grease.
  • Lightly score 4 shallow cuts on both sides of the steak, two in each direction (per piece of meat if your sirloin is in smaller pieces).
  • Sprinkle both sides generously with freshly cracked pepper and salt.
  • Place steak on the prepared baking sheet and broil for 4 to 6 minutes per side, until steak reaches your desired level of doneness. Remove from oven, tent with foil, and allow to rest for at least 5 minutes before slicing across the grain.
  • While your steak is cooking, heat a medium skillet over medium heat and lightly grease with cooking spray or a small drizzle of olive oil. Add mushrooms and sliced green onions. Saute until mushrooms are lightly browned, 3 to 4 minutes. Add garlic and cook for 30 seconds.
  • Transfer vegetables to a plate and return pan to heat.
  • Add beef broth to your pan and bring to a simmer. Simmer for 3 to 4 minutes until reduced by half. Remove from heat and whisk in sour cream and mustard. Add salt and pepper to taste (if you use full-sodium beef broth, you probably wont need salt). If not ready to serve, you can keep the mixture warm over very low heat--do not boil.
  • Serve steak alongside steamed green beans, with mustard sauce spooned over both. Enjoy!

¼ cup grill seasoning (such as Montreal Steak Seasoning®)
½ cup grainy French mustard (such as Moutarde de Meaux®)
1 cup diced red onion, divided
2 tablespoons unsalted butter

Steps:

  • Score both sides of each steak by making diagonal slices. Season with grill seasoning. Brush each side of the steak with the mustard, then press 1/2 of the red onions into the mustard on one side of the steak.
  • Melt the butter in a large skillet over high heat. Place the steaks onion side down in the skillet. Press the remaining onions evenly into the mustard on the top side of each steak. Cook steaks until they start to firm, and are browned on the outside and red in the center, 4 to 5 minutes per side. An instant-read thermometer inserted into the center should read 125 degrees F (52 degrees C). Remove steaks from the skillet, and allow them to rest for 5 minutes before serving.

½ cup beef broth
1 ½ tablespoons barbeque sauce
1 dash hot pepper sauce

Steps:

  • Place each steak between two sheets of heavy plastic (or inside a resealable freezer bag) on a solid, level surface. Firmly pound each steak with the smooth side of a meat mallet to a thickness of 1/4-inch. Remove steaks from plastic.
  • Generously season each steak with salt and ground black pepper. Set aside.
  • Combine beef broth, barbeque sauce, hot sauce, and black pepper in a bowl. Add chilled butter to broth mixture but do not stir.

2 tablespoons canola oil
Salt and pepper
8 tablespoons Cognac
8 tablespoons heavy cream
4 tablespoons Dijon mustard

Steps:

  • Cut excess fat from the steaks and make small incisions around the outside wherever there is a line of gristle (between the fat and the meat). This prevents curling. Over medium-high heat, bring the oil to the smoking point. Saute the steaks on one side for 2 minutes. Turn the steaks with tongs or a fork inserted close to the rim of the fat, and saute 2 to 3 minutes. Immediately remove the steaks to a warm platter and season with salt and pepper. Cover loosely with foil while making the sauce. Discard any fat in the pan. Add the cognac and scrape up the coagulated juices. Add the cream and reduce by 1/2. Stir in the mustard and pour the sauce over the steak.

1 1/4 cups table cream (equals 3 dl Creme fraiche)
1 tablespoon Dijon mustard (aka sweet grain mustard)
2 -3 tablespoons butter

fresh ground pepper (I will use a lot!)

  • Preheat a fry pan with 2 tbs of butter in the pan until butter is melted. Fry the steaks in the pan until golden, a few minutes should do (if it seems dry add a bit more butter).

1/4 cup boiling water
1/4 cup vegetable oil

  • Place all the ingredients in the container of a blender, blend for 1 minute. Scrape down the sides of the blender with a rubber spatula and process for 30 seconds longer. The mustard should be a little thicker than heavy cream. Store in glass jar, well-sealed, in the refrigerator and let the flavors marry for at least a day before using. The longer it sits, the better it tastes; it also will get thicker and more yellow.

4 minute steaks (if you don't see this cut of meat, ask the butcher)
oil, for frying
salt
self-rising flour, for dredging
2 (10 ounce) cans cream of mushroom soup
1 (10 ounce) can milk
1 (4 ounce) can mushrooms or 1/2 lb fresh mushrooms, sliced
1 tablespoon butter

Steps:

  • Slice mushrooms (if using fresh) and saute in butter until tender.
  • If using a can, drain well.
  • Set aside.
  • In a large skillet, heat oil.
  • Salt minute steaks and dredge in flour.
  • Fry until breading is brown.
  • **Make sure when frying you leave the meat long enough for the breading to fry until it sets, as it will fall off if not fried long enough.
  • This is what makes it GOOOOD!
  • When the meat is fried, place on paper towels to drain excess oil.
  • Place in a 2 quart casserole dish and keep warm.
  • Leave 2 tablespoons of oil in the skillet and remove the rest.
  • Add cream of mushroom soup, milk, and mushrooms, stirring constantly.
  • Let soup simmer on med-low heat until throughly heated.
  • Pour over warm meat and serve.

Canola oil, for cooking
One 12-ounce sirloin steak
Kosher salt and freshly ground black pepper
3 medium shallots
1 tablespoon unsalted butter
1/4 cup cognac (see Cook's Note)
1/2 cup beef stock
2 tablespoons Dijon mustard
1 tablespoon red wine vinegar
1 small bunch fresh chives

Steps:

  • Put some oil in a cast-iron skillet over medium heat.
  • Place the steak on a plastic board and cover with plastic wrap. Pound the steak with the flat side of a meat mallet until it is about 1/4-inch thick. Remove the plastic wrap.
  • Sprinkle the steak on both sides with salt and pepper. When the oil begins to visibly smoke, add the steak to the skillet. Cook on the first side, 2 to 3 minutes. (Resist the temptation to flip or move the steak as it cooks.) Turn the steak on the second side and cook until browned and an instant-read thermometer registers between 125 and 130 degrees F for rare, between 130 and 135 degrees F for medium-rare, or between 135 and 140 degrees F for medium, 2 to 3 minutes more.
  • Meanwhile, peel and mince the shallots.
  • Remove the steak from the skillet to a clean plastic cutting board while you make the sauce. Pour off the excess grease from the skillet. Add the shallots to the skillet along with the butter and cook until the shallots are translucent, 2 to 3 minutes. Pull the skillet off the heat and add the cognac. Gently tilt the skillet towards the flame to ignite the alcohol. Cook until the flame subsides and the liquid reduces almost completely. (See below for an alternative method for igniting alcohol.) Add the beef stock, mustard and vinegar and stir to combine. Reduce until thick, 3 to 5 minutes.
  • Meanwhile, thinly slice the chives. Add the steak and any accumulated juices back to the skillet. Spoon the shallots and juices over the steak, then transfer back to the cutting board. Slice the steak, then arrange on a serving platter. Spoon over any additional sauce and sprinkle the sliced chives over the top.

2 boneless strip steaks, each 8 to 10 ounces and 1 inch thick, room temperature
Kosher salt and freshly ground pepper
2 tablespoons unsalted butter
1/4 cup vermouth or white wine
1/4 cup heavy cream
1 teaspoon Dijon mustard

Steps:

  • Steaks: Heat a 10-inch cast-iron skillet over medium-high until it is very hot but not smoking, about 2 minutes. Pat steaks dry with paper towel. Season steaks on both sides with salt and pepper. Add half the butter to the skillet and set one of the steaks directly on top. Repeat with remaining butter and steak. Without moving the steaks, sear until steaks release easily from pan and a golden brown crust has formed, about 4 minutes. Using tongs, turn steaks over and continue cooking until an instant-read thermometer reaches 115 to 120 degrees for rare, 125 degrees for medium-rare, and 135 to 140 degrees for medium. Transfer steaks to a warm plate to rest.
  • Sauce: Remove pan from heat and carefully pour in vermouth (it will spatter). Return skillet to heat. Deglaze pan, stirring up any browned bits with a wooden spoon, and cook until liquid is almost completely reduced, about 45 seconds. Add cream and any juices that have collected from steak; stir to combine. Stir in mustard; heat 15 seconds. Cook until sauce lightly coats the back of a spoon, about 10 seconds. Season with salt and pepper.
  • Place steaks on dinner plates and pour sauce over the top, dividing evenly, before serving.

SHELL STEAKS WITH MUSTARD BUTTER



Shell Steaks With Mustard Butter image

4 boneless shell steaks, each about 1/2 inch thick
Salt to taste if desired
Freshly ground black pepper to taste
4 tablespoons butter at room temperature
2 teaspoons Dijon-style mustard
1/2 teaspoon Worcestershire sauce
2 teaspoons finely minced garlic
1 tablespoon finely chopped shallots
2 tablespoons finely chopped parsley
Sauteed potatoes with parsley as garnish (see recipe)

Steps:

  • Trim off all peripheral fat from the steaks. Sprinkle the steaks on both sides with salt and a generous grinding of black pepper.
  • Put the butter in the container of a food processor or electric blender and add the mustard, Worcestershire sauce, garlic, shallots, parsley, salt and pepper. Blend thoroughly.
  • Heat a heavy skillet (preferably black iron) until it is almost smoking.
  • Add one steak at a time and cook until almost blackened on one side, about 2 to 3 minutes. Turn and cook on the other side about 2 to 3 minutes. If your stove has a ventilating fan, it is best to turn it on because the steaks will smoke. When each steak is done, transfer it to a warm serving dish and spoon butter mixture all over the top.
  • Continue cooking until all the steaks are done.
  • Garnish each serving with a portion of the sauteed potatoes with parsley.

1 cup water
2 tablespoons water
kosher salt
two minute steaks (7-8 ounces each)

4 scallions, thinly sliced, whites and greens separated

Steps:

  • Place rice and water in a saucepan with a tight-fitting lid over medium high heat. Bring to a boil, season lightly with salt, and top with lid. Reduce to a simmer and cook until rice is tender, 12 minutes. Uncover lid and fluff with a fork.
  • Meanwhile, dry steaks well and season very generously with salt. Heat a large cast iron skillet over high heat. When smoking, add grapeseed oil and swirl to coat. Transfer steaks to skillet and top immediately with another skillet or two, to encourage browning. Cook 1 minute, flip, and remove to a plate to rest.
  • Wipe out skillet and add olive oil. Add shishitos, season with salt, and cook, turning only occasionally, until deeply charred and softened, about 6 minutes. Add scallion whites and cook until crisped, 1 minute. Remove from heat.
  • Thinly slice steaks against the grain and plate with shishitos and rice. Garnish with scallions greens and serve.
