PEACH PECAN POUND CAKE



Peach Pecan Pound Cake image

Makes 1 (10-inch) cake

Number Of Ingredients 8

4 cups all-purpose flour
3 cups sugar
2 cups butter, softened
1 cup whole buttermilk
6 large eggs
2 teaspoons vanilla bean paste
3 cups diced peeled fresh peaches, divided
1 cup toasted chopped pecans

Steps:

  • Preheat oven to 325°. Lightly grease a 10-inch tube pan with all-vegetable shortening. In a large bowl, beat flour, sugar, butter, buttermilk, eggs, and vanilla paste with a mixer at low speed for 1 minute; scrape sides and bottom of bowl. Increase speed to medium, and beat for 2 minutes; stir in 2 1/2 cups peaches. Sprinkle pecans in bottom of prepared pan, and pour batter into pan. Bake until a wooden pick inserted near center comes out clean, about 90 minutes. Let cool in pan on a wire rack for 20 minutes. Remove from pan, and let cool completely on a wire rack. Top with remaining ½ cup peaches just before serving. Refrigerate in an airtight container for up to 2 days.

I saw Paula make this on the Food Network and I had to save this recipe for when peach season comes around. Serve with your choice of whipped cream or vanilla ice cream. This looked fabulous!

Number Of Ingredients 6

4 cups peeled sliced peaches
2 cups sugar, divided
1/2 cup water
8 tablespoons butter
1 1/2 cups self rising flour
1 1/2 cups milk

Steps:

  • Preheat oven to 350°.
  • Combine peaches, 1 cup of the sugar and water in a saucepan and mix well.
  • Bring to a boil, then reduce heat and simmer for 10 minutes.
  • Remove from the heat.
  • Place butter in a deep baking dish and put in the oven to melt.
  • Mix remaining cup of sugar, flour and milk slowly to prevent clumping.
  • Pour mixture over melted butter.
  • DO NOT STIR!
  • Spoon fruit over top, gently pouring in syrup.
  • Batter will rise to the top during baking.
  • Bake for 30 to 45 minutes.

1 15-oz can cling peaches, drained & reserve 1/2 C juice
3 egg whites
3 1/2 tsp baking powder
1/2 tsp ground cinnamon
1 tsp vanilla
1 tsp salt
ICING
1 6-oz nonfat peach yogurt
1 8-oz Lite Cool Whip

Steps:

  • Preheat oven to 350. Use no-stick cooking spray in Bundt pan. Mix sugar and cinnamon. Sprinkle mixture over bottom and sides of pan. Combine cake ingredietns together, including reserved juice. Beat w/ mixer @ low speed for 30 seconds, scraping bowl constantly. Beat on high speed for 2 minutes. Pour into pan. Bake for 40-45 minutes. Remove from oven, cool completely. Frost with icing immediately before serving.
