This was my great-grandmother's recipe handed down from generation to generation. This was always served on special occasions. It was one thing us kids looked forward to when visiting grandma's house.

Steps:
- Mix sugar, flour, and cocoa powder together in a saucepan. Stir in 1/2 cup milk slowly. Add egg. Stir in remaining milk. Cook over medium heat until thick, 3 to 5 minutes. Remove from heat; add butter and vanilla extract.

- Sift the sugar, cocoa powder, flour, and salt into a large skillet or saucepan. Add the milk and whisk to combine. Cook over medium heat, stirring frequently, until slightly thickened, 7-10 minutes. Remove from the heat.
- Stir in the vanilla and butter until the butter is melted and well incorporated.

- Whisk the cocoa, flour, and sugar together in a bowl until there are no lumps. Pour the milk into the mixture and whisk until well incorporated. Transfer the mixture to a saucepan and cook over medium heat, stirring frequently, until its consistency is similar to gravy, 7 to 10 minutes. MOM'S CHOCOLATE GRAVY
When Mom and Pop got married, Pop had to call Mamaw to get this recipe. When he was growing up, they were really poor (Papaw was a Baptist preacher and worked at various jobs. Back then life was hard for a preacher with 4 kids). This was one of their "desserts". Mom also made this when we were growing up and to this day, I still love a big hot heapin helpin. One might ask how do you eat "chocolate gravy"? With homemade "cat-head" biscuits (Mamaw called them this because she made them "big as a cat's head") or canned country-style (Do not try this with one of those flaky-type canned biscuits - it just isn't the same.) and a chunk of butter about the size of the tip of your thumb. Let it kinda melt, then eat away. This is just like any other gravy, other than the addition of the butter at the table. I eat this with milk or coffee as the beverage, as nothing else tastes good. - Mix all the dry ingredients in a heavy saucepan with a whisk. Using a whisk blends everything better than a spoon. Stir in the milk.
- Cook over medium heat stirring constantly. Remove the pot when the mixture is thick like pudding.

- in seperate bowl mix all dry ingredients, flour,cream of tartar, baking soda, cinnamon.
- in another bowl beat eggs, add honey, oil, add peanut butter mix well, and apple sauce an stir.add wet mixture to dry a little at a time stiring well.
- make 1/2" balls, roll in a mixture of 1 c cormeal and 2 tsp of cinnamon. place on a parchment lined baking tray. shape into paws if desired.
- bake in a preheated oven for 8 to 12 minutes depending on size.

To bake these cookies in one batch, you will need two madeleine pans. You can also bake them in two batches, cooling and buttering the pan between uses. Dipped cookies can be stored in the refrigerator up to three days; undipped cookies can be stored at room temperature up to one week.

- In a medium bowl, beat butter with sugar on medium-high speed until light and fluffy, about 2 minutes. Add flour, spices, salt, and almonds and beat well on low speed until dough starts to come together, about 1 minute. Cover bowl with plastic wrap and refrigerate until firm, about 1 hour.
- Preheat oven to 350 degrees. Brush 2 madeleine pans with softened butter. Press 2 packed tablespoons of dough into each mold (dough should be level with top of mold).
- Bake until edges are brown, about 20 minutes. Let cool 10 minutes in pans on a wire rack. Turn pans upside down over rack and tap to release cookies from mold. Let cool completely on rack.
- Melt chocolate in a metal bowl set over (not in) a pan of simmering water, or in a double boiler. Dip each cookie on the diagonal into chocolate, then place on a parchment-lined baking sheet. Refrigerate until chocolate is set, about 30 minutes.
