CLASSIC CRISPY FALAFEL



Classic Crispy Falafel image

I love burghul (cracked wheat) in falafel. These are delicious as a pita bread filling with tabbouleh and hommous. Prep time does not include soaking for the chickpeas or bulghur.

Number Of Ingredients 11

300 g chickpeas
4 tablespoons bulgur
3 garlic cloves
3 tablespoons plain flour
1 egg
1 teaspoon salt
1 teaspoon pepper
3 teaspoons ground coriander
1 teaspoon cumin
1/4 teaspoon ground red chili pepper
1 tablespoon tahini

Steps:

  • Soak chickpeas in water to cover for 12 hours.
  • Boil in large saucepan for about 20 minutes, until soft (or you can use canned chickpeas, if desired).
  • Drain and blend in food processor to a smooth paste.
  • Soak bulghur in water to cover for 1 hour.
  • Crush garlic with salt.
  • Combine all ingredients except oil.
  • Shape into balls and shallow-fry until brown (you can deep-fry if you like, or coat lightly with oil and bake until golden).
  • The yield depends on the size of the falafels you prefer.

1 cup bulgur (see note)
1 tablespoon chopped fresh basil
4 tablespoons minced parsley
4 tablespoons minced fresh mint
2 cup shelled fresh peas or frozen peas
3 green onions
1 cup plain yogurt
2 tablespoons lemon juice
Salt and freshly ground black pepper to taste

Steps:

  • Cover bulgur with hot water and allow to stand for 30 minutes. Drain thoroughly, squeezing out additional water with hands.
  • Cook the fresh peas in boiling water for 1 minute and drain. Or defrost frozen peas but do not cook.
  • Combine peas with bulgur and remaining ingredients except for yogurt. Then stir in yogurt to coat thoroughly.

1 cup bulgur
2 cups water
1 cup fresh or frozen peas (about 5 ounces), thawed
1 can (15 ounces) chickpeas or garbanzo beans, rinsed and drained
1/2 cup minced fresh parsley
1/4 cup minced fresh mint
1/4 cup olive oil
2 tablespoons julienned soft sun-dried tomatoes (not packed in oil)
2 tablespoons lemon juice
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • In a large saucepan, combine bulgur and water; bring to a boil. Reduce heat; simmer, covered, 10 minutes. Stir in fresh or thawed peas; cook, covered, until bulgur and peas are tender, about 5 minutes., Transfer to a large bowl. Stir in remaining ingredients. Serve warm, or refrigerate and serve cold.

Pea falafels with minty couscous salad image

Give falafel a makeover by using a mix of chickpeas and frozen peas, serve with couscous and a dollop of yogurt for a cheap but tasty meal

400g frozen peas
400g chickpeas , drained
3 tbsp flour , plus a little for dusting
2 garlic cloves , crushed
2 tsp cumin seeds
2 tbsp smooth peanut butter or tahini
small bunch parsley , chopped
small bunch mint , chopped
zest and juice 1 lemon
200g couscous
3 tbsp olive oil
4 large tomatoes , chopped
100ml natural yogurt

Steps:

  • Put the peas in a colander and run under the hot tap to defrost. Drain well, then put half into a food processor. Add the chickpeas, flour, garlic, cumin seeds, peanut butter or tahini, parsley, lemon zest and plenty of seasoning. Whizz the ingredients to a paste, adding a splash of water if it looks too crumbly. Using wet hands, shape the mixture into 8 patties, dust with flour, then place on a plate and chill for 10 mins, or longer if you have time. Boil the kettle.
  • Place the couscous in a large bowl, season, then pour over enough boiling water to just cover. Set aside for 5 mins.
  • Heat 2 tbsp oil in a large pan. Cook the falafels for 2-3 mins on each side, until crisp and golden - you may have to do this in batches, so keep them warm in a low oven while you do. Add the remaining oil, lemon juice, mint, tomatoes and peas to the couscous. Serve the salad and falafels with a dollop of yogurt.

Add the ground split peas, onion, flour, parsley, garlic, coriander, cumin, baking powder, cayenne, lemon juice and 1 teaspoon of salt and process until thoroughly combined. Form the mixture into 12 falafel patties using a scant 1/4 cup per patty. Refrigerate the falafel until firm.
  • Preheat the oven to 400°. In a large nonstick skillet, heat the olive oil. Add the falafel patties in two batches to the skillet and cook over moderately high heat until browned, crisp and heated through, about 3 minutes per side. Transfer the falafel to a cookie sheet. Rewarm all of the patties in the oven, about 4 minutes.
