1 cup unsalted butter
1 cup crunchy peanut butter
1 cup white sugar
1 cup packed brown sugar
2 large eggs eggs
2 ½ cups all-purpose flour
1 teaspoon baking powder
½ teaspoon salt
1 ½ teaspoons baking soda

Steps:

  • Cream butter, peanut butter, and sugars together in a bowl; beat in eggs.
  • In a separate bowl, sift flour, baking powder, baking soda, and salt; stir into butter mixture. Put dough in refrigerator for 1 hour.
  • Roll dough into 1 inch balls and put on baking sheets. Flatten each ball with a fork, making a crisscross pattern. Bake in a preheated 375 degrees F oven for about 10 minutes or until cookies begin to brown.

¼ cup butter
1 ½ cups peanut butter
4 cups confectioners' sugar
1 teaspoon vanilla extract
1 teaspoon maple flavored extract
2 cups semisweet chocolate chips

Steps:

  • Combine the butter, peanut butter, confectioners' sugar, vanilla and maple flavoring. Cream well and knead well.
  • Melt the chocolate chips over low heat. Roll the dough into 1 inch balls. Dip into melted chocolate chips.
  • Refrigerate overnight (or at least for about 15 minutes) on a cookie sheet lined with wax paper.

2 cups creamy peanut butter
1/2 cup butter, softened
3-3/4 cups confectioners' sugar
3 cups crisp rice cereal
4 cups semisweet chocolate chips
1/4 cup plus 1 teaspoon shortening, divided
1/3 cup white baking chips

Steps:

  • In a large bowl, beat peanut butter and butter until blended; gradually beat in confectioners' sugar until smooth. Stir in cereal. Shape into 1-in. balls. Refrigerate until chilled., In a microwave, melt chocolate chips and 1/4 cup shortening; stir until smooth. Dip balls into chocolate; allow excess to drip off. Place on a waxed paper-lined pan. Flaky sea salt, for sprinkling

Steps:

  • Preheat the oven to 375 degrees F. Line a baking sheet with parchment or a silicone mat.
  • With an electric mixer, beat together the peanut butter, brown sugar and egg until well combined. Stir in the chocolate chips with a wooden spoon.
  • Lightly wet your hands and form the mixture into 12 balls. Place the balls about 1 inch apart on the baking sheet. Lightly wet the tines of a fork and press a criss-cross pattern into the top of each cookie. Lightly sprinkle them with flaky sea salt.
  • Bake until just starting to brown, 12 to 15 minutes. Let sit for 5 minutes on the baking sheet, then remove to a rack to cool completely before eating.

Every year around Easter and Christmas while I was growing up I can remember my (ex) stepmother's mom making these "cookies", and everyone used to fight over them. About a year ago I got to craving them again, but she has since passed away. There are a lot of peanut butter ball recipes out there, but none quite like this one. This one uses quick cooking oats (like I remember) instead of just peanut butter or rice krispies, and I, myself, like the oatmeal taste better than the others. This recipe was put together using several different recipes, but I have adjusted the ingredient amounts and directions to my liking. Dipping the balls in chocolate and paraffin wax is up to you, but I think it adds to the flavor. I have sometimes gotten over a hundred balls, depending on how big you roll them, and rolling out the balls is what makes the prep time so long.

4 cups smooth peanut butter (I find that JIF peanut butter has the best flavor and works the best)
1 cup butter
5 cups powdered sugar
2 cups oats
1 -2 paraffin wax block (optional)
1 (16 ounce) bag semi-sweet chocolate chips (optional, I'm not really sure of the size bag to get, but it's the basic, most common size bag of ch) (optional)

Steps:

  • In a medium sized bowl combine powdered sugar and oats; mix well.
  • In a small saucepan melt together the butter and peanut butter until smooth and well incorporated.
  • Add the peanut butter "sauce" to bowl of oatmeal and sugar. Mix together well using a spoon at first, then after "sauce" has cooled slightly use your hands to better mix all ingredients together.
  • Roll into balls about an inch in diameter (or whatever size you wish). Lay formed balls on wax paper or foil until all dough has been used.
  • After forming balls, melt paraffin wax in a double boiler, then add chocolate chips. Melt and mix together well.
  • Place about a handful of peanut butter balls in chocolate wax, being sure to stir in order to coat balls completely. Remove coated balls with a spoon and return to wax paper or foil to cool and dry.
  • Enjoy immediately or store in an airtight bowl in the fridge.

Depending on where you live, these chocolate and peanut-butter confections are known as either peanut butter balls or buckeyes. In the Midwest, they are known as buckeyes because they look like the nut of a buckeye tree, thanks to an exposed circle of peanut butter that's left after they're dipped in chocolate. Be sure to start with a good-quality peanut butter, and don't skimp on the salt. Those small touches carry a lot of impact.

2 cups/242 grams confectioners' sugar
1 cup/270 grams sweetened, smooth peanut butter
4 tablespoons/57 grams unsalted butter, melted
1 teaspoon vanilla extract
3/4 teaspoon kosher salt
5 ounces/142 grams semisweet chocolate

Steps:

  • Line a rimmed baking sheet with parchment paper. In a large bowl, with an electric mixer on medium, beat the confectioners' sugar, peanut butter, butter, vanilla and salt until smooth and uniform, about 1 minute.
  • Portion the mixture into 1 tablespoon balls. Roll the balls into neat circles between your palms. Transfer to the prepared baking sheet, cover with plastic wrap and chill in the freezer until firm, about 30 minutes.
  • A few minutes before the balls are done chilling, prepare the chocolate. In a small microwave-safe bowl, melt the chocolate in short bursts, stirring often. If chocolate becomes too thick during the dipping process, it can be liquified again in the microwave.
  • Use a toothpick to skewer one ball at a time, and dip it into the melted chocolate, leaving a small circle of the peanut butter mixture exposed at the top and allowing any excess chocolate to drip back into the bowl. Transfer buckeyes to the prepared baking sheet and remove the toothpick. Repeat with the remaining balls, returning them to the freezer for a few minutes if they become too soft to work with. Smooth over the holes left by the toothpick with a small offset spatula or your finger. Chill in the refrigerator until the chocolate is firm, about 30 minutes.
