PEANUT BUTTER CHRISTMAS MICE



Peanut Butter Christmas Mice image

I have made these since 1989. They are always a hit when I make them for my son's class.

Number Of Ingredients 11

½ cup butter, room temperature
1 cup creamy peanut butter
½ cup packed light brown sugar
½ cup white sugar
1 egg
1 teaspoon vanilla extract
½ teaspoon baking soda
1 ½ cups all-purpose flour
1 cup peanut halves
¼ cup green candy sprinkles
60 3-inch pieces red shoestring licorice

Steps:

  • In a large bowl combine butter and peanut butter; beat until creamy. Add brown and white sugar and beat until fluffy. Beat in egg, vanilla extract and baking soda until well blended. With mixer on low, mix in flour just until blended. Cover and chill for 1 hour, or until firm.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Shape 1 level tablespoon of dough into 1 inch balls. Taper each ball at one end into a teardrop shape. Press flat on one side. Place flat sides down, 2 inches apart on ungreased cookie sheets. Press the sides of the dough in to raise the 'backs' of the mice, as dough will spread slightly during baking.
  • Gently push 2 peanut halves in each 'mouse' for ears, and 2 pieces of green candy for eyes. With a toothpick make a hole 1/2 inch deep in the tail ends.
  • Bake in preheated oven for 8 to 10 minutes, or until firm.
  • Transfer to a cooling rack and insert licorice pieces as tails.

1/2 cup butter, softened
1/2 cup sugar
1/2 cup packed brown sugar

DECORATIONS:
Peanuts, split in half
Brown M&M's minis
Miniature semisweet chocolate chips
Black shoestring licorice, cut into 2-inch pieces

Steps:

  • Beat peanut butter, butter and sugars until well blended. Beat in egg and vanilla. In another bowl, whisk together flour and baking soda; gradually beat into peanut butter mixture (dough will be soft). Refrigerate until firm enough to shape, about 1 hour., Preheat oven to 350°. Shape dough into 1-in. balls; taper one side to resemble a mouse. Place 2 in. apart on ungreased baking sheets. Add peanuts for ears, M&M's for noses and chocolate chips for eyes., Bake until set, 8-10 minutes. Immediately insert licorice pieces into warm cookies for tails. Remove from pan to wire racks to cool.

4 teaspoons miniature semisweet chocolate chips
Cake decorator holly leaf and berry candies
60 to 66 pieces red shoestring licorice (2 inches each)

Steps:

  • In a large bowl, cream the peanut butter, butter, and sugars until light and fluffy. Beat in egg and vanilla. Combine flour and baking soda; gradually add to the creamed mixture and mix well. (Dough will be soft). Refrigerate for 1 hour or until easy to handle. Roll into 1 inch balls. Place 2 inches apart on un-greased baking sheets. Pinch each ball at one end to taper. Insert two peanut halves in center of each ball for ears. Add one M&M baking bit for nose and two chocolate chips for eyes. Arrange holly and berry candies in front of one ear. These are the most adorable cookies ever! I wish I could post a picture, haven't learned how yet. This is from Taste of Home, I made these last Christmas for the first time, and they were a huge hit! The kids loved them, and the adults were busy trying to figure out how to make them themselves this year. They do taste yummy, but people are so busy admiring them, it's a while before they remember they are a cookie and can eat them. Got raves in all my holiday trays. They were really fun to make and not hard at all.

1/2 cup sugar
1/2 cup packed brown sugar
1 large egg
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1/2 teaspoon baking soda
1/2 cup peanuts, halved
2 tablespoons M&M's plain chocolate candy, miniature baking bits red and green
4 teaspoons miniature semisweet chocolate chips
cake decorator holly leaf and berry decorative candies

Steps:

1/2 cup smooth peanut butter
1/2 cup light corn syrup
1 cup nonfat dry milk
1 teaspoon vanilla extract
1 1/3 cups confectioners' sugar
Multicolored nonpareils
Red licorice laces

Steps:

  • In a large bowl with heavy-duty electric mixer, or by hand with a wooden spoon, beat peanut butter, corn syrup, dry milk and vanilla until well blended. With mixer on low speed (or with a spoon), gradually beat in as much confectioners' sugar as the mixer can handle. Scrape mixture onto work surface and knead in any remaining sugar. For each mouse, break off enough mixture to roll into a 1-inch ball for the body, then enough to roll into a 1/2-inch ball for the head. Press small ball on to large ball, then lightly pinch head to form a rounded nose. Break off enough mixture to form two small balls for ears. Press each ball between thumb and forefinger to flatten. Press onto head. Repeat with remaining mixture. Dip end of a toothpick in water. Shake off excess. Touch toothpick to a colored nonpareil (it will stick). Press onto end of nose. Repeat with 2 more nonpareils for eyes. Cut a length of licorice lace and insert into body for tail.
