Steps:

• Preheat oven to 350 degrees F (175 degrees C). Grease a 6 cup ring mold.
• Combine the egg, peanut butter, oil, vanilla, and honey, if desired, in a large bowl; blend well. Stir in the carrots and mix thoroughly. Sift together the flour and baking soda and fold into the carrot mixture. Spoon cake batter into prepared pan.
• Bake in preheated oven for 40 minutes. Let cake cool in pan for 10 minutes; then turn out onto a wire rack to cool completely.

• In a large bowl, combine flour and baking soda.
• In a separate bowl mix together vegetable oil, peanut butter, applesauce and pumpkin puree. Once combined, mix in egg and mix until combined.

• Mix the eggs, honey and melted coconut oil together in a medium-sized mixing bowl. Stir in the coconut flour and blend until smooth. Add the blueberries and mix thoroughly.
• Grease a small loaf pan with coconut oil and fill it with the batter. Bake for 25-30 minutes. While the cake is baking, mix the honey and yogurt together to make the frosting. You can add natural food coloring if you choose.
