10 MINUTE PEANUT BUTTER FUDGE
This 10 minute peanut butter fudge uses crushed saltines for the ultimate salty sweet flavor combo. This stuff is addicting!

- Crush the crackers into fine crumbs, depending on how much texture you want in your fudge. Place in a large mixing bowl with the peanut butter.
- Combine the sugar, milk, and butter in a saucepan over medium low heat. Once the mixture starts boiling, turn on a timer for 1 minute. The mixture will look a little frothy. Remove from the heat after 1 minute and pour immediately over the crackers and peanut butter. Add the vanilla and stir to combine until an even, soft dough forms.
- Press the dough into a 9-inch glass baking dish (or other dish) lined with parchment paper if desired. Allow to cool for at least 1 hour or until firm enough to cut into squares - it sets up pretty quickly in the refrigerator.
- Melt the chocolate chips and drizzle over the fudge. Sprinkle with sea salt.

- Combine the butter and peanut butter in a 4-quart microwave-safe bowl and cover with plastic wrap. Microwave for 2 minutes on high. Stir and microwave on high for 2 more minutes. (Use caution when removing this mixture from the microwave, it will be very hot.) Add the vanilla and powdered sugar to the peanut butter mixture and stir to combine with a wooden spoon. The mixture will become hard to stir and lose its sheen. Spread into a buttered 8 by 8-inch pan lined with parchment paper. Fold the excess parchment paper so it covers the surface of the fudge and refrigerate until cool, about 2 hours. Cut into 1-inch pieces and store in an airtight container at room temperature for up to a week.

- Line an 8x8 baking pan with parchment paper or foil. Note: you can use a 9x9 pan, or even a loaf pan.
- Using a heavy bottomed saucepan melt the butter and peanut butter together over medium heat. Stir constantly to get the mixture well combined.
- Turn the heat down to low and stir in the vanilla and salt.
- Fold in the sugar with a silicone spatula or spoon. Make sure to get all the sugar incorporated and the fudge nice and smooth. The low heat will help this process.
- When the fudge is smooth transfer to your prepared pan and spread out evenly with an offset spatula.
- Let chill for at least 2 hours before slicing into small squares. If you have lined your pan with parchment paper or foil you can gently lift it out for neater slicing.
- Fudge can be stored at room temperature, or in the refrigerator. It also freezes well.

- Mix brown and white sugar with the milk in large pot; bring mixture to a boil. Stir in peanut butter, reduce heat to medium, and bring the mixture back to boil (stirring constantly). Remove the pot from heat when a drop of the mixture forms a ball in a glass of cold water.

PEANUT BUTTER FUDGE
I have made every kind of Peanut Butter fudge there is but here is a simple, but tasty, recipe that my family and I really enjoy. I found this recipe on the internet several years ago when I was craving some peanut butter fudge and only had the basic ingredients. You may want to use a candy thermometer, but I just boil the mixture for about 9 or 10 min. and drop a little of the mixture in a cup of cold water until there is a soft ball and it always has come out good for me. I also use butter instead of margarine and if I don't have milk I use Evaporated milk. I also use Peter Pan Peanut Butter--a family favorite. The recipe states if you want Chocolate Fudge to "add One Heaping Teaspoon of cocoa to the top four ingredients before cooking." I haven't tried the chocolate fudge version yet.
