PEANUT BUTTER-PAPRIKA COOKIES

Peanut Butter-Paprika Cookies image

This recipe comes from Sister Pie, a Detroit bakery specializing in pies and baked goods, like blueberry plum balsamic pie, buttered corn scones and rhubarb blondies, that are "comforting with a side of adventure." These oversize cookies embody that ethos. They're tender, sweet and peanut buttery, but gussied up with a sprinkle of flaky sea salt and a hint of smoked paprika.

Provided by Margaux Laskey

Categories     cookies and bars, dessert

Time 1h

Yield 20 cookies

Number Of Ingredients 14

2 cups/290 grams all-purpose flour
1/3 cup/50 grams whole wheat flour
1 1/2 teaspoons baking powder
1 teaspoon baking soda
1 1/2 teaspoons kosher salt
3 teaspoons smoked paprika
1 cup/225 grams unsalted butter (2 sticks), at room temperature
1 1/4 cups/310 grams creamy peanut butter
3/4 cup/150 grams packed light brown sugar
3/4 cup/150 grams granulated sugar, plus 1 tablespoon
2 large eggs, at room temperature
2 teaspoons vanilla extract
1 1/2 teaspoons flaky sea salt
1 tablespoon turbinado sugar

Steps:

  • Mix the dough: In a medium bowl, gently whisk together the all-purpose and whole wheat flours, baking powder, baking soda, kosher salt and 1/2 teaspoon of the smoked paprika. Set aside.
  • Place the butter, peanut butter and both sugars in the bowl of a stand mixer fitted with the paddle attachment and cream on medium speed until homogeneous and paste-like, about 4 minutes. You will see the mixture change from grainy and wet to fluffy and voluminous.
  • Add the eggs and vanilla and mix until fully combined, about 2 minutes. Scrape the bowl and paddle thoroughly using a silicone spatula, to fully incorporate all ingredients.
  • Add the flour mixture slowly and mix on low speed until the flour is completely incorporated. If you notice any flour at the bottom of the bowl, use your spatula to finish the mixing process.
  • Scrape the cookie dough from the bowl onto a big sheet of plastic wrap. Wrap the dough tightly and transfer to your refrigerator, where it should rest for at least 24 hours and up to 3 days. (Alternatively, you may freeze the dough for up to 3 months, then let it thaw on the kitchen counter overnight before proceeding with the recipe.)
  • Take the dough out of the refrigerator 2 to 3 hours before you plan to bake the cookies. Once it's quite soft, heat your oven to 350 degrees. Line two baking sheets with parchment paper. Use a 1/4 cup measure to portion the dough into 2-inch balls. Place on the baking sheets. Slightly flatten each cookie to a 1/2-inch thickness with your palm, then use a fork to do that classic hashtag design on top.
  • In a small bowl, combine the remaining 2 1/2 teaspoons paprika, sea salt, 1 tablespoon granulated sugar and 1 tablespoon turbinado sugar. Top each cookie with about 1/2 teaspoon of the paprika mixture.
  • Transfer the baking sheets to the oven and bake for 16 to 18 minutes, rotating halfway through until the edges are beginning to turn golden brown and the tops don't look wet at all.
  • Remove the baking sheets from the oven and allow to cool slightly, about 10 minutes, before transferring the cookies to wire racks to cool. Store in an airtight container for up to 5 days.

PEANUT BUTTER COOKIES

Peanut Butter Cookies image

The hash mark may be one of the most prevalent symbols in modern life, but it's been the "mark" of peanut butter cookies for more than eighty years, and for good reason. Pressing a hash mark into each cookie ensures this dense dough will flatten out and bake evenly. While using this kitchen-tested recipe ensures your peanut butter cookies will turn out perfectly. It's been in Betty's back pocket for quite some time, and you can bet this recipe isn't going anywhere soon. Home cooks from all over have claimed this to be the best peanut butter cookie they've ever made-and we certainly agree! Soft and chewy with the perfect salty-sweet balance, these tender cookies will disappear at every potluck, party or cookie exchange. For an added bit of sparkle, roll your cookies in coarse sparkling sugar just before baking.

PERFECT PEANUT BUTTER COOKIES

Perfect Peanut Butter Cookies image

When peanut butter cookies are requested in my home, this is the recipe I turn to. It's one of my favourites!

Provided by Lennie

Categories     Drop Cookies

Time 23m

Yield 50 cookies

Number Of Ingredients 9

1/2 cup butter, softened
1/2 cup packed brown sugar
1/2 cup white sugar
1 large egg
1 cup smooth peanut butter (not crunchy, I think crunchy ruins the texture)
1/2 teaspoon pure vanilla extract
1/2 teaspoon salt
1/2 teaspoon baking soda
1 3/4 cups all-purpose flour

Steps:

  • Preheat oven to 375°F; have ungreased shiny cookie sheets ready.
  • In a large mixing bowl, with electric mixer, cream together the butter and sugars; next, beat in egg, peanut butter and vanilla.
  • In a smaller bowl, sift together salt, baking soda and flour (I do this through a sieve, not with a sifter).
  • With a wooden spoon, stir flour mixture into peanut butter mixture until a dough is formed.
  • If desired, you could stir in about 1/2 cup (or more) of chocolate chips now; I usually don't (even though I'm a chocoholic) as I often just want a pure peanut butter cookie with nothing else in it, not even peanut bits.
  • Stash dough in fridge while you clean up the dishes; this step isn't absolutely necessary but the fridge slightly firms up the dough, making it easier to work with.
  • Drop by heaping teaspoons onto cookie sheets and press down, criss-cross style, with a fork-- the classic peanut butter cookie look.
  • If fork sticks to cookies too much as you press down, lightly flour the fork.
  • Bake in preheated oven for 7 to 9 minutes, or until edges are slightly darkened (I like to cook these at 7-1/2 minutes).
  • Do not worry if they don't look done; cookies firm up as they cool and if you want chewier cookies it is very important not to overbake them.
  • Add an extra minute if you like crispier cookies.
  • Remove cookies from sheets after letting them rest on sheets for one minute, then let cooked cookies cool on racks.
  • Store cookies in a tin or in cookie jar (airtight containers are best).
  • I use a one-inch scoop to make the cookies; the approximate yield I get is 4-1/2 dozen cookies.

PAPRIKA PEANUT BUTTER COOKIES RECIPES
When the peanut butter ran out, similarly creamy white miso stepped in. The other ingredients were tweaked to offset the miso’s savory character, and what came out of the oven was salty and sweet, crunchy and chewy.
