COFFEE TOFFEE YUM YUMS
This recipe just came to me one night. The coffee adds so much flavor! Coffee and chocolate go together very well! If you are not a coffee fan, don't be afraid to try. However, if you still do not want to try then simply do not add.

Steps:
- Preheat oven to 350°F.
- Cream butter with the brown sugar and sugar in a large mixing bowl. Add 1 egg and beat, add last egg and beat. Add vanilla and stir until incorporated.
- Dissolve coffee in the water by stirring in a small bowl. Add this mixture to the large bowl.
- Add 1 cup flour, 1/4 cup cocoa powder, and 1 teaspoon baking soda. Stir by hand with wooden spoon until well mixed. Add enough remaining flour until a thick dough is formed.
- Grease baking sheets. Drop dough onto sheets by rounded teaspoon. Bake until crackers in the center of the cookie form, and edges turn light brown. About 10-12 minutes. Remove from oven and let sit about 2 minutes, transfer to wire rack to cool completely.

PEACH YUM YUMS
This is a really sweet and good dessert to have both inside or outside on the grill or camping. Hope you enjoy this one.

Steps:
- Take one piece of foil with shiny side out.
- In the middle, place peach slices or peach half and mini marshmallows (if using peach halves, put marshmallows in the middle where pit was) and close by folding the foil tightly.
- Place in the coals of a campfire, grill, or oven depending on heat source, for about 5-8 minutes, just enough time to have the peach soften up and the marshmallow melt.
- Remove from heat, open and enjoy.
- Yum, yum, yum!

I found this recipe in my mom's old recipe box, and thought it sounded interesting. This one wasn't dated, but many of the other recipes in the box are from the 1960s. The quantities are a little vague, but I think it should be fairly easy to figure out!

PEANUT HONEY YUM-YUMS
I found these because I gave up chocolate for Lent this year and I wanted something sweet. I made this without the chocolate, and added chocolate at the end to half the mixture for my wife. We both loved the results. The recipe says 4 dozen, but I make them bigger so I get about 2 dozen.

- Preheat oven to 350 degrees.
- Place rolled oats in a 15x10x1 inch baking pan.
- Toast oats in oven for 15 minutes; Remove and cool.
- In a medium saucepan, combine peanut butter, chocolate, honey, butter or margerine, and salt.
- Heat over low heat, stirring occasionally, till mixture is smooth and creamy.
- Add toasted oats and mix thoroughly.
- Drop by teaspoonfulls onto waxed paper; chill until firm.
- Store in refridgerator, covered tightly.
