Steps:
- Peel the pear, cut in half and core.
- Add the cider, orange juice, star anise, cinnamon stick and vanilla extract to a small to medium pan.
- Bring to boil, then reduce to a simmer.
- Add the pear halves and poach at a low-medium heat for 10-20 minutes (until you can stick a knife through with no resistance).
- Remove the pear halves when cooked.
- Reduce the rest of the mixture over a medium heat until it is a thicker glaze.
- Serve the pears with a dollop of greek yogurt, a handful of toasted almonds and the glaze.
- Enjoy!

CIDER POACHED PEARS
This is an excellent dessert that is sure to impress your friends or family. The pears hold up really well in the slow cooker, and by poaching them with cider, the complementary spices, like cinnamon and nutmeg, are infused into each pear. Not only do the pears taste amazing, but they look as good as they taste.

Steps:
- Combine the cider, sugar, orange juice, orange zest, cloves, cinnamon stick and vanilla bean in a saucepan over medium-high heat. Bring to a simmer and cook just until the sugar dissolves, 2 minutes. Transfer the mixture to the slow cooker. Add the pears, and then cover with a lid and cook on low2 hours, turning the pears halfway through.
- Remove the pears using a slotted spoon and transfer to serving plates or a shallow dish. Carefully strain the poaching liquid back into the saucepan and reduce the liquid by half until thickened and syrupy. Pour the reduced sauce over the pears and chill in the refrigerator an additional 2 hours or up to 2 days.

- Bring 1/2 cup water, the sugar, and fennel and coriander seeds to a simmer in a small saucepan over high heat. Reduce the heat to medium low; cook until the sugar dissolves, about 5 minutes. Let cool, then transfer to an airtight container and refrigerate overnight.
- A few hours before serving, strain the syrup into a pitcher. Add the cranberry juice, brandy and pears. Refrigerate until ready to serve.
- Add the sparkling cider to the pitcher and stir. Serve over ice.

- Push cloves into the orange rind. Cut orange into quarters and place in a large slow cooker.
- Cut pears into quarters, leaving peels and cores. Place in the slow cooker, along with cranberries, cinnamon sticks, and whole nutmeg. Pour in water, cover, and cook on Low for 4 hours.
- Mash all ingredients with a whisk or potato masher. Continue to cook for 1 more hour.
- Strain all solids with a fine mesh sieve. Rinse out the slow cooker.
- Return the strained cider to the slow cooker. Pour in maple syrup and stir to combine. Add orange and pear slices, cranberries, and cinnamon sticks for garnish.

- Start by dissolving the packet of brewing yeast in 1/4 cup of plain room temperature water. Allow the yeast to bloom for at least 5 minutes before proceeding. Adding them to a sugar solution before they've rehydrated can shock them.
- Dissolve all other brewing additives in the pear juice. All additives are optional, but they'll result in a better tasting cider.
- Pour the pear cider into a fermentation vessel and add the yeast/water solution. Allow the mixture to ferment for 2-3 days, either covered with a towel or with a water lock attached. If using a water lock at this stage, make sure to clean it out every 6-12 hours as needed.
- After the initial violent fermentation, attach a water lock if one is not on already and allow the pear cider to ferment for 2-3 weeks in primary.
