Pear and Pomegranate Salad image

A fall and winter favorite--I am always eager for pomegranates to come in season so I can make this again. I make my own pomegranate juice by pressing the seeds against a metal sieve.

3 cups green leaf lettuce, rinsed and torn
1 Bartlett or Anjou pear
⅓ cup pomegranate seeds
1 tablespoon vegetable oil
2 tablespoons pomegranate juice
1 tablespoon lemon juice
1 teaspoon prepared Dijon-style mustard
½ tablespoon honey
ground black pepper to taste

Steps:

  • Divide the lettuce between two bowls. Halve and core the pear, then cut each half in slices. Divide the pear slices and pomegranate seeds among the two bowls and mix gently.
  • Combine the vegetable oil, pomegranate juice, lemon juice, mustard, honey, and pepper in a saucepan. Bring to a boil over high heat; reduce heat and simmer, stirring frequently, until the dressing thickens slightly, about 2 minutes. Pour the warm dressing over the salads and serve.

2 tablespoons balsamic vinegar
1/2 teaspoon Dijon mustard

1/4 cup canola or vegetable oil
1/3 cup pecan halves
8 cups torn mixed salad greens
3 medium pears, peeled, cut into wedges
1/3 cup organic sweetened dried cranberries

Steps:

  • In small bowl, mix all vinaigrette ingredients except oil with wire whisk. Beat in oil until blended.
  • Place pecans in 1-cup glass measuring cup. Microwave on High 2 minutes to 2 minutes 30 seconds, stirring every 30 seconds, until browned.
  • Divide salad greens among 6 serving plates. Arrange pear wedges on greens; sprinkle with pecans and cranberries. Drizzle vinaigrette over salads.

1 teaspoon McCormick® Cinnamon, Ground
1 teaspoon McCormick® Ginger, Ground
1/8 teaspoon Sea Salt from McCormick® Sea Salt Grinder
1 package (6 ounces) field greens
2 ripe pears, cored and thinly sliced
1/3 cup dried cranberries
1/3 cup toasted walnut pieces
6 tablespoons crumbled blue cheese

Steps:

  • For the Vinaigrette, mix all ingredients in small bowl with wire whisk until well blended. Just before serving, toss greens with pears, cranberries, walnuts and blue cheese in large bowl. (Or divide among individual serving plates.) Drizzle with Pomegranate Vinaigrette. Toss lightly to serve.

This is a great holiday salad. It is delicious and looks beautiful served on a platter or big bowl. Pomegranate seeds are so good. I got this recipe years ago from Sunset magazine.

1/4 cup pomegranate juice (or 3/4 cup pomegranate juice boiled until reduced to 1/4 cup)
1/4 cup olive oil or 1/4 cup salad oil
1/4 cup orange juice
3 tablespoons balsamic vinegar or 3 tablespoons red wine vinegar
1/2 teaspoon lemon zest
3/4 cup toasted walnut halves
8 ounces mixed greens
1/2 cup crumbled blue cheese
1/2 cup pomegranate seeds
salt and pepper

Steps:

  • Whisk together pomegranate juice concentrate, oil, orange juice, vinegar, lemon peel and salt and pepper.
  • Gently mix salad greens with vinaigrette.
  • Divide greens on 6 to 8 salad plates or large platter.
  • Sprinkle with toasted nuts, bleu cheese and pomegranate seeds.
  • Enjoy!

3 cups salad greens
1 carrot, shredded into strips
1 pomegranate
1 tablespoon honey
1 tablespoon Dijon mustard (the kind with lots of seeds in it)
2 garlic cloves, finely minced
1/2 teaspoon salt
1/2 teaspoon cracked black pepper
1 teaspoon dark brown sugar
1/4 cup white vinegar
1/4 cup balsamic vinegar
3/4 cup olive oil

Steps:

  • Place the salad greens and carrot strips in the salad bowl.
  • Cut open the pomegranate, collect the seeds and toss in with the salad greens.
  • Make the dressing by tossing honey, mustard, garlic, salt, pepper and brown sugar into a food processor. Give it a whirl.
  • Add the vinegars and give it another whirl.
  • While the stuff is zhuzzing along in there, add the olive oil slowly through the top chute.
  • Dress the salad, experience intense yumminess.
