SIMPLE BAKED PEARS WITH MAPLE SYRUP
These Simple Baked Pears are a quick, easy, and healthy dessert with very little added sugar!

Steps:
- Preheat the oven to 450 degrees.
- Peel the pears and cut them in half length-wise. Carefully scoop out the core and seeds from each half.
- In a cast iron or other oven proof skillet, melt the butter over medium heat.
- Place the pears in the skillet, cut side down, and cook them until they are starting to get browned, about 2-3 minutes.
- Transfer the skillet to the oven and bake for 15 minutes. Using a fork, carefully flip pears to cut side up and continue to bake another 10 minutes.
- Remove the pears from the oven and carefully transfer them to a platter.
- Put the skillet back on the stove over low heat, and whisk in the maple syrup with the butter and juices in the skillet.
- Spoon the maple syrup sauce over the pears. If desired, sprinkle with chopped pecans. Enjoy!

QUICK AND EASY CHUNKY MICROWAVE MAPLE CINNAMON APPLE/PEAR SAUCE
Maple syrup adds a nice flavor to the apples and pears. I have actually used a variety of different apples, depending on what I had on hand, with the same great results. The apple/pear sauce can be refrigerated for up to 2 weeks or frozen for up to 6 months.

Steps:
- Combine Cortland apples, Golden Delicious apples, and Bartlett pears together in a large, microwave-safe bowl. Add water, cinnamon, and nutmeg to the apple-pear mixture and toss to coat.
- Cover bowl tightly with plastic wrap and cut a 1-inch slot in the center of the plastic wrap to allow steam to escape.
- Cook apple mixture in the microwave on high for 10 minutes. Carefully remove and discard plastic wrap. Stir apple mixture. Cook in the microwave on high until fruit is hot and tender, another 6 minutes.
- Stir maple syrup into fruit mixture. Cool completely before refrigerating.

PEARS WITH MAPLE SYRUP, PECANS AND CRANBERRIES - MICROWAVE
A delicious low fat and EASY dessert to impress! A wonderful mix of ingredients that is great served with home-made ice cream or creme fraiche. These pears cook quite happily in the microwave - as well as the more conventional baking or stove top method too. A recipe I devised for our Bed & Brekafast last Autumn, after a huge harvest of pears from our garden and whilst also trying to find a use for numerous opened packets of dried fruits and nuts!!

Steps:
- Microwave method:.
- Place the peeled, cored and halved pears into a microwaveable dish. Place them cut side down.
- Scatter the dried cranberries over the pears.
- Pour 2 tablespoons of the maple syrup over the pears & cranberries & cover with microwaveable cling film.
- Microwave on High for 3 minutes until softened, stirring half way through.
- Uncover and leave to cool off slightly for a few minutes.
- Stir the pecan nuts through the syrup.
- Spoon into serving dishes making sure EVERYONE gets some nutty syrup & cranberries! (1 pear - 2 halves per person!).
- Drizzle over the remaining maple syrup.
- Serve with ice cream or creme fraiche. Yoghurt is nice with this dessert too.
- Oven baking method:.
- Pre-heat oven to 200 C or 400°F.
- Follow recipe as above, making sure the dish is oven proof!
- Bake for about 45 minutes or until pears are soft but still holding their shape.
- Mix in nuts as before and serve as before.
- (These can also be cooked in a deep frying pan, skillet or wok on top of the stove with a lid placed over them; Bring them to a slow boil and then simmer gently for about 30 - 45 minutes. Serve as before.).

- Mix schnapps, white sugar, 1/2 teaspoon cinnamon, nutmeg, and ginger together in a large bowl until sugar dissolves. Add pears and cranberries and toss until fruit is completely coated. Cover and refrigerate for at least 1 hour.
- Preheat the oven to 375 degrees F (190 degrees C). Lightly grease a 9-inch square baking dish.
- Combine oats, flour, brown sugar, cold butter, remaining 1/2 teaspoon cinnamon, and salt in a food processor. Pulse until mixture forms large crumbles. Fold in white chocolate chips.
- Pour chilled fruit mixture into the prepared baking dish, leaving approximately 3/4 inch at the top. Sprinkle crumb mixture over the fruit, covering completely.

- Peel and halve the pears and scoop out the core with a teaspoon. Lay the halves in a shallow microwaveable dish, cut side down, along with the cranberries. Pour 2 tbsp of the maple syrup over and cover with cling film. Microwave on High for 3 mins until softened, stirring halfway through. Uncover and leave to cool for a few mins. Stir the pecan nuts through the syrup.
- Spoon into serving dishes, drizzle extra maple syrup, if you like, and serve with yogurt.

ROASTED PEARS WITH FRESH CRANBERRIES
Oven baked pears with slightly sweet/spiced pink syrup and whole cranberries. I found this recipe years ago in a news paper and clipped it out. Took me a while to make it, but once I did, I knew it was a keeper. I then washed the jeans I was wearing when cooking and melted the news paper. I did a search on the net, but could not find it there. So I had to quickly write down the recipe before I forgot it. So hear it is for me to always have. Hope you enjoy it as well.

Steps:
- 1. Heat over to 400F, use a baking dish with 1" sides.
- 2. Lay peeled, split and cored half pears in baking dish cut side down.
- 3. Mix together 1 cup water, vinegar, salt, spice and sugar. Pour over pears and drop in pats of butter.
- 4. Bake for 15mins basting the pears once at 7 minutes time.
- 5. At 15 minutes cooking time, add 2 tablespoons water and cranberries to baking dish, bast pears again.
- 6. Bake for another 10 minutes, then bast pears. Check with fork to see if pears are tender.
- 7. If pears are tender then they are done, if not cook another 10-15 minutes.
- 8. You can add more water if needed. I also add more then 3/4 cup cranberries.
- 9. This is very good on it own or with vanilla ice cream.
