16 ounces cream cheese (softened)
1 ½ tablespoon taco seasoning
2 tablespoons fresh cilantro (finely minced)
½ cup pecans (chopped)

Steps:

  • Add Mexican cheese to a food processor and pulse until crumbly.
  • Add the Mexican cheese, cream cheese, and taco seasoning to a large bowl and beat with a hand mixer until fully combined. Scrape down the sides of the bowl as needed.
  • Cover the mixture and chill in the refrigerator for at least 2 hours.
  • Mix together the minced cilantro and the chopped pecans in a medium bowl. Form the cheese mixture into a ball and roll it in the nut mixture until evenly coated. Plate and serve with tortilla chips or crackers.

1/2 Cup Pecans
9 oz Cream Cheese
1/4 Cup Sour Cream
1 Cup Cheddar Cheese
1/2 tsp Garlic Powder
1 Cup Dried Cranberries
2 Tbsp Chives (chopped)

Steps:

  • Roughly chop the pecans. We want smaller and larger pieces to create texture. Place onto a baking sheet and toast in a 200C / 400F oven for 5 minutes or until fragrant. Remove from the oven and transfer to a small bowl to cool.
  • In a medium sized mixing bowl add the cream cheese. Mix with a wooden spoon for a minute or two to soften. Add the sour cream, cheddar cheese and garlic powder. Fold together until combined. Set the bowl to the side.
  • Add the cranberries to the bowl with the pecans and toss together. Pour half of the mixture into the bowl with the cheese and save the rest for later. Fold together until combined.
  • Pour the cheeseball mixture out onto a length of plastic wrap or cooking paper. Bring up the sides to tightly wrap the mixture and shape into a ball. Place into the fridge for at least 4 hours or overnight to set.
  • Remove the cheeseball from the fridge and press into the correct shape. Pour the remaining cranberry and pecan mixture onto a plate and add the chives. Unwrap the cheeseball and roll around on the plate, pressing the coating in.
  • Serve now or keep in the fridge until you are ready to serve.

3/4 tsp garlic powder

1/2 cup pepper jack cheese (, finely grated (divided))

Steps:

  • To a large mixing bowl, add cream cheese, sour cream (if using), ranch seasoning, garlic powder, minced onion, salt and pepper. Stir until well combined with a rubber spatula.

2 (8-ounce) packages reduced-fat cream cheese (at room temperature)
1/3 cup strawberry preserves
1/2 teaspoon garlic powder
1/4 teaspoon kosher salt
6-10 dashes hot sauce
1 cup freshly shredded extra-sharp cheddar cheese
1 cup raw pecan pieces
2 tablespoons chopped fresh parsley
Crackers or baguette slices ((I like buttery Ritz-type crackers or town house crackers))

Steps:

  • In the bowl of a stand mixer fitted with the paddle attachment, beat the cream cheese and preserves until smooth and creamy. Scrape down the bowl, then beat in the garlic powder, salt, and hot sauce, and then the cheddar cheese.
  • Lay a large sheet of plastic wrap on the counter. Scrape the cheese mixture into the center in as circle-like of a mound as you can. It will not be a perfect ball at this point.   • Toast the pecans: Preheat the oven to 350 degrees and spread the pecans onto an ungreased baking sheet. Transfer to a cutting board and chop into small bits. Let cool completely to room temperature.

A pie dish works well too.) Add the parsley and lightly mix with your fingers to combine. Unwrap the cheese ball and place it on the plate with the parsley and pecans, coating well. The cheese ball won't roll like a true ball. Gently lift and turn it, patting the pecans and parsley all over the outside. Carefully lift it onto a serving plate. Serve with crackers or baguette slices.

  • Layout a large piece of plastic wrap on the counter. Spoon cheese mixture onto plastic wrap forming a ball (as best you can). Bring up sides of plastic wrap to form a ball shape. Make sure the cheese is completely covered. Use your hands to shape the mixture into a ball. Put in the refrigerator and chill cheese ball for at least two hours.
  • Take Cheese Ball out of the refrigerator and remove the plastic wrap. Place the cheese ball on a plate and cover it with chopped pecans or a combination pecans and dried cranberries. Use a spoon or your fingers to press the pecans onto the cheese ball. You can try rolling the cheese ball in the chopped pecans, but it is sometimes hard to roll it and you don't want the cheese ball to lose its shape.
  • Store in the refrigerator until it is time to serve.
