GRANDMA'S PEACH FRENCH TOAST



Grandma's Peach French Toast image

My mother gave me this to use at my mother group. Everyone loved it so I decided to post it and share the great blend of peaches and French toast. Smells great when cooking.

1 cup packed brown sugar
½ cup butter
2 tablespoons water
1 (29 ounce) can sliced peaches, drained
12 (3/4 inch thick) slices day-old French bread
5 eggs
1 tablespoon vanilla extract
1 pinch ground cinnamon, or to taste

Steps:

  • In a saucepan, stir together the brown sugar, butter and water. Bring to a boil, then reduce heat to low, and simmer for 10 minutes, stirring frequently.
  • Pour the brown sugar mixture into a 9x13 inch baking dish, and tilt the dish to cover the entire bottom. Place peaches in a layer over the sugar coating, then top with slices of French bread. In a medium bowl, whisk together the eggs and vanilla. Slowly pour over the bread slices to coat evenly. Sprinkle cinnamon over the top. Cover and refrigerate for 8 hours or overnight.
  • Remove the dish from the refrigerator about 30 minutes before baking to come to room temperature. Preheat the oven to 350 degrees F (175 degrees C).
  • Bake for 25 to 30 minutes in the preheated oven, or until the bread is golden brown. Spoon out portions to serve.

1/4 cup creamy peanut butter
1/4 cup grape jelly or jelly of your choice
8 slices sandwich bread
2 large eggs
1/4 cup 2% milk
2 tablespoons butter
Sliced fresh strawberries and chopped salted peanuts, optional
Confectioners' sugar or maple syrup

Steps:

  • Spread peanut butter and jelly over four slices of bread. Top with remaining bread. In a shallow bowl, whisk eggs and milk until blended., On a griddle, melt butter over medium heat. Dip both sides of sandwiches in egg mixture. Place on griddle; toast 2-3 minutes on each side or until golden brown. If desired, top with strawberries and peanuts. Dust with confectioners' sugar or serve with syrup.

Steps:

  • 1. Cook beef in 4-quart Dutch oven over medium heat about 10 minutes, stirring occasionally, until brown drain.2. Stir remaining ingredients except cheese into beef. Heat to boiling, reduce heat. Having lunch problems? You're worries are over! I am the pickiest kid in America about lunches. This recipe satisfies my mom and me. However my friends weren't as happy, a sandwich just doesn't compare to this dish... Double the sauce ingredients to have lots to go around!

1 cup canned reduced-sodium chicken broth
4 teaspoons cornstarch
1 cup plum sauce (or honey, apricot jam, hot pepper jelly)
6 tablespoons soy sauce
2 tablespoons dry sherry
8 garlic cloves, minced
4 tablespoons minced fresh ginger
5 teaspoons hoisin sauce
4 tablespoons vegetable oil
6 skinless chicken breasts, sliced thin
1 -2 teaspoon soy sauce

Steps:

  • Marinate chicken slices with 1-2 teaspoons soy sauce, while assembling sauce ingredients in blender or by hand.
  • Heat oil in large frying pan or wok over high heat.
  • Saute chicken about 2 minutes or until cooked.
  • Add sauce and bring to boil.
  • Stir until thickens (just a couple of minutes).
  • Serve with Steamed white rice and garnish with chopped green onions.

½ cup whole milk
½ cup all-purpose flour
3 large eggs
3 tablespoons maple syrup
2 teaspoons vanilla extract
¾ teaspoon ground cinnamon
¼ teaspoon ground nutmeg
¼ teaspoon salt
3 tablespoons unsalted butter

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Combine milk, flour, eggs, maple syrup, vanilla, cinnamon, nutmeg, and salt in a blender. Blend until batter is smooth and free of lumps, 1 to 2 minutes.
  • Cut butter into 12 equal pieces; place 1 piece in each cup of a 12-cup standard muffin pan. Place pan into the oven to melt butter, about 1 minute. Remove from the oven and divide pancake batter evenly between the cups.
  • Place muffin pan on a baking sheet to catch spills, and place in the preheated oven. Bake until pancakes are puffed and browned on the edges, 10 to 15 minutes. Remove from the oven and cool in the muffin pan for 2 minutes. Run a knife around the edges and bottoms to loosen and serve immediately.
