SMOTHERED BEEF LIVER



Smothered Beef Liver image

If you like liver, you will LOVE this way of cooking it. Easy and delicious. If you don't like liver, try this and you might learn to LIKE it.

3 tablespoons vegetable oil
1 large onion, sliced
1 pound beef liver
½ cup all-purpose flour
1 teaspoon salt, or to taste
¼ teaspoon ground black pepper, or to taste
1 (8 ounce) can tomato sauce
¼ cup water
½ teaspoon dried oregano

Steps:

  • Heat vegetable oil in a large skillet over medium heat. Saute onions until soft, but not browned. Remove from pan using a slotted spoon, and set aside. Slice the liver into serving size pieces, and remove any membrane.
  • In a shallow dish, mix together the flour, salt and pepper. Dredge the liver in the flour mixture, and place into the hot skillet. Brown the liver quickly on each side. Place reserved onions on top of liver pieces. Pour the tomato sauce and water over everything in the pan, lifting the liver pieces to let the tomato sauce coat the bottom of the pan.
  • Sprinkle the oregano over everything, and simmer over low heat for 8 to 10 minutes, stirring occasionally. Adjust salt and pepper to taste. Be careful not to overcook, or liver will be tough. I serve this with mashed potatoes and green beans.

This is a mildly spicy dish from Madhur Jaffrey's Quick and Easy Indian Cooking. I imagine chicken would probably work in this recipe as well. I made this with beef and added some potatoes. Posted for ZWT IV.

1 lb cubed boneless lamb (or pork or stewing beef)
1 small onion, peeled and finely chopped
1 inch piece fresh ginger, peeled and finely chopped
1 medium tomatoes, peeled and finely chopped
1/2 cup cilantro, finely chopped
1 -2 fresh green chile, cut into rings
1/4 teaspoon turmeric
2 teaspoons garam masala
1 teaspoon cumin
1/4 cup plain yogurt
1 tablespoon tomato paste
3/4 teaspoon salt (or to taste)
1/2 cup water
3 tablespoons oil
4 garlic cloves, peeled and finely chopped
pepper

Steps:

  • Put all the ingredients except the oil, garlic and black pepper into a bowl and mix well.
  • Put the oil in a large deep skillet and heat over medium-high heat. When oil is hot, put in garlic, stir till pieces turn medium brown.
  • Put in the seasoned meat and stir once or twice. Turn heat to medium.
  • Add one half cup of water. Stir and cover the pan and simmer for 1 to 1 1/2 hours, till meat is tender and sauce is thickened, adding more liquid if necessary. Stir occasionally.
  • Sprinkle in pepper, adjust seasonings, stir and serve.

1/3 cup wine vinegar
1/4 cup ketchup
2 tablespoons cooking oil
2 tablespoons soy sauce
1 tablespoon Worcestershire sauce
1/2 teaspoon salt
1/4 teaspoon pepper
1/3 teaspoon garlic salt
1/2 teaspoon dry mustard

Steps:

  • Combine all ingredients.
  • Pour marinade over the meat and marinate for 2-3 hours at room temperature or overnight in the refrigerator.

2 tablespoons olive oil
1 onion, chopped
1 green bell pepper, chopped
1 clove garlic, minced
1 pound ground pork
1 tablespoon Creole seasoning (such as Tony Cachere's®)
salt to taste
1 head cabbage, cut into 2-inch squares
½ (10 ounce) can diced tomatoes with green chile peppers (such as RO*TEL®), or more to taste

Steps:

  • Heat oil in a large pot over medium heat. Add onion, green pepper, and garlic. Cook and stir until browned, about 5 minutes. Add pork, Creole seasoning, and salt. Cook until pork is browned, 5 to 7 minutes. Do not drain.
  • Arrange cabbage over pork; cover with diced tomatoes. Add lid and reduce heat to medium. Cook, without stirring, until cabbage is wilted, 15 to 20 minutes. Stir and taste for seasoning.
