8 large potatoes
2 bay leaves
1/4 cup butter, melted
1/2 teaspoon salt
1/4 teaspoon pepper
2 cups sour cream
1 can (10-3/4 ounces) condensed cream of chicken soup, undiluted
2 cups shredded cheddar cheese, divided
1 jar (2 ounces) diced pimientos, drained
4 green onions, chopped
1/2 cup crushed cornflakes

Steps:

  • Place potatoes and bay leaves in a Dutch oven or large kettle; cover with water. Bring to a boil. Reduce heat; cover and simmer for 15-20 minutes or until tender. Remove from the heat; cool to room temperature. Place in the freezer (still covered by the cooking water) for 1 hour., Drain potatoes; peel and grate. Place in a greased 13x9-in. baking dish. Drizzle with butter. Sprinkle with salt and pepper; toss to coat. , In a large bowl, combine the sour cream, soup, 1 cup cheese, pimientos and onion; spread over potatoes. Sprinkle with the remaining cheese; top with cornflakes (dish will be full). , Bake, uncovered, at 350° for 45-50 minutes or until bubbly.

5 pounds Yukon Gold potatoes, peeled and cubed
2 medium sweet potatoes, peeled and cubed
5 large carrots, cut into 2-inch pieces
3 garlic cloves, minced
1 teaspoon dried tarragon
1 cup shredded cheddar cheese, divided
1/2 cup whole milk
2 large eggs
2 tablespoons cider vinegar
1 tablespoon butter
1 teaspoon salt
1 teaspoon dried parsley flakes
1/2 to 1 teaspoon pepper

Steps:

  • Place the potatoes, carrots, garlic and tarragon in a Dutch oven; cover with water. Bring to a boil. Reduce heat; cover and cook for 15-20 minutes or until tender. Drain., In a large bowl, mash the vegetables. Stir in 1/2 cup cheese, milk, eggs, vinegar, butter, salt, parsley and pepper until blended. , Transfer to a greased 13x9-in. baking dish; sprinkle with remaining cheese. Bake, uncovered, at 325° for 25-30 minutes or until a thermometer reads 160°.

2 tablespoons butter
2 onions, chopped
2 carrots, diced
1 stalk celery, diced
2 cloves garlic, minced
1 cup cauliflower florets
1 cup diced zucchini
6 large potatoes, cubed
3 cups vegetable broth
1 cup chopped kale, or to taste
¼ cup evaporated milk
1 bay leaf
½ cup corn kernels
1 teaspoon smoked paprika
1 teaspoon chopped fresh dill
salt and ground black pepper to taste
½ cup shredded Cheddar cheese, or to taste
½ cup chopped fresh parsley, or to taste

Steps:

  • Melt butter in a stock pot over medium-low heat. Cook and stir onions, carrots, celery, and garlic in hot butter until the onions are translucent, 5 to 10 minutes. Add cauliflower and zucchini to onion mixture; cook until just warmed, 1 to 2 minutes.
  • Stir potatoes and broth into vegetable mixture; bring to a boil. Reduce heat and simmer until potatoes are just tender, 15 to 20 minutes. Add kale to soup; cook until kale is slightly wilted, 2 to 3 minutes.
  • Pour milk into a blender and ladle about 2/3 the soup into blender, working in batches if needed. Cover and hold lid down; pulse a few times before leaving on to blend until smooth, 1 to 2 minutes.
  • Pour pureed soup back into stock pot; stir in corn, paprika, dill, salt, and pepper. Cook soup until corn is warmed, 2 to 3 minutes. Serve soup garnished with Cheddar cheese and parsley.

1 (32 ounce) package frozen hash brown potatoes
1 (10 3/4 ounce) can condensed cream of chicken soup, undiluted
1 cup sour cream
2 cups cheddar cheese, shredded
1/2 cup butter, melted
1 medium onion, chopped (optional)
2 cups corn flakes, crushed
1/4 cup butter, melted

Steps:

  • Preheat oven to 350 degrees.
  • Spray 13 x 9 pan with cooking spray.
  • Mix all ingredients together except topping ingredients in a large bowl.
  • Spoon into pan.
  • In a small bowl mix topping ingredients.
  • Sprinkle over potato mixture.
  • Bake for 45 minutes or until golden brown and bubbly.

When I was a kid I collected recipes to make for my family some day. I found this recipe years ago and tried it with my mom. It came out very good. Since then I server these with many different meals. You may try this with fresh herbs although I never have.

6 tablespoons butter, melted and divided
1/2 teaspoon salt (optional)
6 tablespoons onions, chopped fine, and divided
1/4 teaspoon dried basil leaves
1/4 teaspoon dried thyme leaves
2 lbs potatoes, peeled
1/4 teaspoon ground black pepper

Steps:

  • Preheat oven to 425 degrees.
  • Wash and peel potatoes then slice very thin.
  • Combine seasonings in a small bowl.
  • Place 2 TBSP melted butter in a 10", oven proof skillet.
  • Be sure to spray well with non stick cooking spray first.
  • Arrange 1/3 of the potatoes in the skillet in a circular pattern.
  • Sprinkle with about 1/4 teaspoons mixed seasonings.
  • Drizzle with about 4 teaspoons melted butter.
  • Sprinkle with 2 TBSP onion.
  • Repeat layers twice.
  • Cover tightly with foil, press layers down.
  • Bake 20 minutes.
  • Uncover and bake 20 minutes more or until potatoes are tender.
  • Remonve from oven and press layers down with a spatula.
  • Let stad for 10 minutes then invert onto serving platter to unmold potatoes.

1 can cream of chicken soup
1 cup sour cream
3 cups shredded cheddar cheese
1 1/2 tsp salt
1/2 cup butter
1 medium onion
2 cups crushed corn flakes

Steps:

  • Heat oven to 350 Chop up onion and saute in fry pan with 1/4 cup of the butter. In large bowl combine soup, sour cream, hash browns, 2 cups of cheese, salt and sauted onions Spray 13 glass pan with cooking spray and pour in potato mixture. Melt remaining 1/4 cup butter in fry pan and stir in the crushed corn flakes. Stir till coated. Spread on top of potato mixture Cover with foil and bake for 35 minutes, remove foil and sprinkle on the remaining cup of cheese. Put back in oven and heat additional 10 minutes

4 large sweet potatoes
1 teaspoon vegetable oil, or as needed
2 tablespoons vegan margarine (such as Earth Balance®), melted
⅓ cup maple syrup
2 large apples - peeled, cored, and thinly sliced
1 pinch cinnamon, or to taste
1 pinch ground cloves, or to taste
½ cup apple juice

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Place sweet potatoes on a baking sheet.
  • Bake in the preheated oven until cooked through but still firm, about 20 minutes.
  • Remove sweet potatoes from oven; leave oven on. Allow sweet potatoes to cool until safe to handle; peel and cut into 1/2-inch slices.
  • Coat a deep 1 1/2-quart baking casserole with oil. Arrange 1/2 the sweet potato slices on the bottom. Drizzle with 1/2 of the melted vegan margarine followed by 1/2 of the maple syrup. Top with apple slices and sprinkle lightly with cinnamon and cloves. Repeat layers. Pour apple juice on top. Cover casserole with a lid or aluminum foil.
  • Bake in the hot oven, covered, for 30 minutes. Remove lid or aluminum foil and bake for 10 minutes more. Serve immediately or cover and keep warm until serving.
