Here's what you need: olive oil, medium onion, red chili flakes, garlic, crushed tomato, salt, penne pasta

2 tablespoons olive oil
½ medium onion, finely diced
½ teaspoon red chili flakes
1 clove garlic, minced
14 oz crushed tomato, 1 can
salt, to taste
½ lb penne pasta

Steps:

  • Heat a large sauté pan over medium heat. Add the olive oil and onion, and cook until the onion is translucent, 8-10 minutes.
  • Add the chile flakes and garlic, and cook for another 2 minutes, until fragrant. Stir in tomatoes and simmer uncovered for 20 minutes.
  • Bring a large pot of salted water to a boil. Cook the pasta according to package instructions. Save ½ cup (120 ml) of pasta water, then drain.
  • Add the drained pasta to the sauce. Stir well, adding a little pasta water if needed to loosen the sauce. Season with salt to taste.
  • Enjoy!

3 cups uncooked penne pasta (12 ounces)
1 medium red tomato, cut into wedges
1 medium yellow tomato, cut into wedges
1/4 cup freshly shredded Parmesan cheese
1/3 cup olive or vegetable oil
1/4 cup chopped fresh basil leaves
3 tablespoons lemon juice
1 teaspoon chopped fresh garlic
1/2 teaspoon salt

Steps:

  • Cook and drain pasta as directed on package. Rinse with cold water; drain. In small bowl beat all Lemon-Basil Vinaigrette ingredients with wire whisk.
  • In large bowl, toss pasta and half of the vinaigrette. Cover and refrigerate 2 hours or until serving.
  • Just before serving, toss pasta, tomatoes and remaining vinaigrette. Serve with cheese.

1 tablespoon olive oil
2 zucchini, chopped
2 yellow squash, chopped
1 red onion, chopped
1 red bell pepper, chopped
1 green bell pepper, chopped
1 tablespoon crushed garlic
1 (28 ounce) can diced tomatoes, drained
1 (28 ounce) jar chunky style pasta sauce
1 (15.25 ounce) can whole kernel corn, drained
1 teaspoon crushed red pepper, or to taste
½ teaspoon black pepper, or to taste
2 cups shredded mozzarella cheese

Steps:

  • Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the penne, and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, about 11 minutes. Drain well in a colander set in the sink, place the pasta in a large bowl, and set aside.
  • While the pasta is cooking, heat the oil in a large skillet over medium heat, and cook and stir the zucchini, squash, onion, red and green peppers, and garlic until the vegetables are tender, for about 10 minutes. Pour in the tomatoes, pasta sauce, and corn, and stir to mix. Sprinkle with red and black pepper to taste, and bring the mixture back to a boil. Simmer for 20 minutes.
  • Preheat an oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking dish.
  • Pour the vegetable mixture into the bowl with the cooked penne pasta, stir to mix well, and spoon into the prepared baking dish. Sprinkle the mozzarella cheese over the top, and bake in the preheated oven until the cheese is melted and the casserole is bubbling, 20 to 30 minutes.

1/4 cup Kalamata olives, pitted and sliced
1/4 cup chopped fresh parsley

1 large garlic clove, peeled and chopped
Salt to taste

Steps:

  • Prep Time: 15 minutes Cook Time: 30 minutes CUT a shallow "X" on the bottom of each tomato. Place tomatoes into boiling water and blanch for 15 seconds. Immediately cool in ice water. This makes a great somwhat lighter tasting dinner or a great lunch. I would recommend that if you want a little kick add a few dashed of red pepper flakes or a little bit of cayenne pepper. otherwise serve with a great salad and some garlic rolls.

1 (28 ounce) can plum tomatoes, peeled, undrained
1/2 cup fresh basil, loosely packed

1 cup part-skim ricotta cheese
1/4 cup parmesan cheese

Steps:

  • Prepare pasta according to package instructions.
  • While pasta is cooking, combine the tomatoes, basil and garlic in a blender or food processor.
  • Blend at low speed until tomatoes are completely pureed.
  • Pour mixture into a large saucepan. Heat to boilng, reduce the heat and simmer 5 minutes.
  • When pasta is done, drain well.
  • Return pasta to cooking pot,add the tomato sauce and heat over low heat until sauce is simmering and the pasta is covered with sauce.
  • Remove pot from heat and stir in ricotta and Parmesan cheese until evenly distributed.
