PENNE PASTA WITH SAUSAGE, PEPPERS & ONIONS



Penne Pasta with Sausage, Peppers & Onions image

This recipe includes how to make your own pasta with an electric pasta machine, but of course you can substitute dried penne instead. Toss with a hearty sauce filled with sausage, onions and peppers for a delicious meal. This is the ultimate comfort food.

1/3 cup semolina flour
1/3 cup all-purpose flour
½ teaspoon salt
¼ cup water
1 teaspoon olive oil
1 pound sausage links or coil
½ onion (large dice)
1 clove garlic (minced)
2 cups tri-colored bell peppers (large dice)
14 ounce canned petite diced tomatoes
8 ounce canned tomato sauce
1 teaspoon Italian seasoning
salt and freshly ground black pepper
2 tablespoons chopped fresh parsley
grated Parmesan cheese for serving

Steps:

  • Place the semolina, all-purpose flour, and salt into the kneading chamber of the pasta machine. Turn the power on and press the "Knead" button. Allow the flour to mix for five seconds and then pour in the water and olive oil. Let the dough knead and come together in the chamber.
  • When the dough has finished kneading, remove the dough from the pasta machine and cover it with plastic wrap. Make a second batch of pasta.
  • When you are ready to make the pasta, attach the penne/macaroni noodle mold onto the extrusion rod. Place the dough in the extrusion box and push it down with the spanner. Press the "Extrusion" button. As the pasta is extruded, sprinkle it with a little flour and toss to coat to prevent it from sticking together. Cut the long noodles into 2-inch pieces diagonally to form penne. If desired, press the cut noodles with the tines of a fork to create the indentations seen in penne rigate. (These indentations hold onto sauce more effectively.)
  • To make the sauce, brown the sausage in a large saucepan over medium heat. Transfer the sausage to a cutting board and set aside. Heat the olive oil in the pan and sauté the onion for 3 minutes or so. Add the garlic and peppers and sauté for an additional 2 minutes. Add the diced tomatoes, tomato sauce, Italian seasoning, salt and black pepper. Cut the rested sausage into 1-inch slices and return them to pan with the sauce. Simmer together for 20 minutes and then season to taste with salt and black pepper. Stir in the chopped parsley.
  • To cook the pasta, bring a pot of salted water to a boil. Reduce the heat and simmer pasta in a slow boil for 2 to 3 minutes. (A full boil will break the pasta apart.) Drain the pasta and toss with the sausage and pepper sauce. Serve with the chopped parsley and Parmesan cheese sprinkled on top.

1 large onion, halved and sliced

1 teaspoon garlic powder

Steps:

  • Cook pasta according to package directions. Meanwhile, in a large skillet, cook the sausage, onion and green pepper in oil over medium heat until sausage is no longer pink and vegetables are tender. Add the tomatoes, tomato sauce and seasonings; heat through., Drain pasta; toss with tomato mixture. Sprinkle with cheese if desired.

1 lb farfalle pasta, or any short pasta
1 tablespoon olive oil
3 hot italian sausages
3 sweet italian sausages
1 red bell pepper, large, diced
1 green bell pepper, large, diced
1 yellow bell pepper, large, diced
½ white onion, sliced
2 cloves garlic, sliced
28 oz diced tomato
1 teaspoon oregano
1 teaspoon salt
1 teaspoon black ground pepper

Steps:

  • Bring a large pot of water to a rolling boil, add a generous amount of salt, and cook pasta 2 minutes less than the package instructions.
  • Strain pasta and set aside. Toss with a small amount of oil to prevent sticking
  • In the same pot, heat 1 tbsp of olive oil and fry sausages, working in batches as needed, until deeply browned on all sides.
  • Remove sausages, slice in ¾-inch (2 cm) rings, and set aside.
  • Sauté all of the bell peppers, onion, and garlic for about 2 minutes.
  • Add the canned tomatoes, all of the spices, and the sausage slices to the pot.
  • Simmer about 10 minutes.
  • Add the pasta back to the pot and stir gently until all the ingredients are coated in the sauce. Continue simmering until pasta is al dente.
  • Serve with grated parmesan.

1 lb rigatoni pasta
1 1/2 lbs mild Italian sausage or 1 1/2 lbs hot Italian sausage
4 tablespoons extra virgin olive oil
1 green bell pepper, cut into strips
1 red bell pepper, cut into strips
3 cubanelle peppers, seeded and cut into strips
1 yellow onion, cut into slices
2 garlic cloves, chopped
1/2 teaspoon dried oregano
6 fresh basil leaves, shredded
1/2 cup white wine
1 tablespoon butter
1/2 teaspoon salt
1 teaspoon ground black pepper
1/2 cup flat-leaf Italian parsley, fresh
1/2 cup parmesan cheese, grated fresh

Steps:

  • In 6 quarts of boiling salted water, cook the pasta until al dente. About 10 to 13 minutes. Drain and set aside.
  • Stir in 2 Tbls of olive oil into the pasta.
  • In the meantime, fry the sausage in a large frying pan in 2 Tbls of olive oil until the sausage cooked through and browned all over.
  • Remove the sausage from the pan and let stand.
  • Drain the excess oil in the frying pan.
  • Add the peppers, onions, garlic, oregano and basil to the pan, cover and cook on medium heat until the peppers are tender and slightly browned.
  • Cut the sausages into 1 inch pieces and add to the peppers.
  • Increase the heat and add the white wine.
  • Cook until the wine is reduced by half.
  • Stir in the butter and the parsley.
  • Season with salt and pepper.
  • Plate the pasta and spoon the sausage mixture on top.
  • Optional: Plate the pasta, pour a good quality, or homemade vodka sauce over the pasta, then top with sausages and peppers.
  • Serve with Parmesan cheese.

ESM's recipe has now been watered down and/or my recipe tastes a whole lot better. I use "Classico d'Sicilia" pre-prepared sauce as a base for this recipe, using the "Spicy Red Pepper" type (its not all that spicy!) and "working" from there...

2 ounces olive oil
1 medium cooking onion, cut to rings
3 tablespoons grated garlic
1 1/2 lbs hot Italian sausage
1 (14 ounce) jar spaghetti sauce
1 (3 ounce) can tomato paste
1 jalapeno pepper, cored and de-seeded, finely chopped
3 -4 hot cherry peppers, split, de-seeded
1 celery rib, finely chopped
3 ounces asiago cheese, grated

Steps:

  • In a saucepan, heat olive oil, add onions, then garlic and sauté until wilted.
  • Place sausage in oven on broiling pan, and heat at 400°F.
  • Add spaghetti sauce to onion/garlic mixture, then stir in the tomato paste, heating slowly to a low boil, mixing well.
  • Add the jalapeño, cherry peppers and celery.
  • Cook at low heat until the peppers are just less than crisp, and just more than soft --
  • Start the water boiling for the penne noodles; when boiling, add the penne, and cook about 7 minutes, then drain.
  • Remove the sausage from the oven (40 minutes cooking) and slice thinly on the diagonal, 3/8-inch thickness, and mix with sauce, stirring well.
  • Serve with grated Asiago over the penne noodles. Accompany with a truly dry Italian wine, and note how the "spiciness" turns the ashy dry taste of the wine to a sweet taste on the palate.

Penne pasta served with hot Italian sausage, bell peppers, and onions in a creamy Alfredo sauce. This is a recipe that I created on the fly. Ingredient measurements are "best guess" because I pretty much just threw everything in to taste. Feel free to adjust to your taste and enjoy!

1 (16 ounce) package penne pasta
2 tablespoons olive oil (or bacon drippings)
5 hot Italian sausage links (you can use mild)
2 bell peppers (you may also use poblanos or other mild chiles)
1 white onion
1 tablespoon garlic (minced)
salt & pepper (to taste)
2 tablespoons flour (optional)
1/4 cup chicken broth or 1/4 cup stock
2 cups heavy cream
1 cup parmesan cheese (grated)
fresh basil

Steps:

  • Slice sausage into 3/4 inch slices.
  • Cut onions and peppers in to thin strips (julienne slices).
  • Mince 3 to 4 cloves of garlic or measure out 1 Tbsp of pre-minced garlic.
  • Chop basil into small strips (about 1 inch in length).
  • Prepare pasta based on packaged instructions.
  • Fry sausage in oil over medium-high heat until all pieces have turned brown.
  • Add peppers and onions, season with salt and pepper to taste, and fry with sausage for 2 minutes.
  • Add garlic and fry for 1 more minute.
  • Dust the mixture with 2 Tbsp of flour (this step is optional, and will create a thicker sauce) and stir for about 1 1/2 to 2 minutes.
  • Add chicken broth and stir mixture for about 30 seconds.
  • Turn heat down to medium-low and add cream. Stir to combine.
  • Slowly bring cream to a boil and let simmer for 5 minutes over medium-low heat, stirring occasionally.
  • Add Parmesan cheese and stir until cheese is melted into mixture.
  • Garnish with fresh basil and serve over pasta.
