PENNE WITH VODKA SAUCE

1 quart Simple Tomato Sauce, recipe follows, or store-bought marinara sauce, blended until smooth
1 cup vodka
1/2 cup heavy cream, at room temperature
1/2 cup grated Parmesan
1 pound penne
1/2 cup extra-virgin olive oil
1 small onion, chopped
2 cloves garlic, chopped
1 stalk celery, chopped
1 carrot, chopped
2 (32-ounce) cans crushed tomatoes
4 to 6 basil leaves
2 dried bay leaves
Sea salt and freshly ground black pepper

4 tablespoons unsalted butter, optional

Steps:

  • Simmer the tomato sauce and vodka in a heavy large skillet over low heat until the mixture reduces by 1/4, stirring often, about 20 minutes. Stir the cream into the tomato and vodka sauce. Simmer over low heat until the sauce is heated through. Stir in the Parmesan cheese until melted and well blended.
  • Meanwhile, cook the pasta in a large pot of boiling salted water until al dente, tender but still firm to the bite, stirring occasionally, about 8 minutes. Drain the pasta and transfer it to the pan with the sauce, and toss to coat.
  • In a large casserole pot, heat oil over medium-high heat. Add onion and garlic and saute until soft and translucent, about 2 minutes. Add celery and carrot and season with salt and pepper. Saute until all the vegetables are soft, about 5 minutes. Add tomatoes, basil, and bay leaves and reduce the heat to low. Cover the pot and simmer for 1 hour or until thick. Remove bay leaves and taste for seasoning. If sauce tastes too acidic, add unsalted butter, 1 tablespoon at a time, to round out the flavor.
  • Pour half the tomato sauce into the bowl of a food processor. Process until smooth. Continue with remaining tomato sauce. If not using all the sauce, allow it to cool completely and then pour 1 to 2 cup portions into plastic freezer bags. Freeze for up to 6 months.

One of the best and easiest recipes I have tried. You can find pancetta at any good Italian deli, try not to substitute as it makes the dish. This is also very good with shrimp added in the last few minutes of simmering. If you like spice, add a dash or 2 of red pepper flakes.

1 (16 ounce) package penne pasta
2 tablespoons butter
¼ pound thinly sliced pancetta bacon, chopped
⅓ cup vodka
½ cup heavy whipping cream
1 ½ cups tomato sauce
½ cup grated Parmesan cheese

Steps:

  • Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
  • Meanwhile, melt butter or margarine in a large skillet over medium heat. Add pancetta, and saute until lightly browned. Add vodka and stir until it is reduced by half, about 4 to 5 minutes. Stir in tomato sauce and cream. Simmer uncovered for 10 to 12 minutes. Stir every few minutes.
  • Stir in pasta, and heat through. Serve with Parmesan cheese.

1/4 pound spaghetti
1 tablespoon olive oil
1/4 pound Italian sausage, removed from the casing and crumbled or chopped
1/2 cup chopped yellow onions
1/2 teaspoon salt
Pinch crushed red pepper flakes
2 teaspoons minced garlic
1/2 cup crushed tomatoes
3 tablespoons vodka
2 tablespoons heavy cream
1 to 2 tablespoons chiffonade of fresh basil leaves
Freshly grated Parmigiano-Reggiano, for garnish
Sprig fresh basil, for garnish

Steps:

  • Bring a medium saucepan of salted water to a boil. Add the pasta and cook until just al dente, 5 to 6 minutes. Drain in a colander and return to the saucepan.
  • Meanwhile, in a large skillet, heat the olive oil over medium heat. Add the sausage and cook, stirring, until browned and all pink has disappeared, 3 to 4 minutes. Add the onions, salt, and red pepper flakes and cook, stirring, until the onions are soft and golden, about 5 minutes. Add the garlic and cook until fragrant, about 30 seconds. Add the tomatoes and cook, stirring, until thick, about 2 minutes. Add the vodka and cook until the sauce reduced by half, 3 to 4 minutes. Stir in the cream and cook until the sauce thickens, about 2 minutes. Stir in the basil and remove from the heat.
  • Toss the sauce with the pasta to coat evenly and transfer to a pasta bowl for serving. Top with cheese and sprig of basil and serve immediately.

1 lb bulk sausage
1 medium onion, diced
1 bell pepper, diced
1 lb mushroom, sliced thick
2 garlic cloves, minced
1/4 cup fresh basil, chopped coarsely
3 (14 ounce) cans diced tomatoes
1/2 cup vodka
1 cup gruyere cheese, shredded
1 cup parmesan cheese, shredded
1/2 cup heavy cream
8 ounces mozzarella cheese, shredded
1 lb penne pasta
salt and pepper

Steps:

  • In large sauce pan or dutch oven, crumble sausage and cook over medium heat until no pink remains. Break into fine mince with a wooden spoon as it cooks. Add onions and bell pepper, season with salt and pepper, and continue to cook over medium until translucent, about 5 minutes. Be caareful not to let them brown. Stir in mushrooms and cook until they give up their liquid, about another 2 minutes.
  • Stir in the garlic and basil, then add the undrained tomatoes and vodka. Simmer over low heat, uncovered, for 40 minutes, stirring from time to time.
  • Cook penne pasta according to package directions, drain well, and set aside.
  • Slowly stir the Guyere and Parmesan cheese into the tomato sauce. When the cheese has all melted, turn off the heat and slowly stir in the heavy cream.
  • Preheat the oven to 350. Add the penne to the tomato sauce and stir well to mix evenly. Empty the entire mixture into a 13" baking dish. Top with the mozarella cheese and bake uncovered in a 350 degree oven for 30 minutes, or until cheese has melted and turned a light golden brown.

1 pound penne pasta
2 tablespoons olive oil
1/2 medium yellow onion, diced
1 tablespoon garlic, chopped
1 tablespoon Italian seasoning mix
1/4 teaspoon crushed red pepper flake, optional
4 Italian-style hot pork sausages, cut into 1/2-inch slices
1 (28-ounce) can diced tomatoes, drained
Kosher salt and freshly ground black pepper
1/4 cup heavy cream
Basil leaves, for garnish
1/2 store-bought garlic bread (save other half for Pizza)
1 cup shredded mozzarella cheese
1/2 teaspoon Italian seasoning mix

Steps:

  • Bring large pot of salted water to a boil over high heat. Cook pasta according to package directions.
  • In a large deep skillet over medium-high heat, add olive oil. Add onion, garlic, Italian seasoning mix and red pepper flakes, if using. Sir frequently and cook until the onions are soft and fragrant, about 3 to 4 minutes. Add sausage and cook for 1 minute. Add can of crushed tomatoes, stirring all the ingredients together to combine. Season with kosher salt and freshly ground black pepper, to taste and let simmer for 10 minutes. Stir in heavy cream and mix well.
  • Drain the pasta and add directly to the skillet with the sauce Toss the pasta to coat with the sauce. Transfer to a serving bowl or platter and garnish with basil leaves. Serve with the cheesy garlic bread.
  • For the cheesy garlic bread:
  • Preheat oven to 400 degrees F.
  • Sprinkle cheese and Italian seasoning over garlic bread half. Place on tinfoil lined baking sheet and cook in the oven for 10 to 12 minutes, until the cheese is melted and bread is warmed through. Slice and serve.
  • Use the leftover garlic bread from this recipe to make Garlic Bread Pizza.

This recipe is an original creation specifically for the cooking contest. I used the mild Italian sausages but you could increase the heat by using the spicy type & adding more cumin. I served it with Caesar salad & Garlic bread. My DH just loved the sauce & wants me to make this dish again!!

1 lb Italian pork sausage (sweet or spicy)
2 tablespoons butter
1 tablespoon olive oil
1 large onion, diced
3 garlic cloves, minced
1 medium red pepper, seeded & cut into strips
1 medium zucchini, cut into strips
1 (14 ounce) can tomato sauce
1 teaspoon salt
1/2 teaspoon white pepper
1/2 teaspoon cumin
1/3 cup vodka
1/2 cup half-and-half cream
1/4 teaspoon nutmeg
1/3 cup freshly grated parmesan cheese
1 lb penne
1 tablespoon parsley, finely chopped

Steps:

  • Prick sausage casings several times& cook in lightly salted, boiling water for 3 minutes.
  • Drain, cool& slice into rounds about 1/2 inch thick.
  • Melt butter& oil in a very large skillet.
  • Add sausages, onion & garlic; cook on medium heat until sausages are lightly browned.
  • Add peppers & zucchini & cook for 2 minutes.
  • Bring a large pot of lightly salted water to a boil.
  • Add penne & cook, according to package directions, until al dente (approx 9 minutes).
  • Drain well.
  • In the meantime, add tomato sauce, salt, pepper & cumin to the sausage mixture.
  • Simmer, stirring occasionally, for about 6 minutes or until sauce starts to thicken.
  • Add vodka & cook for another minute, stirring constantly.
  • Add the cream, nutmeg& Parmesan; simmer for 2 minutes, stirring constantly. Add pasta to skillet; toss or stir well and serve sprinkled with parsley & additional Parmesan.

This is the incredibly easy and always popular vodka sauce. There are certain flavors in tomatoes that are only brought out if you introduce alcohol into the sauce.

4 ounces pancetta bacon, diced
1 small sprig fresh rosemary
1 tablespoon olive oil
½ cup vodka
½ cup heavy whipping cream
freshly ground black pepper to taste
3 cups prepared marinara sauce
¾ cup water
1 (14.5 ounce) package multigrain penne pasta (such as Barilla®)
½ cup freshly grated Parmesan cheese

Steps:

  • Cook and stir bacon and rosemary sprig with olive oil in a large, deep skillet over medium heat until bacon renders its fat but is not crisp, about 5 minutes. Pour vodka into the skillet, standing back to avoid any flare-ups. Raise heat to high and continue to cook until the vodka reduces to about 2 tablespoons.
  • Pour heavy cream into skillet, stir briefly, and add black pepper; bring sauce to a boil. Reduce heat to medium; cook and stir until sauce has slightly reduced, 3 to 4 minutes. Mix marinara sauce and water into cream mixture and bring to a simmer. Lower heat and simmer sauce 20 to 25 minutes to blend flavors.
  • Fill a large pot with salted water and bring to a boil. Stir in penne and return to a boil. Cook pasta, stirring occasionally, until cooked through but still chewy, about 10 minutes; drain and return to pot. Pour sauce over penne and stir to combine. Turn off heat, cover pot with a lid, and let stand 5 minutes for pasta to absorb sauce. Serve sprinkled with Parmesan cheese.
