6 cans great northern beans
1 lb bacon
1 (14 ounce) bottle ketchup
1 medium onion, chopped
1 lb brown sugar

Steps:

  • Fry or microwave bacon until crisp.
  • Drain and crumble when cool.
  • Preheat oven to 350 degrees.
  • Drain and rinse beans.
  • Combine beans and the rest of ingredients in a baking dish.
  • Bake for 1 to 1 1/2 hours until bubbly.

This recipe is in a small cookbook I bought Years ago while in Amish country. I've made it for years, and my family loves it. Its well worth the time and trouble for those rave reviews you're sure to get! I had to guess at the servings, so don't take it as a true figure.

2 cups dried navy beans
1 1/2 teaspoons salt
1 small onion, minced
4 tablespoons molasses
1 teaspoon dry mustard
4 tablespoons catsup
1/4 lb salt pork or 4 slices bacon
water

Steps:

  • Soak beans over night in cold water.
  • Drain,and add 1 1/2 quarts fresh water,and the onion and cook slowly until the skins on the beans burst.
  • Drain and save the liquid.
  • Mix molasses, sasoning and catsup with 1 cup of the liquid.
  • Put half the salt pork or bacon in bottom of bean pot or baking dish.
  • Add the beans and top with remainder of pork or bacon.
  • Pour molasses mixture over beans, and add more liquid just to cover the beans.
  • Bake covered for 5 hours in slow oven(300 degrees). Uncover for the last 30 minutes. Add water if necessary while cooking.

1 quart lima beans
1 tablespoon cornstarch
1/4 cup water
1/2 pound bacon
1 tablespoon prepared mustard
3 tablespoons brown sugar
2 tablespoons King Syrup molasses

Steps:

  • Boil beans until soft. Drain off excess water. Combine cornstarch and water and add to beans. Cook until thickened. Fry bacon until crisp. Drain. Crumble and add to beans. Add remaining ingredients. Pour into baking dish. Bake at 350 degrees for 30 minutes.

2 pounds Dried Lima Beans soak beans overnight
1 pound Bacon cut into small pieces
1/2 cup King Syrup
2 cups Ketchup
1 pound Brown sugar
1 large Sweet Onion diced
1 tablespoon Dried Mustard
1 tablespoon Paprika

Steps:

  • Soak beans overnight. Cook beans in water until half tender and drain. Add other ingredients together in a large bowl and mix thoroughly. Pour the beans in a large covered casserole and pour the sauce over top. Bake for 2 to 3 hours at 350 degrees. Beans should be soft when done.

  • Place rinsed beans into a large bowl and cover with 2-3 inches of cold water. Cover bowl and allow beans to soak overnight.
  • After an overnight soak, drain beans and add them along with 6 cups of water to a Dutch oven or other large, oven-safe pot. Bring to a boil. Reduce to a simmer and simmer beans for 30 minutes, or until beans are just barely tender. Drain beans through a colander set over a large bowl to reserve cooking liquid. Set drained beans and cooking liquid aside.
  • To the same pot, add onions and bacon. Cook over medium heat until onions are soft and bacon is lightly crisp. Return the beans to the pot with the onions and bacon along with the remaining ingredients. Stir in 3 cups of reserved cooking liquid (if you don’t have 3 cups of cooking liquid, add enough water to make up the difference.).
