LINGUINE WITH NEW ZEALAND COCKLES



Linguine with New Zealand Cockles image

1 pound linguine, (uncooked)
1/4 cup extra-virgin olive oil
4 to 5 cloves garlic, finely chopped
2 to 3 dried chiles
3/4 cup fresh flat-leaf parsley, coarsely chopped
Zest of 1 lemon
1/8 teaspoon coarse salt
Pinch freshly ground pepper
3 pounds New Zealand cockles, thoroughly scrubbed
1 tablespoon red-wine vinegar
6 large fresh basil leaves, thinly sliced

Steps:

  • Bring a large pot of water to a boil. Add salt. Drop the pasta into the boiling water; stir to keep pasta from sticking together. Cook until al dente according to package directions.
  • Meanwhile, heat olive oil in a large saucepan over medium-low heat. Add garlic and chiles, and cook for 1 minute, being careful not to let it brown. Stir in parsley, lemon zest, salt, and pepper; cook for 1 minute. Add cockles, and stir until well coated; cover tightly. Increase heat to medium high, and cook just until cockles begin to open, 4 to 6 minutes.
  • Sprinkle cockles with vinegar, and cook, uncovered, until vinegar has evaporated, about 1 minute.
  • When pasta is done, drain it, and transfer to a large platter. Remove cockles from broth, and place on pasta. Cook broth for 1 minute more. Remove from heat, and spoon broth over cockles. Serve immediately, garnished with basil.

1/2 cup dry white wine, such as Sauvignon Blanc
1 pound cockles or small clams, scrubbed well
2 pounds mussels, scrubbed well, beards removed
1/4 cup extra-virgin olive oil, plus more for drizzling
1 pound dry sea scallops, tough muscles removed
Kosher salt and freshly ground pepper
1 medium onion, finely diced
4 cloves garlic, minced
1/4 teaspoon red-pepper flakes
1 tablespoon tomato paste
1 can (28 ounces) whole peeled tomatoes in juices, crushed by hand
1 pound medium shrimp, peeled and deveined, tails on
8 ounces squid, tubes cut into 1/4-inch slices, tentacles left whole
1 pound linguine
1/4 cup finely chopped flat-leaf parsley

Steps:

  • Heat wine in a large Dutch oven over medium-high until simmering. Add cockles and mussels, cover pot, and cook until shellfish have opened, about 5 minutes. (Discard any unopened ones.) Using a slotted spoon, remove shellfish and transfer to a bowl. Shuck half of mussels; discard shells. Cover shellfish with foil to keep warm. Strain liquid through a fine-mesh sieve. (You should have about 1 cup broth.)
  • Wipe Dutch oven clean with a paper towel. Heat 2 tablespoons oil over medium-high, swirling to coat bottom. Pat scallops dry with a paper towel; season with salt and pepper. Add to Dutch oven and cook, flipping once, until golden brown and cooked through, about 3 minutes per side. Transfer to a plate; loosely cover with foil.
  • Add remaining 2 tablespoons oil to pan drippings in Dutch oven; reduce heat to medium. Add onion and garlic and cook, stirring occasionally, until softened, 6 to 8 minutes. Add red-pepper flakes and tomato paste and cook, stirring, 1 to 2 minutes. Add shellfish broth and cook, scraping up browned bits with a wooden spoon, until mixture is reduced by half, about 2 minutes. Add tomatoes with their juices and simmer, stirring occasionally, until slightly thickened, about 15 minutes. Season with salt and pepper. Add shrimp and squid and cook, stirring occasionally, until just cooked through and shrimp are bright pink, about 2 minutes.
  • Meanwhile, cook pasta according to package instructions in a large pot of generously salted water. Drain, reserving 1 cup pasta water. Toss pasta with tomato sauce, adding pasta water to adjust consistency until creamy. Gently stir in cockles and mussels, reserving a few for garnish if desired. Transfer to a large serving platter; top with scallops and reserved shellfish, if using. Sprinkle with parsley, drizzle with oil, and serve.

CACIO E PEPE (CHEESE AND PEPPER PASTA)

2 (16 ounce) packages dried spaghetti
3 ½ cups finely grated Pecorino Romano cheese, or more to taste
6 tablespoons unsalted butter, cut into 6 pieces
2 teaspoons coarsely ground black pepper
salt to taste

Steps:

  • Bring a 12-quart pot of heavily salted water to a boil over high heat. Cook spaghetti in the boiling water, stirring occasionally, until tender yet firm to the bite, about 12 minutes. Drain pasta, reserving 2 cups of cooking water.
  • Return pasta and cooking water to the pot over low heat. Add 3 1/2 cups Pecorino Romano cheese, butter, and pepper. Stir until cheese has melted and formed a creamy sauce, about 5 minutes. Season with salt.
  • Serve with additional cheese, if desired.

12 ounces . cockles in vinegar
4 ounces green tagliatelle pasta noodles, cooked, cooled and cur into shorter pieces
2 small red and yellow peppers, de-seeded and cut into thin strips
2 1/2 ounces sunflower oil or 2 1/2 ounces olive oil
3 tablespoons vinegar
2 tablespoons chopped chives
1 teaspoon honey or 1 teaspoon brown sugar
1 teaspoon coarse grain mustard
chopped fresh chives

Steps:

  • Drain cockles, reserving any vinegar for dressing.
  • In a large bowl, mix together cockles, pasta and peppers.
  • To prepare dressing, mix together all ingredients in a screw-top jar. Shake well. Pour over pasta mixture and toss lightly.
  • Before serving, garnish with chives.

12 ounces uncooked spiral pasta
2 medium sweet red peppers, cut into 1/2-inch pieces
2 medium sweet yellow peppers, cut into 1/2-inch pieces
1 tablespoon butter
3 garlic cloves, minced
1 tablespoon cornstarch
1-1/2 cups vegetable broth
2 tablespoons white wine or additional vegetable broth
2 tablespoons minced fresh basil
1 teaspoon salt
1/4 teaspoon pepper
1 tablespoon minced fresh parsley

Steps:

  • Cook pasta according to package directions. Meanwhile, in a large nonstick skillet, saute peppers in butter until crisp-tender. Add garlic; saute 1 minute longer. Combine cornstarch, broth and wine or additional broth until smooth; stir into pepper mixture. Bring to a boil; cook and stir for 1-2 minutes or until thickened., Remove from the heat; stir in the basil, salt and pepper. Drain pasta; toss with pepper mixture. Sprinkle with parsley.

350g trompetti or fusilli pasta
2 tsp olive oil
large onion , roughly chopped
2 plump garlic cloves , crushed
375g pickled cherry peppers or sliced peppers from a jar
85g packet rocket or watercress, roughly torn

Steps:

  • Cook the pasta according to pack instructions.
  • Meanwhile, heat the oil in a large pan, then fry the onion over a medium-high heat for 5-6 mins, stirring occasionally, until golden and softened. Stir in the garlic and cook for a further 2-3 mins. Drain the peppers, reserving their juice, then stir into the onion. Cook for 2-3 mins to heat through. Blitz the mixture in a food processor, with 75ml/2½fl oz reserved juice from the peppers and 75ml/2½fl oz cooking liquid from the pasta, to make a chunky sauce.
  • Drain the pasta and return it to the pan. Add the pepper mixture, then season to taste. Toss with the rocket or watercress while still hot, so it just begins to wilt, then serve.

A brilliantly healthy pasta dish that's low calorie and rich in iron too, using budget-friendly cockles instead of clams

2 tbsp olive oil
3 garlic cloves , thinly sliced
400g can cherry tomatoes
glass of white wine
small pinch of golden caster sugar
750g cockles , rinsed
400g linguine
1 tbsp good-quality extra virgin olive oil

Steps:

  • Heat the olive oil in a large saucepan with a lid. Add the garlic and sizzle for 1 min, then tip in the tomatoes. Use the white wine to swirl round and rinse out the tomato can, then tip it into the pan, sprinkle over the sugar and turn up the heat. Simmer until everything becomes thick, making sure you stir occasionally so it doesn't burn on the bottom of the pan - this will take 15-20 mins.
  • Once the tomatoes have had about 10 mins, cook the pasta in a big pan of salted water until just cooked - this will take about 10 mins - then drain. When the tomatoes and wine have reduced to a thick sauce, throw the cockles into the pan, stir once, cover with a lid and turn the heat up to max. Cook for 3-4 mins until all the cockles have opened, then stir again. Turn off the heat and stir through the pasta with the extra virgin olive oil until everything is coated. Try a strand of pasta and season with salt to taste. Bring the pan to the table with a separate bowl for the shells, and serve straight from the pan.

200g bucatini or spaghetti
25g butter
2 tsp whole black peppercorns, ground, or 1 tsp freshly ground black pepper
50g pecorino or parmesan, finely grated

Steps:

  • Cook the pasta for 2 mins less than pack instructions state, in salted boiling water. Meanwhile, melt the butter in a medium frying pan over a low heat, then add the ground black pepper and toast for a few minutes.
  • Drain the pasta, keeping 200ml of the pasta water. Tip the pasta and 100ml of the pasta water into the pan with the butter and pepper. Toss briefly, then scatter over the parmesan evenly, but don't stir - wait for the cheese to melt for 30 seconds, then once melted, toss everything well, and stir together. This prevents the cheese from clumping or going stringy and makes a smooth, shiny sauce. Add a splash more pasta water if you need to, to loosen the sauce and coat the pasta. Serve immediately with a good grating of black pepper.
