4 (1/2 pound) rib-eye steaks, or steak of choice
2 tablespoons sea salt
2 tablespoons lemon pepper
2 (12 fluid ounce) cans or bottles beer of choice

Steps:

  • Place the steaks in a large, shallow container with a lid. Season each side of the steaks with the salt and lemon pepper. Gently pour the beer over the steaks (making sure the seasoning doesn't wash off). Cover, and refrigerate for 1 to 2 hours.
  • Preheat grill for high heat.
  • Lightly oil grill grate. Place steaks on grill, and discard beer marinade. Cook for 5 minutes per side, or to desired doneness.

Johnny Garlic's Grilled Peppered Steak with Cabernet Balsamic Sauce image

2 pounds flank steak or tri-tip, cut into 8-ounce pieces
4 tablespoons black peppercorns, lightly cracked
2 tablespoons kosher salt
3 tablespoons extra-virgin olive oil
1/4 cup red onion, minced
1 tablespoon garlic, minced
1 cup Cabernet Sauvignon
1/2 cup balsamic vinegar
2 tablespoons brown sugar

Steps:

  • Preheat grill to high heat.
  • Cut flank steak into 8-ounce portions and lightly tenderize with mallet. Dust with crushed black pepper and kosher salt. Press salt and pepper into steak with the palm of hand. Transfer steaks to a baking dish and place in the refrigerator. Let marinate for 4 to 8 hours.
  • In a medium sauce pan over medium heat, add extra-virgin olive oil and onions and lightly saute until onions are caramelized. Add garlic and cook until garlic begins to turn brown. Deglaze with wine and balsamic vinegar. Add sugar and let simmer and reduce for 20 to 30 minutes until mixture reduces to 3/4 cup.
  • Place steaks over a hot grill. Move once on first side to mark the steaks, cook for 5 minutes and flip, again only moving once to mark steak, cook for 4 minutes. When desired doneness is achieved, remove steaks from grill and let rest for 3 to 4 minutes.
  • Strain wine mixture and return to heat to reduce for 5 more minutes or until thick syrup is created. Serve with the steaks.

1/4 teaspoon salt
2 beef sirloin steak (5 ounces each)
3/4 cup beef broth
3/4 cup dry red wine or additional beef broth
1 small red onion, quartered and thinly sliced
2 garlic cloves, minced
1/2 teaspoon sugar
1/4 teaspoon dried marjoram
Dash hot pepper sauce

Steps:

  • Sprinkle pepper and salt over steaks and press into both sides. In a nonstick skillet, brown steaks on both sides over medium-high heat. Remove and keep warm. , In the same skillet, combine the remaining ingredients. Bring to a boil; cover and cook for 2 minutes. Uncover; cook 5-6 minutes longer or until meat is cooked to desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°).

12 ounces beer
3/4 cup chili sauce
1/4 cup parsley, snipped
3 tablespoons Dijon mustard
1 tablespoon Worcestershire sauce
2 teaspoons brown sugar
1/2 teaspoon paprika
1/2 teaspoon black pepper, ground
1 cup onion, chopped
cracked black pepper

Steps:

  • For marinade:.
  • Combine, bear, onion, mustard, parsley,chili sauce, worcestershire, brown sugar, paprika and black pepper.
  • in a non reactive pan cover steaks with marinade. cover with plastic wrap and leave in fridge overnight.
  • drain steaks, discard marinade. sprinkle steaks with cracked pepper.
  • grill over medium coals to desired degree of doneness, turning once 1/2 way through cooking.

2 garlic cloves, crushed
1/2 cup beer (your favorite kind)
2 tablespoons sugar
2 tablespoons Worcestershire sauce, saucee
1 tablespoon olive oil
1 tablespoon crushed black peppercorns

Steps:

  • Preheat BBQ.
  • Place the steaks in a dish and cover with next 5 ingredients.
  • Turn to coat evenly and marinate for 2-3 hours or overnight.
  • Remove steaks from dish and reserve the marinade.
  • Sprinkle peppercorns over steaks and press them into the surface.
  • Cook steak on a hot BBQ, basting them occasionally with the reserved marinade.
  • Cook steaks for about 3-6 minutes on each side, depending on how rare you like them.
