PEPPERMINT SLICE
A Chocolate Peppermint Slice that you'll make again and again!

Steps:
- Pre-heat oven to moderate-hot (180 degrees celsius, fan-forced).
- Grease a slice tin (28 x 18cm) and line with baking paper, leaving extra on each side (to pull the slice from the tin once cooked).
- Mix all ingredients together. Press into slice tin and level out with the back of a spoon.
- Bake for 20 minutes.
- Beat butter until a pale colour.
- Add icing sugar gradually, beating after each addition. Beat until fluffy.
- Add peppermint essence and green colouring and beat again.
- Once base is completely cooled, spread peppermint filling evenly over the base.
- Melt chocolate by placing in microwave and heating with 20 second bursts (stirring between each burst).
- Pour melted chocolate over cream filling, tilting tin from corner to corner to spread chocolate completely over the peppermint filling.
- Place in fridge for 15-30 minutes. Ideally, the chocolate shouldn't be completely set when cutting (it will crack as you're cutting if it's too hard).
- Once set, remove slice from tin by lifting edges of baking paper, cut into squares and return to the fridge. (And if you've left the slice in the fridge for longer, just let the slice rest at room temperature for half an hour before cutting into squares.)

PEPPERMINT BARS
An extravagant dessert of a fudgy brownie layered with peppermint frosting and a rich chocolate glaze. You'll want to include this in a holiday dessert tray or package for a cookie exchange or gift basket.

Steps:
- 1. Preheat oven to 350 degrees F. Prepare brownie mix as directed on package. Spread in greased foil-lined 15x10x1-inch baking pan.
- 2. Bake 15 minutes or until toothpick inserted into center comes out almost clean. Cool in pan on wire rack.
- 3. Meanwhile, beat confectioners' sugar, 7 tablespoons of the butter, cream and peppermint extract in large bowl with electric mixer on medium speed until well blended and smooth. Spread evenly over cooled brownie. Refrigerate 30 minutes.
- 4. Microwave chocolate and remaining 8 tablespoons (1 stick) butter in large microwave bowl on HIGH 2 minutes or until butter is melted. Stir until chocolate is completely melted. Spread over top of chilled brownie. Sprinkle with crushed peppermint candies, if desired. Cut into bars.

- In a large bowl, cream butter and brown sugar until light and fluffy. Add flour; beat until crumbly. Press 2 cups into a greased 13-in. x 9-in. baking pan; set remaining crumb mixture aside. Bake the crust at 350° for 8-10 minutes. , In a heavy saucepan or microwave, heat milk and vanilla chips until chips are melted; stir until smooth. Pour over hot crust and spread evenly. Combine the candy and reserved crumb mixture; sprinkle over top. , Bake for 18-22 minutes longer or until lightly browned. Cool on a wire rack. Cut into squares.

S'MORES CEREAL TREATS
Steps:
- Line an 8-by-8-inch baking dish with parchment paper and lightly coat with cooking spray. Line a baking sheet with parchment paper.
- Combine the butter and marshmallows in a large microwave-safe bowl and melt in a microwave in 15 second intervals, stirring between every interval, until the marshmallows are completely melted. Alternatively, melt the butter in a large saucepan over medium heat, add the marshmallows and cook, stirring constantly, until the marshmallows are completely melted; remove from the heat. Add the cereal and salt to the melted marshmallow mixture and gently stir until the cereal is completely coated.
- Evenly press the mixture into the prepared baking dish. Set aside to cool for about 30 minutes or refrigerate for 10 to 15 minutes.
- Remove the treats from the pan and slice into 16 squares. Place them on the prepared baking sheet.
- Place the dark and white chocolate chips in each of 2 microwave-safe bowls. Melt in a microwave in 15 second intervals, stirring between every interval, until completely melted. Transfer the melted chips to 2 separate piping bags or resealable bags. Snip the tips and drizzle over the cereal treats, then sprinkle with the marshmallow bits. Before serving, allow to set at room temperature for about 30 minutes or refrigerate for 10 to 15 minutes.
MORGAN'S AMAZING PEPPERMINT BARK

- Line a baking sheet with waxed paper.
- Place white chocolate in a microwave-safe bowl; heat in the microwave until melted, 60 to 90 seconds. Stir until smooth.
- Place one gallon-sized resealable bag inside a second gallon-sized bag, creating a double-layered bag. Place candy canes inside the inner bag and seal. Crush the candy canes inside bag with a rolling pin. Stir crushed candy canes into melted white chocolate.
- Pour white chocolate mixture onto the prepared baking sheet. Chill in refrigerator until hardened, 1 hour.

CEREAL ICE CREAM DESSERT SQUARES
One day I was craving a dessert I had ages ago that my cousin had made with rice chex and ice cream. I didn't have the recipe, so I went into cyberspace and found an award winning similar recipe from the HoosierKitcheNet! This dessert is great in the summer, or anytime of the year when you might be craving ice cream with a crunch! (Prep time includes time for freezing dessert).

- Mix together the above ingredients except the ice cream.
- Reserve 1 1/2 cups of mixture for topping.
- Pat the remaining mixture into bottom of a greased 9x13" pan.
- Spread 1/2 gallon of softened ice cream on the cereal mixture in pan.
- Sprinkle the 1 1/2 cups reserved cereal mixture on top of ice cream.
- Cover and freeze several hours, or overnight.
- Cut into squares.

- In a medium bowl, combine crushed chocolate wafer cookies, melted butter and sugar. Press mixture into bottom of an ungreased 13 x 9-in baking pan; set aside.
- Chocolate Layer:.
- In a saucepan, melt chocolate chips and 2/3 cup heavy whipping cream, stirring occasionally. Pour chocolate mixture over crust and spread evenly to cover. Place in freezer for 20-25 minutes.
- Peppermint Filling:.

- In another bowl beat cream cheese with an electric mixer until fluffy. Add peppermint extract, confectioners' sugar, and if desired a few drops of red food coloring. Beat until mixture is smooth. Stir in crushed peppermint candy canes. Fold in whipped cream until just mixed. Spread evenly over chocolate layer. Sprinkle with more crushed candy canes if desired.
- Cover pan and freeze for 4 hours.
- This dessert can be served at room temperature or frozen. If desired, garnish each square with a peppermint candy.

- Place graham crackers in a gallon-sized re-sealable plastic bag. Crush crackers with rolling pin until fine in texture.
- In a bowl, combine crushed graham cracker with melted butter and mix well.
- Line a 9×9 inch (23x23 cm) pan with parchment paper. Fill pan with graham cracker crumbs and pat down to create one even, compressed crust. Place in freezer.
- In a large bowl, combine ingredients for peppermint cream with hand mixer until a thick, uniform cream is formed.
- Remove pan from freezer and layer the peppermint cream on crust in one even layer. Freeze for at least 1 hour.
