PEPPERONI BISCUIT BITES
I'm single and I love finding recipes that are both inexpensive and fast to fix. These little pizza-flavored pockets call for on-hand ingredients and bake in just 10 minutes in the toaster oven.

Steps:
- In a small bowl, combine the tomato sauce, oil and seasonings. Cut each biscuit in half. Place 1 pepperoni slice on each half; fold dough over pepperoni and pinch edges to seal. Dip in tomato mixture. , Place in a shallow baking pan coated with cooking spray. Sprinkle with Parmesan cheese. Bake in a toaster oven at 450° for 10-12 minutes or until golden brown.

- Preheat oven to 400 degrees F.
- Combine soup mix, flour, and baking powder. Stir in the rest of the ingredients. Drop on greased cookie sheet by teaspoonfuls. Bake for approximately 12 minutes.
PEPPERONI BREADSTICK BITES

- Heat oven to 375 degrees F. Grease baking sheet.
- Separate breadsticks; place in single layer on baking sheet. Top each breadstick with 5 slices pepperoni. Bake 10 to 12 minutes or until breadsticks are browned. Remove breadsticks from baking sheet; slice into bite-size pieces. Transfer breadstick pieces to serving tray. Insert wooden pick into each piece.
ITALIAN PEPPERONI BITES
These are wonderful little appetizers. If you don't have the mini muffin pan, just use the regular size and don't cut the biscuits in half. I also use homemade pesto. From the Hormel site.

- In bowl, combine pepperoni, cheese, mayo and pesto. Cut each biscuit in half. Place biscuit halves into greased miniature muffin cups, pressing gently to fit cups. Spoon 1 tablespoon of filling into each cup. Bake 20-25 minutes. Serve warm.

- Separate the biscuits.
- Flatten to 3" circles.

- Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper and grease with butter.
- Cut each biscuit in half. Press each half into a circle with your thumb.
- Place a small dollop of marinara sauce, 1 pepperoni, and 1 cube of mozzarella cheese in the center of each biscuit round.
- Bring the edges up and over, pressing them together and being sure to leave no gaps for the filling to leak out. Lay the pizza bombs on the prepared baking sheet.
- Combine the melted butter, garlic, salt, pepper, and Italian seasoning in a small bowl.
- Brush the butter mixture onto each pizza bomb and top with Parmesan.
- Bake for 15-20 minutes, until the bombs have nicely browned.

- Preheat oven to 425 degrees F (220 degrees C). Spray 10 muffin cups with cooking spray.
- Press biscuits, one at a time, between hands to flatten. Place each flattened biscuit in a muffin cup; press into bottom and up sides of muffin cup. Set aside for biscuit to settle and slightly rise, about 5 minutes. Lightly press biscuits into cups as needed.

- Cut each biscuit in half. You will have 24 biscuit halves. Roll each half as big as you can get it with a rolling pin or you could use a glass. Spread each half with pizza sauce, one slice of pepperoni, a pinch of shredded mozzarella cheese and chopped onion. Roll the biscuit half up, tuck in ends and place in baking dish sprayed with cooking oil. I used a 10 inch pie plate to make these. Do this with all 24 biscuit halves. Sprinkle on dried oregano and garlic powder. Drop on some extra pizza sauce with a spoon on the tops of the pizza balls and add about 1/2 cup shredded cheese.
- Bake in preheated 400 degree oven for 20 to 25 minutes until biscuits are cooked. Pull off pieces or slice. Makes about 6 servings.
