3 tablespoons white sugar, or to taste
2 cups ice cubes

Steps:

  • Place cantaloupe cubes and ice into the container of a blender. Process until the ice is in small pieces. Add sugar, and puree. Pour into tall glasses and serve immediately.

I love sharing these two ingredient recipes, though this one may sound a little odd. I must admit when I heard a chef on TV say that freshly ground black pepper on sweet cantaloupe is exceptional, I was thinking more like- bizarre! But once you taste this, especially you cantaloupe lovers, you may never eat it any other way.

1/2 ripe cantaloupe, peeled and cut into 1 inch cubes
fresh ground black pepper

Steps:

  • Divide cantaloupe cubes into 4 dessert bowls.
  • Using pepper mill, grind freshly ground black pepper over cantaloupe to taste.
  • Note; Be sure to use freshly ground black pepper- I'm not sure if regular pepper would have the same effect.
  • A very ripe cantaloupe, the sweeter the better, works best.

2 cups cooked chicken, cubed
2 cups fresh blueberries
1 cup celery, sliced
1 cup green seedless grape, halved
1/2 cup sliced almonds
3 cantaloupes, halved, seeded
1/2 cup mayonnaise
1/4 cup sour cream
1 tablespoon fresh lemon juice
1 1/2 teaspoons grated lemon peel
1 1/2 teaspoons sugar or 1 1/2 teaspoons sugar substitute
1/2 teaspoon ground ginger
1/4 teaspoon salt (optional)

Steps:

  • In a large bowl, combine chicken, blueberries, celery, grapes and almonds.
  • In a small bowl, mix dressing ingredients.
  • Pour over the chicken mixture and toss gently.
  • Spoon into cantaloupe halves.
  • Nutritional Information: One serving (prepared with sugar substitute, light mayonnaise and sour cream and without added salt) equals: 285 calories, 87 mg sodium, 36 mg cholesterol, 37 gm carbohydrate, 18 gm protein, 9 gm fat.

Here's what you need: cantaloupe, cucumber, orange bell pepper, salt, red wine vinegar, olive oil, prosciutto, fresh basil, freshly cracked pepper

2 cups cantaloupe, peeled and cubed
1 cucumber, peeled and cubed
1 orange bell pepper, diced
1 ¼ teaspoons salt
1 teaspoon red wine vinegar
¼ cup olive oil, plus more for drizzling
1 ¼ cups prosciutto, thinly sliced
¼ bunch fresh basil, picked
freshly cracked pepper, for garnish

Steps:

  • Preheat your oven to 400 degrees. On a parchment lined baking sheet, place your prosciutto slices in a single layer. Bake for 10 - 12 minutes, until the prosciutto crisps, then remove and set aside.
  • In a blender, combine the cantaloupe, cucumber, bell pepper, salt, vinegar, and olive oil. Blend very well until extremely smooth. Strain into an air-tight container and allow to chill in the fridge for at least an hour (this can be made the day before serving as well).
  • When ready to serve, portion the chilled soup evenly into bowls, then garnish with freshly picked basil, a few pieces of the crisped prosciutto, an extra drizzle of olive oil, and a fresh crack of black pepper. Enjoy!
