These aromatic dan dan noodles in a spicy soy-based sauce are wildly popular at South Beauty. 1 tablespoon brandy or 1 tablespoon whiskey
1 teaspoon hoisin sauce
1 teaspoon cornstarch
1/4 lb ground pork
1 tablespoon asian sesame paste
1 teaspoon balsamic vinegar
1 tablespoon chili oil
1 teaspoon sesame oil
1 garlic clove, minced
1 cup chicken stock or 1 cup low sodium chicken broth
1 tablespoon vegetable oil
4 heads baby bok choy, quartered lengthwise
1/2 lb fresh linguine or 1/2 lb spaghetti
2 tablespoons minced chinese pickled mustard greens (optional)
2 scallions, white parts only, minced

Steps:

  • Bring a large saucepan of water to a boil. In a small bowl, mix 1 tablespoon of the soy sauce with the brandy, hoisin sauce and cornstarch. Blend the mixture into the ground pork.
  • In a small bowl, whisk the sesame paste with the vinegar and the remaining 2 tablespoons of soy sauce until smooth. In a small saucepan, heat the chili and sesame oils. Add the garlic and cook over high heat for 30 seconds. Add the sesame paste mixture and simmer for 1 minute. Add the stock and simmer over low heat, stirring occasionally, until reduced slightly, about 3 minutes.
  • In a small skillet, heat the vegetable oil. Add the seasoned ground pork and cook over moderately high heat, breaking up the meat with a spatula, until cooked through, about 3 minutes. Cover the skillet and remove from the heat.
  • Add the bok choy to the boiling water and cook until bright green, about 10 seconds. Using a slotted spoon, transfer the bok choy to 4 small bowls. Cook the noodles in the boiling water until al dente, about 3 minutes. Drain well and transfer to the bowls. Pour the sauce over the noodles and spoon the ground pork on top. Garnish with the pickled mustard greens and scallions and serve.

  • Easy Chili Oil: Add all of the spices to a heat proof bowl; set aside. Add vegetable oil to a small saucepan and heat over medium heat for 2-3 minutes, until 325 degrees F (no hotter). Very carefully pour oil over the spices. Whisk in sesame oil; set aside. Start boiling the water for the noodles so it’s ready to cook them later.
  • Sauce: Mix all Dan Dan Sauce ingredients together except chili oil until smooth then whisk in 2-4 tablespoons chili oil (see notes). Set sauce aside and reserve leftover chili oil.
  • Pork: Heat oil in a skillet or wok over medium-high heat. Once very hot, add pork and cook and crumble. Once almost cooked through, add the rest of the pork ingredients and cook for 1-2 minutes until the liquid is absorbed/evaporated. If the pork isn’t crispy at this point, increase heat to high and cook another 1-2 minutes; transfer to a bowl.
  • Sui Mi Ya Cai: Reduce heat to medium. Heat 2 teaspoons of oil in the now empty skillet. Add the sui mi ya cai and sauté for 60 seconds to warm through; set aside.

Wait 6 - 7 minutes, then remove the peppercorns, cinnamon stick, and star anise with a slotted spoon. Add the crushed red pepper flakes and allow them to steep in the hot oil. It should start smelling fragrant, almost like popcorn. Allow the oil to cool. This makes more chili oil than you’ll need, but you’ll be glad to have it on hand for use in other dishes. Store in a glass jar and keep refrigerated.
  • To make the meat mixture: In a wok, heat a teaspoon of oil over medium heat, and brown the ground pork. Add the sweet bean sauce, shaoxing wine, dark soy sauce, and five spice powder. Cook until all the liquid is evaporated. Set aside. Heat the other 2 teaspoons of oil in the wok over medium heat, and sautee the sui mi ya cai (pickled vegetables) for a few minutes. Set aside.
  • To make the sauce: Mix together all the sauce ingredients. Taste and adjust seasoning if you like. You can loosen it with more hot water, add more Sichuan peppercorn powder, etc.
