Steps:
- Wash and peel the potatoes.
- Grate the potatoes with a grater or food processor.
- (You can grate them into a bowl of salted water to keep them from discoloring. Otherwise they discolor about as fast as you can grate them, although it doesn't hurt anything if you use them right away). Drain off all liquid, and squeeze the excess liquid out by hand.
- (Do this even if you don't soak them in the salted water.) Beat the eggs and mix with the grated potatoes and other ingredients, except the oil.
- Heat about 1/2 inch of oil in a skillet over medium high heat until very hot.
- Drop potato mixture by heaping tablespoons into oil (about 4 at a time).
- Use a pancake turner to flatten them out.
- Fry to golden brown on both sides (about 3 minutes per side).
- Drain on paper towels.
- Serve topped with applesauce or sour cream.

Steps:
- Peel the potatoes and grate them on a box grater. Wrap the grated potatoes in a kitchen towel and squeeze out as much liquid as possible. Combine the potatoes in a bowl with the egg, flour, salt and pepper. Mix well.
- Melt the clarified butter in a large saute pan over medium heat. Place a tablespoon of the potato mixture into the sizzling butter and cook for 2 minutes. Turn the pancakes over and cook for another 2 minutes, or until crisp on the outside and golden brown. Serve the pancakes hot from the skillet.

CLASSIC POTATO LATKES
This recipe is for a classic, unadorned latke; the kind your Bubbe used to make. No kohlrabi or cumin here. Serve them hot and make more than you think you need. They go fast.

Steps:
- Using a food processor with a coarse grating disc, grate the potatoes and onion. Transfer the mixture to a clean dishtowel and squeeze and wring out as much of the liquid as possible.
- Working quickly, transfer the mixture to a large bowl. Add the eggs, flour, salt, baking powder and pepper, and mix until the flour is absorbed.
- In a medium heavy-bottomed pan over medium-high heat, pour in about 1/4 inch of the oil. Once the oil is hot (a drop of batter placed in the pan should sizzle), use a heaping tablespoon to drop the batter into the hot pan, cooking in batches. Use a spatula to flatten and shape the drops into discs. When the edges of the latkes are brown and crispy, about 5 minutes, flip. Cook until the second side is deeply browned, about another 5 minutes. Transfer the latkes to a paper towel-lined plate to drain and sprinkle with salt while still warm. Repeat with the remaining batter.
PERFECT POTATO PANCAKES
I like to serve these potato pancakes with barbecued sausage. They're also nice with baked ham and applesauce or with breakfast sausages. And, with these and other types of meals, they're a good alternative to french fries. My children are married, and I'm a widow. So I don't do as much cooking as I once did. Guests always ask for the recipe when I serve this dish, though. And when my son and his family visited me from Winnipeg not long ago, one of the first things he asked for were Perfect Potato Pancakes!

- Begin by peeling your russet potatoes and discard the peels. Fill a large bowl about a 1/3 of the way with very cold water and grab a large cheese or box grater.
- Grate the potato using the larger side of the grater directly into the bowl, so that your potatoes fall directly into the cool water.
- When potatoes and onions are all grated, add more cold water until completely submerged and place in fridge for 30 minutes.

- Peel and grate the russet potatoes. Place the grated potatoes into a colander with a bowl underneath.
- Take a potato masher and squish the peeled potatoes down to remove excess moisture (my kids love this part). Add your bag of shredded hash browns to the freshly peeled potatoes.
- Let the potato mixture drain for 15 minutes. After 15 minutes, mash your peeled potato mixture one last time and transfer to a large mixing bowl. Alternative instructions: Line a sieve with cheesecloth and transfer potatoes into a sieve. Set sieve over a bowl, twist cheesecloth into a pouch and squeeze out the moisture.
- Do not throw away the drained liquid, we need that! Pour off the top liquid, saving the white potato starch that settled in the bottom of the bowl. To that starch add dried onion flakes, beaten eggs, salt and ground pepper. Slowly stir in the flour to avoid clumps. Pour this starch mixture into the bowl of peeled potatoes and toss to combine.
