MILLIONAIRE'S SHORTBREAD

Categories     dessert

Time 1h15m

Yield 2 dozen

Number Of Ingredients 7

2 sticks butter, cut into small pieces, plus more for preparing pans
2 cups all-purpose flour, plus more for preparing pans
2/3 cup sugar
1/2 teaspoon salt
2 (14-ounce) cans sweetened condensed milk
2 tablespoons butter
3/4 pound good-quality milk chocolate

Steps:

  • Preheat the oven to 350 degrees F.
  • Butter 2 (8-inch) square nonstick pans and coat with flour, tapping off excess. Place the flour, sugar and salt in a food processor and pulse once. Add butter and pulse until mixture resembles peas. Press the shortbread mixture into prepared pans and bake until golden brown around the edges, about 20 minutes. Remove from the oven and let cool completely.
  • In a heavy-bottomed saucepan over medium-low heat, combine the condensed milk and 2 tablespoons of butter. Slowly bring the mixture to a boil, stirring continuously. Continue stirring over the heat until mixture becomes thick and amber in color, about 15 minutes. Pour the caramel over the cooked shortbread and spread evenly using an offset spatula. Cool to room temperature.
  • In a glass bowl set over a saucepan of simmering water, melt the chocolate. Once chocolate has melted, pour it over the cooled caramel layer. Cool at room temperature for about 10 minutes, and then place in the refrigerator to cool completely, allowing chocolate to slightly harden but not get hard. Cut into 2-inch squares and enjoy, or store in an airtight container, at room temperature, or my favorite - keep in the refrigerator for a yummy sweet and cool treat!

QUICK MILLIONAIRE SHORTBREAD

Quick Millionaire Shortbread image

Provided by Ree Drummond : Food Network

Categories     dessert

Time 2h15m

Yield 30 squares

Number Of Ingredients 9

Coconut cooking spray, for the foil
15 whole chocolate graham crackers
2 cups chopped semisweet chocolate
1/4 cup coconut oil
1 cup candy-coated chocolate candies, such as M and Ms
2/3 cup chopped snack-size chocolate-covered wafer candy bars, such as Twix
2/3 cup chopped snack-size chocolate-covered caramel peanut candy bars, such as Snickers
2/3 cup chopped snack-size chocolate-covered caramel nougat bars, such as Milky Way
27 ounces dulce de leche

Steps:

  • Line a baking sheet with foil and coat with an even layer of coconut cooking spray. Lay the graham crackers out on the baking sheet in a single layer. Set aside.
  • Add the chopped semisweet chocolate to a heatsafe mixing bowl set over a pan of simmering water. Add the coconut oil to the bowl with the chocolate and allow it to melt. Heat, stirring, until smooth, 2 to 3 minutes. Leave the mixture in the pan, over the water, until ready to use.
  • In a separate bowl, add the chopped chocolate candies and candy bars and mix to combine.
  • Spoon the dulce de leche into a microwave-safe bowl and microwave in 15-second increments, stirring in between to make sure it doesn't burn, until slightly softened and more spreadable. The time needed will vary on your microwave--roughly 30 to 90 seconds.
  • Scoop the warm dulce de leche onto the graham cracker base and spread it nearly to the edges using an offset spatula.
  • Give the melted chocolate and coconut oil mixture a quick stir and pour it over the dulce de leche, spreading it evenly with a clean offset spatula. Working quickly, sprinkle the candies over the top of the dulce de leche.
  • Transfer the baking sheet to the fridge and chill, uncovered, until set, about 2 hours. Once chilled, carefully remove from the baking sheet to a cutting board. Using a long serrated knife, cut the slab into 30 roughly 2-inch squares. Smaller is better as they're rich! Serve cold or at room temperature.

Time 1h50m

Number Of Ingredients 7

1 ½ cups all-purpose flour
½ cup butter, cut into small pieces
3 tablespoons brown sugar
1 (14 ounce) can sweetened condensed milk
4 tablespoons butter
3 tablespoons brown sugar
6 ounces milk chocolate, chopped

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Grease a 9-inch square pan.
  • Sift flour into a bowl. Rub in butter with your fingertips until the mixture resembles fine bread crumbs. Mix in brown sugar and shape dough into a ball.
  • Press dough into the prepared pan. Prick all over with a fork.
  • Bake in the preheated oven until set and golden brown, about 20 minutes. Let cool.
  • Meanwhile, combine condensed milk, butter, and brown sugar in a nonstick saucepan over medium-low heat. Cook, stirring constantly, until caramel comes to a boil. Reduce heat and cook until golden and pulling away from the sides of the pan, 4 to 5 minutes.
  • Pour caramel over cooled crust and refrigerate until firm to the touch, about 1 hour.
  • Place chocolate in top of a double boiler over simmering water. Stir frequently, scraping down the sides with a rubber spatula to avoid scorching, until chocolate is melted, about 5 minutes.
  • Spread melted chocolate over cooled caramel. Refrigerate until chocolate hardens, about 15 minutes. Cut into bars.

BEST TRADITIONAL SHORTBREAD RECIPE

Best Traditional Shortbread Recipe image

The secret of shortbread's buttery crumb lies in its simplicity. This traditional shortbread recipe is a simple blend of butter, sugar, and flour resulting in a taste far more than the sum of its parts. Ted Lasso worthy!

Provided by Kathleen Pope

Categories     Cookies

Time 2h50m

Number Of Ingredients 7

2 sticks (½ pound unsalted butter, softened (you may use salted butter, but omit the salt))
[½ cup sugar (I use all natural pure cane sugar, white or bakers sugar may be substituted])
[1 tsp vanilla]
[2 cups all-purpose flour]
[¼ cup cornstarch (I use a non-GMO cornstarch])
⅛ tsp salt
all natural or sanding sugar for sprinkling (optional)

Steps:

  • Beat butter at medium speed with an electric mixer until creamy; gradually add sugar, beating well about 2-3 minutes. Stir in vanilla.
  • Combine flour, cornstarch, and salt whisking to mix; gradually add to butter mixture, beating at low speed after each addition. (Mixture will be stiff and may be crumbly)
  • Turn dough onto a lightly floured surface; knead lightly 8-10 times.
  • Press dough into an un-greased 11x7 or 9x9 pan (if doubling, use a 15x10 in jellyroll pan, parchment lined if desired for easier removal).
  • Prick dough at 1-inch intervals with a fork, and score (cut) into 2 ½ x 1 inch bars. Cover and chill for at least 2 hours. Make sure to chill, this will firm the butterfat back up allow for that delectable light, crisp crumb you get with Scottish Shortbread. If desired, sprinkle with all natural sugar or sanding sugar before baking.
  • Bake at 325F degrees for 35 minutes, until set and lightly browned. Cool in pan on a wire rack 5 minutes; cut shortbread into bars using previously scored lines. Cool completely before removing from pan. Store in airtight container at room temperature up to 1 week, or freeze up to 6 months. This recipe easily doubles!

PERFECT (AND EASY!) SHORTBREAD

Perfect (And Easy!) Shortbread image

This is from the back of the Canada Cornstarch box - I've been making it for years. Four ingredients, and it comes out tasting and looking perfect each time. For fun I like to add coloured sugar sprinkles for the holidays! (P.S. I learned how to bake with this recipe, so that tells you how easy it is!)

Provided by netselkie

Categories     Dessert

Time 1h5m

Yield 24 cookies

Number Of Ingredients 4

1/2 cup cornstarch
1/2 cup icing or 1/2 cup powdered sugar
1 cup flour
3/4 cup softened butter

Steps:

  • Sift together the cornstarch, icing (powdered) sugar and flour.
  • Blend in butter until a soft smooth dough forms.
  • Shape into 1" balls and chill 30 -60 minutes.
  • Place 1 1/2" apart on a cookie sheet and flatten slightly with a floured fork. (omit if throwing sprinkles on, and/or don't like fork flattened shortbread - I don't and it still comes out just fine)
  • Bake 300' for 15-20 minutes. Transfer to a rack and cool. Watch that they don't brown, you want to pull them out while they still look a smidge underdone - the idea is that they do not brown on the bottom.

Provided by Martha Stewart

Categories     Food & Cooking     Dessert & Treats Recipes     Cake Recipes

Yield Makes 12 wedges

Number Of Ingredients 6

Nonstick cooking spray
1 cup (2 sticks) unsalted butter
3/4 cup confectioners' sugar, sifted
1/2 teaspoon pure vanilla extract
2 cups cake flour (not self-rising), sifted
2 tablespoons coarse sanding sugar

Steps:

  • Spray a 9-inch fluted tart pan with a removable bottom with nonstick cooking spray; set aside.
  • In the bowl of an electric mixer fitted with the paddle attachment, cream together butter and sugar. Stir in vanilla. With mixer on low speed, slowly add flour. Mix until well combined.
  • Evenly spread cookie dough into prepared tart pan. Refrigerate until firm, at least 2 hours and up to overnight.
  • Preheat oven to 325 degrees. Sprinkle shortbread with sanding sugar. Using a 2-inch round fluted cookie cutter, make a shallow cut in the center of the dough. Using the tines of a fork, score dough from the edge of the circle in the center toward the edge of the pan into 12 equal wedges.
  • Transfer tart pan to oven and bake until light brown and a toothpick inserted into the center of the shortbread comes out clean, 50 to 60 minutes. Immediately re-score circle and wedges with cookie cutter and the tines of a fork. Transfer to a wire rack and let cool 1 hour. Remove shortbread from tart pan and let cool completely. 12 BEST SHORTBREAD RECIPES - THE SPRUCE EATS

From thespruceeats.com
  • Classic Shortbread. You know what they say: If it ain't broke, don't fix it. These three-ingredient shortbread squares get their satisfying texture from pricking them all over with a fork before baking.
  • Chocolate Shortbread Cookies. For those who just don't consider a dessert worth it unless it contains chocolate, this shortbread will hit the spot. The dough also freezes well, so make half now and save the other for a quick treat later.
  • Peanut Butter Shortbread Cookies. Combine two classic cookie flavors with this peanut butter shortbread recipe. This one also contains no eggs, making it great for those with food allergies.
  • Butter Pecan Shortbread Cookies. Fans of butter pecan ice cream or Keebler sandies will love these shortbread cookies that have a similar taste. Sprinkling with coarse or vanilla sugar would add a little extra crunch, but they taste great without too.
  • Three-Ingredient Shortbread. You read that right: all you need for a buttery basic shortbread is three ingredients and an oven. A food processor would make mixing the butter into the sugar and flour easier, but a pastry blender works too.
  • Keto Shortbread Cookies. Using keto-friendly almond flour and a sugar substitute like Stevia means you can still enjoy a sweet treat while following the popular diet.
  • Cardamom Pistachio Shortbread Cookies. Give basic shortbread cookies extra excitement by adding warming cardamom and nutty pistachios in a recipe that's reminiscent of the Middle Eastern version, called Ghoraibi.
  • Mexican Tea Cakes. With the taste and texture of a shortbread cookie but shaped like a drop cookie, you may also know these holiday favorites as butternut cookies, sand cookies, or Mexican wedding cakes.
  • Maple Shortbread Cookies. With the signature sweetness of maple syrup, these butter cookies taste just right for a crisp winter's day. If you don't have a leaf-shaped cutter, you can also roll and slice them but allow for plenty of time for chilling so the cookies keep their shape.
  • Scottish Shortbread. Adding cornstarch to this basic shortbread recipe makes the cookies crispy on the edges while staying soft and crumbly in the center.
