2 medium firm pears
1 vanilla bean
2-1/4 cups water
1/2 cup white grape juice
2 dried apricots, chopped
1 tablespoon sugar
1 tablespoon honey
1 lemon zest strip
1 whole clove
2 tablespoons chopped almonds, toasted

Steps:

  • Core pears from the bottom, leaving stems intact. Peel pears; cut 1/4 in. from the bottom of each to level if necessary. Split vanilla bean and scrape seeds; set aside., In a small saucepan, combine the water, grape juice, apricots, sugar, honey, lemon strip, clove, vanilla bean and seeds. Bring to a boil. Reduce heat; place pears on their sides in saucepan and poach, uncovered, for 18-22 minutes or until pears are almost tender, basting occasionally with poaching liquid., Remove pears and apricots with a slotted spoon; cool slightly. Cover and refrigerate. Bring poaching liquid to a boil; cook until liquid is reduced to 1/4 cup. Discard the vanilla bean, lemon strip and clove. Cover and refrigerate for at least 1 hour., Place pears on dessert plates. Drizzle with poaching liquid. Sprinkle with apricots and almonds.

1 1/2 cups sugar
1 cinnamon stick
Peel from 1/2 orange
Juice of 1/2 orange
8 small pears
Quick Chocolate Sauce, recipe follows
1/3 cup heavy cream
2/3 cup semi-sweet chocolate chips

Steps:

  • In a medium saucepan, bring 4 cups water, sugar, cinnamon stick, orange peel, and orange juice to a boil.
  • Peel the pears, leaving the stem intact. Core the pears from the bottom using a corer or vegetable peeler.
  • Add the pears to the simple syrup, and reduce the heat to a simmer. Cook until the pears are tender, but not mushy, about 15 minutes. Chill the pears in the syrup.
  • Place the pear standing up on a dessert plate and drizzle with the chocolate sauce.
  • Place the chocolate chips in a small bowl. Heat the heavy cream to hot, but not boiling in the microwave, about 15 to 20 seconds. Pour over the chocolate chips and let sit undisturbed for 5 minutes. Mix until smooth and serve.

6 firm-ripe bartlett pears, peeled but with stems intact
750 ml red wine (Australian shiraz)
1 cup sugar
3/4 cup tawny port
1 lemon, juice and zest of
ginger, peeled and bruised
1 cinnamon stick

Steps:

  • Place the pears in a saucepan then pour over the red wine, sugar and port. Add the juice and zest of the lemon, ginger and the cinnamon stick then bring to the boil.
  • Simmer in the red wine mixture until the pears are bright red and almost tender, about 20 minutes. Carefully remove the pears from the liquid, then boil the pear liquid until it has reduced and is syrupy.
  • Return the pears to the syrup and allow the mixture to cool until ready to serve.

1 cup water
1 cup red wine
2 tablespoons lemon juice
1 cup sugar
1 cinnamon stick
1 teaspoon whole allspice
4 -5 firm pears, peeled with stalks attached
1 cup fresh whipped cream

Steps:

  • Combine the water, red wine, lemon juice, sugar and spices in a medium saucepan and bring to a boil.
  • Reduce heat and simmer gently for 5 minutes.
  • Place the pears in an ovenproof dish and pour the syrup over them.
  • Poach at 150°C (300°F) for 20 - 25 minutes or until tender.
  • Pour a small amount of the syrup in the bottom of dessert dishes and place the pears on top.
  • Serve with whipped cream.

4 each dried apricots
2 each (3 x 1/2-inch) lemon rind strips
1 (3-inch) piece vanilla bean, split lengthwise
1 whole clove
4 medium (blank)s reduced-calorie vanilla wafers, crushed
5 tablespoons coarsely chopped pistachios, toasted and divided

Steps:

  • Peel and core pears, leaving stems intact. Slice about 1/4 inch from base of each pear so it will sit flat.
  • Combine water and next 7 ingredients (water through clove) in a large saucepan; bring to a boil. Add pears; cover, reduce heat, and simmer 10 minutes or until tender. Remove pears and apricots from cooking liquid using a slotted spoon; chill pears and apricots. Bring cooking liquid to a boil; cook until reduced to 1 cup (about 15 minutes). Strain cooking liquid through a sieve over a bowl; discard solids. Chill.
  • Chop apricots. Combine apricots, wafer crumbs, and 1 tablespoon pistachios. Stuff about 2 tablespoons apricot mixture into each pear cavity. Place pears in each of 4 bowls. Spoon 1/4 cup syrup over each pear; sprinkle each with 1 tablespoon pistachios.
