PHILADELPHIA-STYLE ICE CREAM BASE

Philadelphia-Style Ice Cream Base image

Made without eggs, this ice cream is much less rich than those made with a custard base. The lack of eggs also allows the flavorings to shine through, making it a light in texture yet intense in taste. Using a combination of granulated sugar and liquid sugar (corn syrup, honey or agave syrup) helps keep the texture smooth and silky.

Provided by Melissa Clark

Time 15m

Categories     Desserts     Fruit Dessert Recipes     Lemon Dessert Recipes

Time 12h45m

Yield 10

Number Of Ingredients 6

2 cups heavy whipping cream
1 cup half-and-half cream
1 ⅛ cups white sugar
3 tablespoons grated lemon zest
5 egg yolks
¾ cup fresh lemon juice

Steps:

  • Combine heavy cream, half and half, sugar, and lemon zest in a saucepan; bring to a simmer over low heat. Cook and stir until sugar is dissolved, about 5 minutes. Remove from heat. Cover saucepan and allow the mixture to steep for 10 minutes.
  • Uncover pan and bring back to a simmer over low heat. Beat the egg yolks in a bowl. Gradually stir one cup of the hot cream mixture into the eggs, several tablespoons at a time. This will help to bring the eggs up to temperature without scrambling them. Stir the egg mixture back into the cream mixture in the saucepan. Cook and stir over low heat until the mixture just coats the back of a spoon, 5 to 10 minutes. Transfer to a large bowl; cover. Refrigerate overnight.
  • Stir the lemon juice into the cold ice cream mixture. Freeze in a 4 to 5 quart ice cream maker according to manufacturer's directions. Transfer ice cream to a lidded freezer container, and freeze for 4 hours to ripen flavors before serving.

Philadelphia-Style Vanilla Ice Cream image

You only need 10 minutes to get this no-cook ice cream churning. It's very simple: just milk, cream, sugar and flavorings. It can taste icy at first, but once it softens, it's fluffy and creamy, and the lack of eggs and other stabilizers makes it extra light.

  • Whisk together the heavy cream, sugar and salt, then place in the refrigerator while you zest and juice the lemons. Remove from the fridge and whisk a bit more until the sugar is fully dissolved. Add in the zest and juice and whisk to combine. Cover and chill the mixture until it’s very cold – at least an hour in the refrigerator, or about 20 minutes in the freezer.
  • Churn in an ice cream maker by following the manufacturer’s instructions. When it’s finished, scrape into a container, cover, and freeze until it’s good and hard – this will take several hours, or best to do over night. That being said, it’s hard to resist freshly made ice cream, so follow your instincts and have at it if you please.
