BBQ GRILLED PHILLY CHEESESTEAK
This BBQ take on the classic sandwich has strips of beef steak drowned in a filling of onions, peppers and cheese. It's guaranteed to have everyone reaching for more.

Steps:
- Prepare the raw beef by cutting it into inch-long slabs of meat.
- Heat up your skillet on your grill to a medium heat. Add oil.
- Transfer the beef to the skillet and allow it to brown.
- Add the Worcestershire sauce, salt and pepper to the pan. Cook for a further minute or two.
- Remove beef from pan and sit to one side.
- In the same pan add butter, chopped onion, and peppers. Caramelize until the onion starts to brown.
- Add the meat back to the mix and combine well over heat.
- Prepare toasted bread by buttering each side. Add meat mixture straight from the pan.
- Top with cheese and leave for a minute to allow it to melt. Serve and enjoy.

- In a medium size pan, heat oil over medium heat.
- Add meat, onions, and bell pepper.
- Cook & sauté until meat is no longer pink and onions and bell pepper are tender.
- Sprinkle garlic salt and pepper over meat. Stir.
- Butter one side of each slice of bread. Add a piece of cheese, the meat mixture, and another slice of cheese, followed by another slice of bread.
- Fry bread buttered side down until golden brown on both sides and cheese has melted.
- Cut in half and enjoy.

- Heat a skillet over medium-high heat. Add steak, bell pepper, and onion. Cook until steak is hot and reaches your desired color, 7 to 10 minutes.
- Preheat the oven to 375 degrees F (190 degrees C). Line an 8x8-inch baking pan with aluminum foil.
- Slice the connected rolls in half widthwise to look like 2 giant slices of bread. Place the bottom half into the bottom of the prepared baking pan. Spread mayonnaise evenly on top.
- Place 4 slices of pepper Jack cheese over the mayonnaise. Layer the steak mixture and the remaining cheese on top. Cover with the top half of the bread. Spread melted butter on top.
- Bake in the preheated oven until cheese is melted and bread is browned, about 20 minutes. Slice into individual portions.

GRILLED PHILLY CHEESESTEAK SLIDER RECIPE
I'm in Virginia and there isn't a decent Philly cheesesteak to be had. So I decided to make my own, adding in a hint of charcoal flavor, of course.

- Light your grill and set it up for two zone cooking
- While your grill is preheating, prepare the sliders. Leaving the rolls connected, separate the tops from the bottoms by slicing them in half horizontally. Place the bottom half of the rolls in a 9×13 inch baking dish and cover with a layer of provolone cheese.
- Place a griddle surface directly over the coals on the grill. Add the olive oil and let it heat up for one minute. Coat the cooking surface with the hot oil and add the leftover steak or shaved steak. Cook for 3-5 minutes.
- Take the meat off the griddle and spread it evenly on top of the cheese-covered bottom buns. Then add another layer of cheese on top of the steak and then top with crispy fried onions. Next, place the tops of the rolls on the sliders and put them on the grill over indirect heat, close the lid and allow them to bake at 325° F for five minutes.
- While the sliders are baking, prepare the glaze by melting one stick of butter in a small saucepan over low heat. Then whisk the garlic, Dijon mustard, Worcestershire sauce, brown sugar, and paprika into the melted butter.
- Open the grill lid and, using a pastry brush, brush about one-fourth of the warm garlic butter glaze on top of the rolls until uniformly covered. Reserve the remaining glaze and keep warm. Close the lid and bake for an additional 15 minutes or until golden brown and the cheese is melted.
- Remove the sliders from the grill, sprinkle with optional parsley, cut and serve warm with the remaining garlic butter as a dipping sauce.
GRILLED PHILLY CHEESESTEAK SLIDERS

- Set up the Big Green Egg or grill to grill by indirect heat. Heat to a steady 350°F.
- In a small bowl, combine the mayonnaise, Dijon, Worcestershire sauce, salt, and garlic powder.
- Assemble the sliders: use a large serrated knife to cut the rolls into a bottom layer and top layer. Lay a bottom layer on a double layer of large pieces of foil. Spread half the Dijon-mayonnaise over, and layer half each the roast beef, bell pepper, onion, pepper, white American cheese, and provolone cheese. Finish with the top layer of bread. Brush the tops and sides with half the butter.
- Repeat this process with the remaining ingredients. Pour any remaining butter over all the tops to use it all up (this is why it is important to assemble on foil for easier wrapping).
- Wrap each prepared batch of sliders in the foil, taking care around the bottom to fold the foil up to hold the butter. Put to grill 10 minutes at 350°F.
- After 10 minutes, open foil up and bake and additional 15-20 minutes more until sliders are thoroughly heated through and edges are toasty.

- In a large skillet, cook green peppers and onion in oil over medium-high heat until tender, 8-10 minutes. Without separating rolls, cut each package of rolls in half horizontally; arrange bottom halves in a greased 13x9-in. baking pan. Layer with roast beef, pepper mixture and cheese; replace top halves of rolls. , In a small saucepan, melt butter, dried onion, Worcestershire sauce and garlic powder. Drizzle over rolls. - 1) Preheat oven to 375 degrees Fahrenheit.
- 2) Cut the sheet of Hawaiian rolls horizontally with a serrated knife. Place bottoms in a parchment-lined, oven-safe baking dish. You want the parchment to hang over a bit. Spread mayonnaise on rolls.
- 3) Heat olive oil in a skillet over medium-high heat. Add onions and green peppers. Cook for 5 minutes until tender. Add steak. Season with salt and pepper. Cook steak until tender. Remove from heat.
- 4) Top rolls with 6 slices of provolone cheese, cooked steak, green peppers, onions and 6 more slices of provolone cheese. Place roll tops over steak and brush with melted butter.
- 5) Bake for 20 minutes, or until top has browned and cheese has fully melted.
