Time 25m

Number Of Ingredients 15

1 green pepper, chopped
1 red pepper, chopped
2 small yellow onions or 1 large one, chopped
1 tbs olive oil
2 cloves garlic crush
salt and pepper to taste
1 pound chip steak
2 tbs extra virgin olive oil
salt and pepper to taste
1/2 tsp garlic powder
6 cloves of garlic, pressed
4 tbs beer
2 cups of cheddar cheese
8 slider buns
2 tbs melted butter

Steps:

  • Chop all the veggies into equal size pieces. Heat a tbs of olive oil over medium high heat in a large pan. Add veggies, pressed garlic, and salt and pepper. Cook for about 3-5 minutes, stirring constantly to prevent burning. Veggies are done when they are soft. Set aside.
  • Heat a pan with 2 tbs olive oil over medium to medium high heat. Add the beef. Season with salt, pepper, and garlic powder. Cook for 7-8 minutes, stirring occasionally to prevent burning. Meat is done when brown and slightly caramelized.
  • Heat a small pan or pot over medium low heat with 4 tbs of your favorite beer, 2 cups of shredded cheddar and 6 tbs pressed garlic. Stir until melted. Remove cheese from heat when melted.
  • Cut 6 slider rolls in half and brush insides with melted butter. Toast by putting under the broiler for 30 seconds, butter side up. Remove. Assemble sandwiches by putting an equal portion of meat, veggies if desired, and cheese on each. Use extra cheese for dipping.

  • Place steaks in the freezer for 30-40 minutes before slicing. This will make shaving steaks thinly very easy. Cut partially frozen ribeyes in half widthwise and shave into 1/8 inch thick strips. Keep some fat and discard some fat as desired.
  • Heat 1 tablespoon of oil in a cast iron skillet on medium heat. Add thinly sliced onions and saute until golden and tender. Season with salt and pepper and transfer to a small bowl.
  • Add a touch more oil to the pan and add shaved ribeye steak. Season liberally with salt and pepper. Saute until fully cooked through and no longer pink, about 5-7 minutes. Use the tip of a metal spatula to break up long strips into small bite-sized chunks. Return the onions to the skillet and mix with the beef.
