GRIDDLE STYLE PHILLY STEAK SANDWICHES
This is a simple and delicious recipe for a hot sandwich that is a snap to make, and sure to be a real crowd-pleaser.

- Preheat an electric griddle or stovetop griddle over medium-high heat. On one half of the griddle, place the mushrooms, onion and pepper. On the other side, place the roast beef. Cook and stir each group separately, chopping the beef into smaller pieces as it cooks, and seasoning with salt and seasoned salt.
- When the vegetables are tender and the beef is hot, place the slices of provolone cheese over the beef to melt. Turn off the griddle. Scoop the cheesy grilled beef into sandwich rolls, and top with the onions and peppers.

These sandwiches are delicious. I purchase steak that has been sliced for making stir-fry, which takes a little less time, but achieves the same results.

Steps:
- Place the beef in a large bowl. In a small bowl, mix together salt, pepper, paprika, chili powder, onion powder, garlic powder, thyme, marjoram and basil. Sprinkle over beef.
- Heat half of the oil in a skillet over medium-high heat. Saute beef to desired doneness, and remove from pan. Heat the remaining oil in the skillet, and saute the onion and green pepper.
- Preheat oven on broiler setting.
- Divide the meat between the bottoms of 4 rolls, layer with onion and green pepper, then top with sliced cheese. Place on cookie sheet, and broil until cheese is melted. Cover with tops of rolls, and serve.

- In a large skillet, cook steak slices in butter over medium-high heat until browned, 4-6 minutes. Add peppers and onion; cook until tender, 3-4 minutes. Reduce heat to medium-low; stir in milk, provolone and Velveeta. Cook, stirring constantly, until cheese melts, about 3 minutes. Remove from heat; add Worcestershire, garlic powder, salt and pepper; cool. , Brush edges of an egg roll wrapper with water. Place 2 tablespoons beef mixture in the center; fold bottom corner over filling. Fold sides over filling toward center; roll up tightly to seal. Repeat with remaining wrappers and filling. , In an electric skillet or deep-fat fryer, heat 1 in. canola oil to 375°. Fry egg rolls until golden brown, about 2 minutes on each side. Drain on paper towels. Serve hot with sweet chili sauce.

PHILLY-STYLE SANDWICHES FOR THE GEORGE FOREMAN GRILL
Purchase medium size soft submarine rolls for this, the amounts are enough for 3-4 sandwiches you may of coarse double and adjust all amounts to taste, this will work well on a regular grill and also may be made in a large skillet --- the garlic with the butter is only optional if you are not a lover of garlic you may omit if desired, the garlic really brings out extra flavor to these sandwiches :)

- Preheat both sides of the electric griddle to medium-high heat.
- In a small bowl mix the soft butter with garlic powder.
- Lightly butter all of the roll halves.
- Place on the grill buttered side down and toast until lightly browned; remove and place on a plate/s, then place 2 slices of cheese over 4 bread halves; set aside.
- On one half of the grill place the mushrooms, onion slices and bell pepper, then season lightly with seasoned salt and black pepper.
- On the other side of the grill place the roast beef then season the beef lightly with freshly ground black pepper if desired.
- Cook stirring each group separately as they cook.
- When the veggies are tender and the beef is hot divide the hot beef onto the cheese slices then top with the veggies.
- Top with the remaining bread halves.
PASTA WITH GARLICKY GREENS AND FRIED EGGS
I prefer this using frozen greens if not using fresh from our garden. The frozen greens are cleaner, cook up fast in the microwave & are usually quite a bit more economical than winter fresh greens. That way my pan is available for the eggs to be done after the greens & pasta are mixed to plate. This meal is understated elegance with good easily digested protein & nutritious greens. The pasta is not so much nutritious but just about everyone on Earth enjoys it & it is inexpensive. Recipe from The Washington Post whose foodistas adapted it from a recipe in "A New Way to Cook" by Sally Schneider (Artisan, 2001).

- Bring a large pot of water to a boil and cook the pasta according to package directions.
- Meanwhile, rinse the greens, shaking to remove most of the water, and coarsely chop them. Set aside.
- In a large skillet over low heat, heat the oil and the garlic, covered, just until the garlic softens, about 5 minutes. Uncover, increase the heat to medium and cook just until the garlic begins to crisp and turn golden, about 2 minutes. Spoon the garlic and about 1 tablespoon of the oil into a large bowl; set aside.
- Return the skillet to medium heat. Add the eggs and fry according to personal preference. Transfer to a plate; season with salt and pepper to taste and cover to keep warm.
- Return the skillet with the oil to medium heat, add the greens and salt to taste, cover and cook, tossing frequently, until the greens are tender and the water has completely evaporated, 2 to 5 minutes, depending on the type of green. (If the liquid evaporates before the greens are tender, add water about 1 tablespoon at a time.).
- Drain the pasta, return it to the pot, add the greens and reserved garlic oil and toss to combine.
- Divide the pasta among individual plates and top each portion with an egg. Sprinkle with cheese, if using. Serve immediately.
